TOAST<br />

SPICE BLENd<br />

Function: TOAST<br />

Setting: #2 darkness, 1 slice<br />

Makes: ½ cup<br />

INGREdIENTS<br />

¼ cup fennel seeds<br />

1 tablespoon coriander seeds<br />

1 tablespoon whole black peppercorns<br />

¼ teaspoon ground chilli powder<br />

2 tablespoons salt<br />

2 tablespoons ground cinnamon<br />

METHOd<br />

1. Spread <strong>the</strong> fennel seeds, coriander seeds<br />

and black peppercorns onto <strong>the</strong> <strong>Breville</strong><br />

non-stick pizza pan.<br />

2. Set <strong>the</strong> wire rack in <strong>the</strong> middle rack<br />

height position and turn <strong>the</strong> function<br />

dial until <strong>the</strong> indicator on <strong>the</strong> LCD<br />

screen points to <strong>the</strong> TOAST function.<br />

Set <strong>the</strong> darkness to #2 and number<br />

of slices to Press START/CANCEL to<br />

activate. The spices will make popping<br />

sounds when it nears <strong>the</strong> end of <strong>the</strong><br />

toasting time.<br />

3. Allow to cool prior to grinding using a<br />

<strong>Breville</strong> Coffee and Spice grinder.<br />

Makes: 4 Packets<br />

INGREdIENTS<br />

1 package Banana leaves*, cut into 8 x 30cm<br />

square pieces<br />

2 boneless, skinless chicken breasts, cut into<br />

2.5cm size pieces<br />

1 red capsicum, trimmed and seeded, cut into<br />

1.5cm cubes<br />

1 cup fresh pineapple, peeled and cored, cut into<br />

1.5cm cubes<br />

FOR MARINAdE<br />

INGREdIENTS<br />

180ml coconut milk<br />

2 tablespoons fish sauce<br />

2 Kaffir lime leaves, cut into thin strands<br />

1 green chilli, trimmed<br />

3 garlic cloves, peeled and minced<br />

2 tablespoons grated ginger<br />

1 teaspoon Low sodium soy sauce<br />

1 teaspoon ground coriander<br />

1 lime, zested<br />

½ cup fresh coriander, chopped<br />

½ cup fresh basil, chopped<br />

FOR GARNISH<br />

INGREdIENTS<br />

¼ cup unsweetened shredded coconut, toasted<br />

(see below)<br />

1 lime, quartered<br />

½ cup fresh coriander, chopped<br />

½ cup fresh basil, chopped<br />
