What is it?<br />

• Has dark green, curly leaves and a fibrous stalk<br />

• Some kale varieties have a stronger flavor than<br />

others.<br />

• Kale has a savory flavor and is slightly bitter/<br />

peppery.<br />

• If left in hot weather, kale can turn bitter.<br />

• 20 calories in one half cup of cooked kale<br />

When is it available?<br />

• Harvested fresh June through October<br />

• Kale doesn’t mind frost, so it can be harvested<br />

into late fall.<br />

What’s so cool about it?<br />

• Due to kale’s popularity in Scotland, “Come to<br />

kale”means “Come to dinner.”<br />

Why should I eat it?<br />

• Excellent source of vitamin A, which is good for your<br />

eyes and skin; vitamin K, which helps with blood<br />

clotting; and vitamin C, which helps boost your<br />

immune system<br />

• Good source of calcium, which helps build strong<br />

bones; iron, which helps oxygenate blood; and<br />

• Grapefruits are a member of the citrus family. In the United States, about 80% of grapefruits<br />

are grown in Florida. Texas, California and Arizona also grow grapefruit.<br />

• Grapefruit can be eaten raw or cooked. Eat raw for breakfast or add segments to<br />

a salad. It can also be grilled or baked. Drink grapefruit juice plain or enjoy in<br />

a smoothie.<br />
