CAPSICUM & CASHEW PESTO<br />
¾ cup<br />
⅓ cup<br />
2 cloves garlic, chopped<br />
2 tbsp fresh oregano leaves<br />
red capsicum, roasted in <strong>Nu</strong><strong>Wave</strong> oven, skin removed<br />
dry-roasted cashew nuts<br />
2 tbsp olive oil<br />
⅓ cup parmesan cheese, finely grated<br />
1. Place all ingredients, except parmesan cheese, into large cup of <strong>Nu</strong><strong>Wave</strong> Twister.<br />
2. Process by pulsating (turning on and off in spurts), scraping down sides as needed, until smooth.<br />
3. Transfer to a bowl, add parmesan, season with salt and pepper and stir to combine.<br />
Delicious served with Pita Crisps!<br />
