1.5. The Thermodynamic of Protein Folding-Unfolding<br />

Stability of proteins relate to the free energy change between the folded and unfolded states which<br />

is represented by the following equation [19] :<br />

ΔG = ΔH ─TΔS<br />

Where ΔG represents the free energy change between folded and unfolded, T is Kelvin<br />

temperature, ΔH is the enthalpy change and ΔS is the entropy change from folded to unfolded<br />

protein.<br />

The enthalpy corresponds to the binding energy and in folded conformation of an area is in a fairly<br />

low level of free energy, and unfolded conformation needs a substantial increase in free energy so<br />
