PLUM TART<br />
125g butter<br />
110g caster sugar<br />
3 small eggs or 2 large eggs<br />
¼ tsp cinnamon<br />
½ tsp vanilla essence<br />
Grated zest 1/3 orange<br />
8 – 10 blood plums<br />
100g self raising flour<br />
25g ground almonds<br />
1. Cream together the butter and caster sugar until light and creamy, add the eggs, beating well<br />
between each addition.<br />
2. Fold in the flour, ground almonds, vanilla essence, orange zest and cinnamon.<br />
3. Pour into a buttered 23cm flan tin and arrange the plum halves on top.<br />
4. Bake in <strong>Nu</strong><strong>Wave</strong> oven with extender ring fitted, on 5cm rack, level 10 for 35-40mins.<br />
5. Serve with a generous scoop of vanilla bean ice-cream or a dollop of clotted cream.<br />
The fantastic sweet friand style cake mixed with tangy plums is my favourite!<br />
