Snack Time<br />

Make some healthy snacks with your child.<br />

Fruit Salad<br />

• With plastic knives, invite your child to help wash, peel, and cut up fruit<br />

such as bananas, strawberries, blueberries, and oranges<br />

• Try something new—add a kiwi, a mango, or another fruit that is new to<br />

your child.<br />

• Put the fruit in a large bowl and stir.<br />

• Let your child serve some into a bowl.<br />

• Enjoy!<br />

Vegetable Soup<br />

• Let your child choose some fresh vegetables from the grocery story<br />

or use leftovers.<br />

• Let your child clean and help you break up the vegetables.<br />

• Put all the vegetables in a crock pot or large pot for the stove.<br />

• Add a large can of tomato juice and some chicken or vegetable broth<br />

or water.<br />

• Put the crock pot in a safe place or place a large pot on the stove, and<br />

cook on medium-high until your soup is ready for lunch or snack.<br />

• Enjoy how it smells as it cooks!<br />

Whole Wheat Pancakes<br />

• Let your child help measure and mix this recipe:<br />

1 cup and 2 tablespoons whole wheat flour<br />

1 tablespoon brown sugar<br />

2 tablespoons applesauce<br />

1 cup and 2 tablespoons water<br />

1 ½ teaspoons baking power<br />

a pinch of salt<br />

add some blueberries, if desired<br />

Sift the dry ingredients together. Add applesauce and stir until the ingredients<br />

are just wet. (You don’t want the batter to be too thin.) Heat an<br />

electric frying pan that has been sprayed with cooking spray. Pour a small<br />

amount of the batter onto the hot pan to make several pancakes (adults<br />

only). When each pancake is brown on the bottom, turn and cook the<br />

other side. Serve with a small amount of syrup. Yum!<br />
