The Industrial Line product line made by Bayha &<br />
Strackbein (<strong>Bastra</strong>; Arnsberg, Germany) includes<br />
multi-cart universal cooking and smoking installations<br />
for up to ten carts, climate curing and climate<br />
smoke curing installations for up to 42 carts as well as<br />
post-curing set-ups for up to 100 carts.<br />
Universal cooking and smoking installations for over<br />
four carts (hot smoke equipment) are furnished with<br />
a separate machine component that can be placed<br />
where needed, depending on the given space. The<br />
multi-layer, 90 mm thick insulation of the wall elements<br />
contributes to energy-efficient operation. All installations<br />
of this product line can optionally be<br />
equipped with space-saving jet doors that open upwards.<br />
The stainless steel electric control box with “GP<br />
Tec 500” glass panel controls or the optional “TS 800”<br />
touch screen controls are independent units that can<br />
be positioned where desired.<br />
In climate maturing, climate smoke maturing and<br />
post-maturing equipment, the ventilator unit, which<br />
is separated from the mixing chamber, is vibrationdamped.<br />
A frequency converter ensures infinitely variable<br />
air-speed control. Depending on the model and<br />
size, discharge channels and central suction channels<br />
are available. The discharge jets and suction opening<br />
of the channels can be set to operate separately from<br />
one another and with variable speed.<br />
Climate smoke maturing installations are standardly<br />
equipped with a semi-automatic CIP cleaning system.<br />
To ensure foaming of the smoke resin remover, pressurized<br />
air is added to the cleaning agent.<br />
For its Industrial Line installations, <strong>Bastra</strong> offers the<br />
“600 H” and “1200 H” wood chip smoke generator<br />
models. The reservoir and smoldering zone both have<br />
an integrated extinguisher and fire protection feature.<br />
The new “1200 H” automatically separates the reservoir<br />
from the smoldering zone in order to prevent uncontrolled<br />
slippage of chips into it. The electric heating<br />
bar of the ignition device is located underneath<br />
the smoldering plate, which protects it from mechanical<br />
stress. The installation both controls the electrical<br />
ignition process as well as monitors the ignition stick.<br />
To easily and safely control smoldering and the<br />
amount of chips, the expanded “1200 HE” smoke generator<br />
has an additional observation window into the<br />
smoldering room of the reservoir. This model also has<br />
another special feature: it enables the option of producing<br />
sausages using thinned or humidified smoke.<br />
Three different smoke densities can be set. They can be<br />
selected while the installation is running; the respective<br />
program can be correspondingly adjusted during<br />
operation at any time.<br />
Every time the chamber is cleaned, the smoke pit is<br />
automatically cleaned as well. The “1200 HE” can<br />
also be cleaned, if desired.<br />

<strong>Bastra</strong><br />
<strong>Bastra</strong>’s climate ceiling units are designed to be an<br />
economic solution for carrying out climatic maturing<br />
or ripening processes in existing rooms. The “<strong>Bastra</strong><br />
DG 1210” model is used to equip climatic maturing<br />
rooms. Installed below the ceiling in the middle of the<br />
maturing room, air is sucked in through the cold<br />
evaporator and the electric heater before finally being<br />
directed via two diverting valves to the air ejection<br />
channels mounted in the room. The device itself also<br />
contains the humidifying module and the infinitely<br />
adjustable air-circulating fan. Regulating organs in<br />
the external electric control box monitor and control<br />
the temperature, humidity and air speed. In regard to<br />
temperature and humidity control, so-called adaptive<br />
control constraint is used. This allows the upper and<br />
lower values to be set. If the temperature or humidity<br />
diverges from these specified values, heating, cooling,<br />
humidification or dehumidification automatically occurs<br />
in order to achieve the required values once<br />
again. If the room temperature and relative humidity<br />
are within the preset range, the operator can preselect<br />
the further mode of operation of the circulation motor<br />
via a three-step switch.<br />
The “<strong>Bastra</strong> DG 64” climate ceiling unit was developed<br />
for equipping post-maturing or storage rooms. It<br />
runs in a temperature range of +13 °C to +18 °C. The<br />
relative humidity can be regulated between 65 and 85<br />
percent.<br />

for post-maturing or storage rooms.<br />
