I am pleased to present a <strong>new</strong> issue of PRODUCT News.<br />
In this issue we present the <strong>new</strong> <strong>range</strong> of <strong>blast</strong> <strong>chillers</strong>.<br />

One year ago we set ourselves the objective of obtaining a more user-friendly control while also offering improved<br />
features for our <strong>blast</strong> <strong>chillers</strong>. However, this is only just the beginning.<br />
Our objective is to become a world reference in the world of <strong>blast</strong> <strong>chillers</strong>. To achieve this we continue to rely on your<br />
contributions. All the contributions received will be included in the second phase which is currently underway. With<br />
many thanks.<br />

More robust controls (membrane<br />
control panel), tougher material to<br />
prevent liquids from entering.<br />
Core probe mounted on standard<br />
bracket to make removal easier.<br />
The heated probe (optional) is<br />
very useful when removing it from<br />
large size or density products; by<br />
merely pressing a button the probe<br />
is heated and can be removed<br />
easily.<br />
HACCP printer (optional) allows<br />
the product temperatures and chill<br />
times to be printed in accordance<br />
with HACCP regulations. Built-in on<br />
the front.<br />
Keys giving direct access to chill cycles, reducing the number of steps required to start chill process.<br />
Two types of chill cycle are possible for both refrigeration and for freezing:<br />
- Hard cycle: For compact products with a thickness of more than 2 cm.<br />
- Soft cycle: for products with a thickness of less than 2 cm, and low densities. This cycle prevents the formation<br />
of frost on the product surface, known as the “igloo effect”, making the correct chilling of the product interior or<br />
core impossible.

COUNCIL DIRECTIVE 93/43/EEC, dated 14 June 1993, on the hygiene of foodstuffs, makes it obligatory for<br />
establishments serving food, (Page nº12)<br />
“ 5. When foodstuffs are to be held or served at chilled temperatures they must be cooled as Quickly as<br />
possible following the final heat processing stage, or final preparation stage if no heat process is applied, to a<br />
temperature which would not result in a risk to health.”<br />
Auto-control in pre-prepared foods in accordance with COUNCIL DIRECTIVE 93/43/EEC<br />
“After pasteurisation comes an essential phase in the handling and preparation of pre-prepared food.<br />
Companies assume this phase as strict control: this is the lowering of temperatures from 65ºC to 10ºC in less<br />
than 2 hours, a critical process from the microbiological viewpoint. This phase determines the future quality of<br />
the food, and of course its safety”.<br />
