CRUNCHY CHEESE FILLED CHICKEN<br />
Ingredients<br />
4 boneless chicken breasts<br />
90g cheddar cheese<br />
1 tbsp Dijon mustard<br />
1 cup crushed corn flakes<br />
1 tsp dried parsley flakes<br />
½ cup buttermilk<br />
Method<br />
1. Cut a deep 5cm long slit in the side of the meaty portion of the breast.<br />
2. Slice cheese into 4 portions and brush with mustard. Place 1 piece of cheese into each slit and<br />
secure with wooden toothpicks.<br />
3. Combine cereal, seasoning and parsley.<br />
4. Dip chicken into buttermilk and roll in cereal mixture.<br />
5. Place chicken on baking paper on 10cm rack and bake in <strong>Nu</strong><strong>Wave</strong> oven on power level HI for<br />
30 minutes, turn over ½ way thru to evenly brown.<br />
Replace cheese with low fat, and buttermilk with non fat, for a healthier option of this recipe!<br />
