Gourmet <strong>ice</strong> cubes are formed by spray<strong>in</strong>g water onto a<br />
sub-cooled horizontal evaporator. While the purest water<br />
molecules - the first to freeze - form the <strong>ice</strong> cubes, oncom<strong>in</strong>g<br />
spray water washes away unfrozen water m<strong>in</strong>erals that would<br />
otherwise start cloud<strong>in</strong>g the form<strong>in</strong>g <strong>ice</strong>. <strong>The</strong>y <strong>in</strong>stead fall back <strong>in</strong><br />
the water sump, and are removed with the water that is flushed<br />
out prior to start<strong>in</strong>g a new freez<strong>in</strong>g cycle. <strong>The</strong> Gourmet cube is<br />
