MACARONI CHEESE WITH VEGETABLES<br />
50g butter, chopped<br />
2 tbsp plain flour<br />
2 cups milk<br />
1 tsp Dijon mustard<br />
½ cup parmesan cheese, grated<br />
1¼ cups gouda cheese, grated<br />
300g macaroni pasta, dried<br />
1 large carrot<br />
300g broccoli, cut into small florets<br />
280g cauliflower, cut into small florets<br />
4 shallots, thinly sliced<br />
7. Melt butter in a saucepan over medium heat for 2 minutes or until foaming.<br />
8. Add flour. Cook, stirring with a wooden spoon, for about 1 minute until mixture bubbles.<br />
9. Remove from heat. Add milk, ¼ cup at a time, stirring constantly to prevent lumps forming.<br />
10. Return pan to medium heat. Cook, stirring, for 5 minutes or until sauce boils and thickens. Remove<br />
from heat.<br />
11. Stir in mustard, parmesan and 1 cup of the gouda cheese.<br />
12. Meanwhile, cook pasta in a large saucepan of boiling water, following packet directions, adding the<br />
carrot, broccoli and cauliflower in the last 5 minutes of cooking. Drain. Place in a large bowl.<br />
13. Add sauce and onion. Stir to combine. Spoon into 25cm dish (the one that comes with the extender kit<br />
is perfect).<br />
8. Bake in <strong>Nu</strong><strong>Wave</strong> oven on 5cm rack, level 10, for about 20 minutes, until hot through and golden brown.<br />
9. Stand for 5 minutes before serving.<br />
