These <strong>ovens</strong> can be described with two<br />

The Visual Plus <strong>ovens</strong> represent the top of<br />

the line of the Visual Generation and include<br />

the latest visual and process technology.<br />

You can choose your cooking method by<br />

using the VGA touch screen.<br />

New Generation of Visual Ovens<br />

Fagor Industrial presents a new generation<br />

of innovative <strong>ovens</strong> that are easy to use<br />

and intuitive: the new Visual Ovens,<br />

manufactured to respond to the needs of all<br />

chefs.<br />

The following characteristics are among the<br />

advantages of this new and innovative range<br />

of <strong>ovens</strong>: ergonomics, hygiene and perfect<br />

results thanks to the incorporation of stateof-the-art<br />

electronics. All of this together<br />

means you save time and money.<br />

Five different sizes are available for the<br />

three model series: Visual Plus, Visual and<br />

Concept.<br />

Each model series includes electric and gas<br />

versions.<br />

Steam is generated in an independent boiler<br />

that is separate from the cooking chamber.<br />

When the oven is turned on, it is in<br />

manual mode, with a choice of “Fagor<br />

Cooking” mode (your own recipes or those<br />

recommended by Fagor) or “Fagor Easy”<br />

mode, specially designed to make cooking<br />

easy: you simply choose the cooking<br />

method, temperature and time.<br />

The user can also use the “Menu” button<br />

to choose from various other options:<br />

wash, thermal stop, multi-tray timer, delta<br />

value change (multi-point probe), delayed<br />

The oven’s HACCP can be downloaded via a standard<br />

USB connection and it can also be programmed<br />

externally.<br />

Like all the new generation of <strong>ovens</strong>, the Visual Plus<br />

oven can be easily serviced without having to remove<br />

any exterior panels. The user can easily verify the<br />

correct functioning of all the oven’s components<br />

thanks to the technical service help system.<br />

Visual Series<br />

Like the Visual Plus <strong>ovens</strong>, these<br />

<strong>ovens</strong> produce steam in a boiler that<br />

is separate from the cooking chamber.<br />

The <strong>ovens</strong> in this series are equipped<br />

with a temperature probe and a<br />

retractable shower that can be<br />

accessed from the control panel<br />

without having to open the door, so<br />

heat does not escape from the oven.<br />

In this series, cooking controls are located on a panel that includes a screen and pushbuttons<br />

for selecting and confirming options. The user can easily choose the options that<br />

appear on the screen and programme the oven accordingly.<br />

Apart from the technical service help functions, the oven also includes a “stand-by” function<br />

that allows users to choose when the oven should begin countdown of the cooking time: as<br />

soon as the button is pushed or when the desired temperature is reached.<br />

The Stop/Start button allows users to turn the oven on and off on demand.<br />

Concept Series<br />

This is the basic oven within the new<br />

generation offered by Fagor Industrial.<br />

The gas Concept <strong>ovens</strong> only offer<br />

convection cooking while the electric<br />

Concept models offer both steam and<br />

convection cooking. The maximum dry<br />

heat temperature is 300ºC.<br />

All Concept <strong>ovens</strong> include a cool down<br />

function and humidifier.<br />

There is also a version with a probe<br />

function included.<br />

Thanks to the Stop/Start button, the user can turn the oven on and off on demand.<br />

Concept <strong>ovens</strong> have a technical service help system that allows users to verify that all the<br />

GAS VISUAL OVENS<br />

Visual Series<br />

Like the Visual Plus <strong>ovens</strong>, these <strong>ovens</strong><br />

produce steam in a boiler that is separate<br />

from the cooking chamber.<br />

The <strong>ovens</strong> in this series are equipped with<br />

a temperature probe and a retractable<br />

shower that can be accessed from the<br />

control panel without having to open the<br />

door, so heat does not escape from the<br />

oven.<br />

In this series, cooking controls are located on a panel that includes a screen and pushbuttons<br />

for selecting and confirming options. The user can easily choose the options that<br />

appear on the screen and programme the oven accordingly.<br />

Apart from the technical service help functions, the oven also includes a “stand-by” function<br />

that allows users to choose when the oven should begin countdown of the cooking time: as<br />

soon as the button is pushed or when the desired temperature is reached.<br />

The Stop/Start button allows users to turn the oven on and off on demand.<br />

Concept Series<br />

This is the basic oven within the new<br />

generation offered by Fagor Industrial.<br />

The gas Concept <strong>ovens</strong> only offer<br />

convection cooking while the electric<br />

Concept models offer both steam and<br />

convection cooking. The maximum dry heat<br />

temperature is 300ºC.<br />

All Concept <strong>ovens</strong> include a cool down<br />

function and humidifier.<br />

There is also a version with a probe function<br />

included.<br />

Thanks to the Stop/Start button, the user can turn the oven on and off on demand.<br />

Concept <strong>ovens</strong> have a technical service help system that allows users to verify that all the<br />

BLAST CHILLERS:<br />

WHY ARE THEY NECESSARY?<br />

All fresh organic food products contain a natural bacterial<br />

load which, in favourable ambient conditions (temperature<br />

and humidity), multiplies producing hazardous effects on<br />

consumer health.<br />

The most dangerous thermal threshold is between<br />

+65°C and +35°C: in this temperature range, bacterial<br />

multiplication is accelerated.<br />

Micro-organisms begin to develop between<br />

+35°C and +10°C.<br />

Blast chilling means lowering the temperature in the<br />

centre of the product from +70°C to +3°C as quickly as<br />

possible, and in any case within 90 minutes.<br />

The critical temperature range between +65 ºC and +10 ºC,<br />

where the highest bacterial growth occurs, is thus passed<br />

through so quickly that food safety is not affected, and<br />

indeed the product can be stored for 5-8 days.<br />

Blast chilling of a cooked product not only prevents<br />

bacterial growth but also prolongs product conservation<br />

time.<br />

The quality of the food is not affected, and safe storage<br />

time is greatly increased.<br />

DEEP-FREEZING OR FREEZING<br />

These two terms are often confused but the end result is<br />

the same in both cases: the temperature of a food product<br />

is lowered but the water contained in it does not freeze<br />

completely.<br />

The difference is that with freezing there are no time limits<br />

and macrocrystals are formed internally, whereas deepfreezing<br />

means reaching a temperature of –18°C in<br />

the centre of the product within 4 hours, avoiding the<br />

formation of macrocrystals.<br />

As the macrocrystals form, they break the cell membrane<br />

and in the thawing phase mineral salts and nutritional<br />

substances are lost in the form of liquids.<br />

Fagor blast chillers include two deep-freezing cycles: hard<br />

and soft, both are manual and therefore programmed by the<br />

operator according to his specific requirements.<br />

This is an important choice not only from the point of view<br />

of rules and regulations, but also and above all in terms of<br />

working methods.<br />

Correct use of the blast chiller/freezer limits the weight loss<br />

of the product in the cooling phase (positive chilling) which<br />

must be performed by lowering the product temperature<br />

from +70°C to +3°C as quickly as possible and in any case<br />

within 90 minutes.<br />

The result will be a soft succulent product which can be<br />

kept for longer and, after regeneration, will have all the<br />

flavour of a freshly cooked product.<br />
