BANANA PUDDINGS<br />
90g butter, melted<br />
½ cup almond meal<br />
3 egg whites<br />
¾ cup icing sugar<br />
¼ cup plain flour<br />
25g butter, melted, extra<br />
2 tbsp brown sugar, firmly packed<br />
2 medium bananas, sliced thickly<br />
1. Grease four 9.5cm-round 2/3 cup (160ml) ovenproof dishes (I use pie dishes for this).<br />
2. Combine butter, almond meal, egg whites, icing sugar and flour in medium bowl; stir until just<br />
combined.<br />
3. Divide extra butter equally among prepared dishes; sprinkle evenly with brown sugar. Divide<br />
banana slices and then pudding mixture equally among dishes.<br />
4. Bake in <strong>Nu</strong><strong>Wave</strong> oven on 5cm rack for 15mins.<br />
5. When cooked stand puddings 2mins, then run knife around edge and turn out onto serving<br />
plates.<br />
6. Serve with custard, cream or icecream.<br />
This has to be one of the easiest desserts to make but the results will surprise everyone! Delicious!<br />
