„Camera cazanelor va avea pereţi exteriori din sticlă cu
jaluzele din lemn pentru a răspândi lumina soarelui”,
spune Evenou despre ceea ce va deveni o cramă unică.
„Asta este semnătura lui Jean Nouvel”, adaugă el. Iar în
curând va fi și imaginea brand-ului La Dominique.
Cele mai multe domenii viticole de tipul „château” sunt
mult mai vechi decât castelele construite acolo, spune
Philippe Roudie, scriitor, profesor și specialist în istoria
vinurilor de Bordeaux. „Dar arhitectura a început să fie
aplicată industriei viticole de curând”, adaugă Roudie.
Cele mai multe dintre celebrele castele din zona Medoc au
fost construite în secolul al XIX-lea de moșieri bogaţi care
își doreau încă o proprietate frumoasă pe domeniile lor
viticole. Și la fel ca în zilele noastre, orice noi inovaţii,
cum ar fi îmbutelierea vinurilor pe domeniu, aveau nevoie
de noi instalaţii. „Din punct de vedere istoric, aceste
châteaux din Bordeaux erau de fapt experimente
arhitecturale și tehnologice”, adaugă Roudie. „Erau
considerate foarte moderne la vremea lor”.
Două alte crame noi, deja finalizate, constituie adevărate
stindarde ale modernităţii. Atunci când Château Cos
d'Estournel a dezvăluit noile crame, despre care se spune
că au costat 35 de milioane de euro, proiectate de Jean-
Michel Wilmotte, geniul din spatele memorialului
Hiroshima Gates for Peace și al multor alte muzee și spaţii
urbane, toată lumea vinului a rămas uimită. Cramele ultramoderne
proiectate de Wilmotte, cu o armată de 72 de
different yields, grape varieties and ripening times. With a vat
sized to match each plot, the grapes are fermented in
homogenous lots, allowing for precision in the final blend.
“We are a bit late, we should have done this 40 years ago
but better late than never,” said Fayat, a onetime mason who
now owns the largest privately-held company in France. He
turned to Nouvel to create something that would set him
apart from his neighbours.
A FAMOUS ARCHITECT
FOR A FAMOUS CELLAR
Nouvel, currently creating a stir in England with his provocative
red Serpentine Pavilion in London's Kensington Gardens, has
taken the space used for the art of making wine and turned it
into a work of art itself.
“The vat room will have outer walls of glass with wood slats to
diffuse the sunlight,“ said Evenou of what will be a unique
cellar. “This is the signature of Jean Nouvel. “It will also
become the image of La Dominique's brand.
Most “chateau“ wine estates predate the castles built on
them, said Philippe Roudie, author, professor and lecturer on
the history of Bordeaux's wine trade. “Architecture applied to
the wine trade is quite recent,” said Roudie. Most of the
famous castles in the Medoc were built in the 19th century by
wealthy landlords who wanted a beautiful secondary home on
their wine estates. And like today, new innovations – such as
bottling at the estate – required new installations. “Historically,
