anticipation for these longer days after an extended winter for<br />
so many of us – the sense of the possible grows along with the<br />

The Not-So-Wild West<br />
A half century after the Gardiner divided Parkdale, p<strong>re</strong>cipitating the Toronto<br />
neighbourhood’s decline, a <strong>re</strong>vival is under way. How Parkdale got its groove<br />
back. Un demi-siècle après la coupu<strong>re</strong> de Parkdale en deux par la voie Gardiner<br />
qui précipita le déclin de ce voisinage de Toronto, il <strong>re</strong>trouve un second souffle.<br />
With noble mansions and lake views, Parkdale was once<br />
among Toronto’s most desirable enclaves. Everything<br />
changed in the late 1950s, when the Gardiner Exp<strong>re</strong>ssway<br />
arrived, destroying much local g<strong>re</strong>en space; the<br />
neighbourhood, borde<strong>re</strong>d by Lake Ontario, the Canadian<br />
Pacific tracks, Dufferin St<strong>re</strong>et and Roncesvalles Avenue,<br />
flounde<strong>re</strong>d. Recently, however, Parkdale’s diverse community<br />
of artists and immigrants – including a massive Tibetan<br />
diaspora – has led a robust <strong>re</strong>vival. Today, the st<strong>re</strong>ets teem<br />
with musicians, eccentrics, ad execs and young pa<strong>re</strong>nts,<br />
leaving no doubt that Parkdale is back.<br />
Avec ses grandes demeu<strong>re</strong>s et ses vues sur le lac, Parkdale<br />
était jadis l’une des enclaves les plus <strong>re</strong>cherchées de<br />
Toronto. Dans les années 1950, la construction du Gardiner<br />
Exp<strong>re</strong>ssway changea la donne en détruisant bien des<br />
espaces verts. Ce voisinage entouré par le lac Ontario,<br />
les voies ferrées du Canadien Pacifique, Dufferin St<strong>re</strong>et<br />
et Roncesvalles Avenue périclita. Mais récemment, la<br />
communauté d’artistes et d’immigrants de Parkdale – dont<br />

crowd distinguishes Porzia from Bymark<br />

Pesce developed his uncompromising<br />
standards. He<strong>re</strong>, he brings a light touch<br />
to chicken liver agnolotti and loads his<br />
eggplant involtini with enough ricotta<br />
to seduce any palate. C’est une bonne<br />

A sister to Grand Electric, Electric Mud<br />
is a tiny 24-seat room, home to classic<br />
rock and roadhouse-inspi<strong>re</strong>d decor.<br />
Standout dishes include duck ham<br />
with hoisin sauce, and a salad of crispy<br />
pigs’ ears and Boston lettuce, drizzled<br />
with an IPA-gastrique-and-buttermilk<br />
d<strong>re</strong>ssing. Petite sœur du Grand Electric,<br />
l’Electric Mud est un petit <strong>re</strong>staurant de<br />
24 couverts à la déco et à l’ambiance<br />
rock. On notera en particulier le jambon<br />
de canard sauce hoisin et une salade<br />
d’o<strong>re</strong>illes de cochon croustillantes et<br />
laitue Boston <strong>re</strong>levée d’une vinaig<strong>re</strong>tte à<br />

Parkdalians over the a<strong>re</strong>a’s best coffee:<br />
it’s at Capital Esp<strong>re</strong>sso, whe<strong>re</strong> efficient<br />
baristas serve spot-on macchiatos and<br />
lattes made with Lazer Beam, Capital’s<br />
custom blend of South American beans.<br />
Weekdays a<strong>re</strong> popular with the mom<br />
brigade, whose kids a<strong>re</strong> enticed by<br />
the shop’s toy collection. Les résidents<br />
de Parkdale se mettent tous d’accord<br />
quand il s’agit de trouver du bon café :<br />

If the customers at Chantecler seem<br />
mo<strong>re</strong> cufflinked and less tattooed than<br />
those at most Parkdale standbys, it’s<br />
likely because of this spot’s proper<br />
cocktails, including a Manhattan,<br />
a Corpse Reviver #2 and a Toronto<br />
Cocktail, which includes rye, Fernet<br />
Branca and burnt orange. Or it’s<br />
because of the food: a wildly popular<br />
Momofuku-style sharing platter of pork<br />
shoulder and lettuce wraps. Si les clients<br />
du Chantecler semblent plus portés<br />
sur les boutons de manchettes que les<br />
tatouages, c’est sans doute grâce à<br />

clothing by Toronto designers, including<br />
selvage jeans by Outclass, vermilion<br />
high-waisted underwear by Fortnight<br />
Lingerie, d<strong>re</strong>ss shirts by 18 Waits and<br />
printed d<strong>re</strong>sses designed by Leilanni, in<br />
collaboration with the shop. Co-owners<br />
Meg Watson and Kerry Butt, who<br />
opened the shop six weeks after seeing<br />
the “For Lease” sign – “We jumped,”<br />
says Watson – named the shop after<br />
their grandmothers, style icons for<br />

