GLYCYRRHIZIN Glycyrrhizin is about 50 times sweeter than Sucrose but does have a distinct licorice taste. If this compliments the desired flavor then it can be used at levels that will give good sweetening effects, but if the licorice taste conflicts or can be detected then levels must be kept low.
