I would like to thank my committee chair, Dr. Jörg Steiner, for his help and<br />

support throughout the course of this research, and also for the opportunities he has<br />

given me over the years that we have worked together. I would also like to thank my<br />

committee members, Dr. Rosemary Walzem, Dr. Craig Ruaux, Dr. Noah Cohen, and Dr.<br />

Jan Suchodolski, for their guidance and support. They have helped me a lot with their<br />

ideas and suggestions, and I have learned a lot from all of them.<br />

I am especially grateful to Dr. Ronald Macfarlane for allowing me to do part of<br />

this research at the Laboratory for Cardiovascular Research, a component of the<br />

Department of Chemistry at Texas A&M University, and Paul Cammarata for his<br />

invaluable help with lipopoprotein profile analysis.<br />

The people I worked with at the Gastrointestinal Laboratory at Texas A&M<br />

University deserve a special mention. Fellow Ph.D. students, technicians, and student<br />

workers, have all helped directly or indirectly with this project and they have made the<br />

time I spent with them fun and enjoyable. I thank all of them and wish them good luck<br />

with their lives.<br />
