EGGLESS CHOCOLATE CAKE<br />

Ingredients<br />

1½ cups plain flour<br />

1 cup sugar<br />

4 tbsp cocoa<br />

1 teasp bicarbonate of soda<br />

½ teasp salt<br />

1cup water<br />

⅓ cup vegetable oil<br />

2 tbsp white vinegar<br />

2 tsp vanilla extract<br />

Method<br />

1. Sift the dry ingredients into a bowl.<br />

2. Combine wet ingredients and stir into flour mixture.<br />

3. Pour mixture into greased mini muffin pans (I use my individual silicone ones); place on 5cm<br />

rack and bake in <strong>Nu</strong><strong>Wave</strong> oven for 10 minutes (mini); 20 minutes (muffin). Cool on wire racks.<br />

These easy little chocolate cakes are great for those allergic to egg and dairy and they taste terrific!<br />
