elasticity) 4.1.2 การวัดคาระดับความสามารถในการคืนตัวกลับสูสภาพเดิม (Degree of Bourne (1982) กลาววา Elasticity หมายถึง ความสามารถในการคืนตัวกลับสู สภาพเดิม หลังจากที่ตัวอยางถูกกดหรือทํ าใหผิดรูปราง (deformation) ระดับความสามารถใน การคืนตัวกลับสูสภาพเดิม (Degree of elasticity) ถูกอธิบายในรูปของอัตราสวนของการคืนตัว และปริมาณการเสียรูปทั้งหมดที่เกิดจากการกดหรืออยูในรูปของเปอรเซ็นตดังสมการที่ 1 Degree of elasticity = Recoverable deformation x100 (1) Total deformation การประมาณคา Recoverable deformation เปนเรื่องที่ยุงยากเนื่องจากใน อาหารสวนใหญมีลักษณะเปน viscoelastic ซึ่งการคืนรูปจะมีเรื่องของเวลาเขามาเกี่ยวของ จึงมี การอธิบายคา Degree of elasticity ในรูปของอัตราสวนระหวาง Recoverable work และ Total work ดังสมการที่ 2 Degree of elasticity = % Recoverable work = Recoverable work X 100 (2) Total work งานที่ไดจากพื้นที่ใตกราฟของคาแรงกับการเสียรูป(force-deformation) หรือ จากกราฟของความเคนและความเครียด(stress-strain) ดังภาพที่ 7 จะมีความผิดพลาดนอยมาก Total work และ Recoverable work จะคํ านวณจากพื้นที่ใตกราฟของความเคนและความเครียด โดยมีหนวยเปน งาน / ปริมาตรของตัวอยาง และเปนที่ทราบกันดีอยูแลววา อาหารสวนใหญไมใช True elasticity ดังนั้นในการพิจารณา Degree of elasticity โดยใชสมการที่ 1 และ สมการที่ 2 อาจจะตองคํ านึงถึงคาความเครียดดวย 18
