The invention refers to the food industry, in particular to process of<br />
obtaining half-finished products from extruded chick-pea. The<br />
process comprises cleaning of nut beans from mechanical<br />
impurities, the rough comminution, moistening up to the humidity<br />
of 16 …20 %, extrusion at the pressure of 30 – 40 MPa and the<br />
temperature of 105..115 º C during 20 – 30 s, comminution and<br />
hermetic sealing.<br />
The result of the invention consists in decreasing the product<br />
obtaining time with the simultaneous increasing of the shelf life,<br />
increasing the sorption activity, the assimilability and digestion of<br />
proteins from product.<br />

The invention refers to the food industry, namely to the paste of<br />
legumes that can be used in the production of culinary products,<br />
such as cutlets, meat- balls, dumplings.<br />
The paste of legumes, according to the invention, comprises a<br />
component on base of legumes, namely extruded flour of legumes<br />
with addition of liver or meat, or mushrooms, flavor additives and<br />
water.<br />
The result consists in obtaining a paste of legumes with high<br />
biological value and in reducing the production time thereof.<br />
