4.13 Emulsion Capacity (EC)<br />
The effect <strong>of</strong> <strong>chitosan</strong> on the emulsifying capacity <strong>of</strong> soy protein w<strong>as</strong> evaluated with five<br />
<strong>crawfish</strong> <strong>chitosan</strong> samples, two commercial <strong>chitosan</strong>s (Vanson75 <strong>and</strong> Sigma91), <strong>and</strong> three<br />
controls (Figure 8). Results indicate that the capacity <strong>of</strong> soy protein to form emulsion w<strong>as</strong><br />
enhanced in the presence <strong>of</strong> <strong>chitosan</strong>.<br />
