Cellar Cat Sophie<br />
Gypsie and Sophie are the Sausal <strong>Wine</strong>ry Cellar Cats. Years ago<br />
Gypsie wandered into the winery but then quickly disappeared. Not<br />
long after, she was found again with a litter of kittens in the cellar.<br />
Sophie is one of those kittens, and this April Sausal <strong>Wine</strong>ry is celebrating<br />
Sophie’s ninth birthday. Stop by any day of the week to meet<br />
the cats and taste the wines that honor them.<br />
When they are not posing for pictures, Gypsie and Sophie can be<br />
found lounging around the office, tasting room or porch. Occasionally<br />
you might see Sophie chasing a bunny through the vineyard or Gypsie<br />
stalking a bird on the lawn. But, if you bring a lunch to the picnic<br />
tables, Sophie will surely turn up.<br />
Sausal <strong>Wine</strong>ry specializes in old vine Zinfandel from their estate<br />
vineyards, but also makes two cellar cat tribute wines. Cellar Cats Red,<br />
a non-vintage Estate Zinfandel, is light and fruity; an easy sipper on a<br />
warm night. The Purrfect Petite is the newest tribute to the winery<br />
cats, and Petite Sirah was chosen as their varietal compliment because<br />
they are both inky black, big and bold.<br />
