VARIJABILNOST AMINOKISELINSKOG SASTAVA KOD SORTI JEÈMA<br />

U ovom radu ispitivano je 29 sorti jeèma. Metodom hromatografije analizirano je prisustvo<br />

slobodnih aminokiselina, a spektrofotometrijski odreðena je njihova koncentracija.<br />

Kvalitativna analiza aminokiselinskog sastava ukazuje da su najzastupljenije meðu<br />

slobodnim aminokiselinama zrna ispitivanih sorti jecma: glutaminska kiselina, prolin,<br />

valin, treonin i druge. Obzirom da jeèam ima svoju upotrebnu vrednost u stoènoj ishrani,<br />

u proizvodnji slada i piva, kao i za specijalne namene u ishrani ljudi, veoma je vano<br />

prisustvo esencijalnih aminokiselina. U razlièitim sortama ispitivanog jeèma identifikovali<br />

smo sedam esencijalnih aminokiselina (valin, treonin, leucin, fenilalanin,<br />

metionin, triptofan i arginin).<br />

Kvantitativna analiza slobodnih aminokiselina ukazuje da je njihov sadraj visok u<br />

sledeæim sortama jeèma: Novosadski 519 i Novosadski 535 (193 mg/ml), Novosadski 703<br />

(163 mg/ml), Novosadski 293, Novosadski 309 i Gigant (161 mg/ml). Analiza sadraja<br />

glutaminske kiseline u zrnu jeèma pokazala je da je ona kvantitativno najzastupljenija<br />

aminokiselina. Koncentracija glutaminske kiseline kod sorte Novosadski 319 je 86<br />

mg/ml; a kod sorti jeèma Novosadski 529 i Novosadski 535 koncentracija je 63,5 mg/ml,<br />

odnosno 62 mg/ml.<br />

VARIJABILITY OF AMINOACID CONTENTS IN BARLEY CULTIVARS<br />

Study of presence of free amino acids in 29 barley cultivars have been analyzed by chromatography<br />

and their concentrtation were determined by spectrophotometry. Qualitative<br />

analysis of amino acid indicated that glutamic acid, proline, valine, threonine were most<br />

present among free amino acid in grain of examined barley cultivars. The presence of<br />

esential amino acid is very important, considering that barley use for feed animals, production<br />

of malt and beer, as well as for special purpose in human nutrition. In different<br />

barley cultivars was identified 7 esential aino acids (valine, threonine, leucine,<br />

phenylalanine, methionine, triptophan and arginine). Analysis of free amino acid indicated<br />

that their contents was very high in next cultivars: Novosadski 519 and Novosadski<br />

535 (193 mg/ml); than Novosadski 703 (163 mg/ml), Novosadski 293, Novosadski 309<br />

and Gigant (161 mg/ml). The analysis of contents of glutamic acid showed that its most<br />

present amino acid in barley grain. Concentration of glutamic acid in cultivar Novosadski<br />

319 is 86 mg/ml; and in barley cultivars Novosadski 529 and Novosadski 535 with concentration<br />

63,5 mg/ml, and 62 mg/ml, respectively.
