RIGHT SIDE UP, UPSIDE DOWN PINEAPPLE<br />
CAKE<br />
On page 49 of the <strong>Nu</strong><strong>Wave</strong> Recipe Book you will find a recipe for this cake.<br />
I prefer to use my own butter cake recipe instead of using the packaged mix. This is how I like to make it…<br />
125g butter, chopped<br />
2 tsp vanilla extract<br />
¾ cup (165g) caster sugar<br />
2 eggs<br />
1 cup (150g) self raising flour<br />
1 tbsp cornflour<br />
¼ cup (60ml) milk<br />
440g can pineapple rings<br />
½ cup brown sugar<br />
1. Cream butter, sugar and vanilla until light in colour.<br />
2. Add eggs, sifted flour, cornflour and milk and beat 2–3 minutes.<br />
3. Pour mixture into a greased 28cm pie pan.<br />
4. Bake in <strong>Nu</strong><strong>Wave</strong> oven on 10cm rack, level 10, for 5mins. (The top should be set enough to take the<br />
weight of the pineapple rings)<br />
5. Lay pineapple over the top and cut some of the remaining rings to fit the gaps.<br />
6. Sprinkle the brown sugar evenly over the top and continue cooking another 15mins.<br />
7. Remove cake to 5cm rack and bake a further 15mins.<br />
The <strong>Nu</strong><strong>Wave</strong> oven really aerates foods like cakes, potatoes, pastries etc so you find this cake is light and fluffy with a<br />
delicious gooey caramelised pineapple topping that goes perfectly with a blob of double cream or a scoop of<br />
icecream!<br />
