The a1kaloid concentrations in the processed and unprocessed Colocasia esculenta tubers<br />

are shown in Table A3-4c. Total alkaloid concentration for Amadumbe corms ranged<br />

between 0.14 and 0.22 mg/g. Decrease in the alkaloid content during processing was<br />

reflected as ranging up to 79 per cent.<br />

The saponin content, ranging from 0.119 to 0.145 mg/g in Amadumbe tubers, is given in<br />

Table A3-4c. Saponin reduction during processing was found to range between 10 and 64<br />

per cent.<br />
