XYLITOL • Xylitol is another polyol but slightly different than Sorbitol or Mannitol. Sorbitol and Mannitol are six carbon chain polyols whereas Xylitol is a 5 carbon chain polyol. It is manufactured by the hydrogenation of Xylose. Xylose is made from hydrolysis of Xylan, a polysaccharide found in hemicellulose. The commercial source is Birchwood.