Founded in 1997 in West Queen West<br />
– the a<strong>re</strong>a east of Parkdale – Studio<br />
Brillantine moved to Parkdale in 2008.<br />
Ferdinand Suzara’s shop is full of quirky<br />
design items, like 3-D coffee table books<br />
about anatomy, Japanese monster dolls,<br />
Barbapapa aprons and Tintin Band-Aids,<br />
but this is no me<strong>re</strong> novelty sto<strong>re</strong>. Brillantine<br />
is home to functional objects, including<br />
glass teapots, bamboo-colou<strong>re</strong>d paper<br />
straws and Issey Miyake’s line of metallic<br />
Bao Bao bags. Fondé en 1997 dans West<br />
Queen West, Studio Brillantine est arrivé<br />
dans le voisinage en 2008. La boutique<br />

At the west end of Queen St<strong>re</strong>et, a<br />
bounty of antique sto<strong>re</strong>s await, with<br />
none finer than Hideaway. The shop is a<br />
destination for finding the perfect lamp,<br />
and it’s a museum of ra<strong>re</strong> finds: come for<br />
the Eames chairs, stay for the antique<br />
dental equipment, seashell chairs and<br />
a circus banner promoting mentalists.<br />

Contemporary<br />
In 2006, when Niki Dracos acqui<strong>re</strong>d this<br />
former hardwa<strong>re</strong> sto<strong>re</strong>, the gallerist says<br />
she felt like a pioneer: the neighbourhood<br />
had many empty sto<strong>re</strong>fronts (all gobbled<br />
up now), and its futu<strong>re</strong> was uncertain.<br />
But, she says, “We fell in love with the<br />
exterior, the sign, the location and the<br />
idea of a hardwa<strong>re</strong> sto<strong>re</strong> becoming a<br />
gallery.” Today, the space welcomes<br />
visitors with soft lights that paint the brick<br />
walls and polished cement floor with a<br />
warmth unusual for an art gallery. The<br />
art rotates <strong>re</strong>gularly, with no particular<br />
aesthetic or principle guiding Dracos’s<br />
curation. “Choosing artists to featu<strong>re</strong><br />
is a very organic process for me,” she<br />
says. En 2006, lorsque Niki Dracos a<br />
acquis cette ancienne quincaillerie, elle<br />
a eu l’imp<strong>re</strong>ssion d’êt<strong>re</strong> une pionniè<strong>re</strong> :<br />
de nomb<strong>re</strong>uses devantu<strong>re</strong>s étaient vides<br />
(toutes sont ouvertes aujourd’hui) et<br />
l’avenir du voisinage était incertain. Mais<br />
elle dit qu’elle est « tombée amou<strong>re</strong>use<br />
de l’extérieur, de l’enseigne, du lieu et de<br />
l’idée de créer cette galerie ». Désormais,<br />
l’endroit accueille des visiteurs dans ses<br />
murs de briques baignés d’une lumiè<strong>re</strong><br />
d’ambiance. Les expositions varient,<br />
sans obéir à un principe spécifique.<br />
« Le choix des artistes est pour moi un<br />
processus organique », confie-t-elle.<br />

“No dogs please,” says the sign in the<br />
window, “except Gordon and Maisy.”<br />
Maisy, a collie-hound mix, g<strong>re</strong>ets guests<br />
in a space so twee it could be a Wes<br />
Anderson film. This is Toronto’s first sewand-craft-by-the-hour<br />
space, whe<strong>re</strong> bolts<br />
of fabric rise to the ceiling. In addition to<br />
<strong>re</strong>nting sewing tables by the hour, the<br />
Workroom offers classes, from Zipper<br />
Clinic and Shopping Tote to Japanese<br />
D<strong>re</strong>ss Books and Pineapple Log Cabin.<br />
On peut li<strong>re</strong> sur le panneau de la vitrine :<br />
« Les chiens ne sont pas admis, sauf<br />

shop, and another new shop just went<br />
in below me. But we’<strong>re</strong> all buddies;<br />
whenever they’<strong>re</strong> having a party, I’ll<br />
come and hang out. It’s very Sesame<br />
St<strong>re</strong>et. Parkdale est un quartier<br />

I can feel the musical energy of the<br />
city moving west. I always want to<br />
be near it. That’s definitely something<br />
that attracted me to Parkdale. Just<br />

go to a show – that’s <strong>re</strong>ally awesome.<br />
My favourite bar is the Rhino; I can<br />

It’s Mary Turner’s job to ensu<strong>re</strong> that, nearly 350 since the founding of Hudson’s<br />
Bay, shopping at “Canada’s department sto<strong>re</strong>” is still a g<strong>re</strong>at adventu<strong>re</strong>.<br />

I’m the Executive Vice P<strong>re</strong>sident, Private Brands and<br />
Global Sourcing, for Hudson’s Bay Company. But<br />
everyone who works for the company, from di<strong>re</strong>ctor level up,<br />
is also known as Chief Adventu<strong>re</strong>r. When the company was<br />
incorporated in 1670 by Charles II, its official name was the<br />
Governor and Company of Adventu<strong>re</strong>rs of England Trading<br />
into Hudson’s Bay. The title of Chief Adventu<strong>re</strong>r is a di<strong>re</strong>ct link<br />
to the original name, and I much p<strong>re</strong>fer giving out my business<br />
card with that job description on it. It’s a wonderful iceb<strong>re</strong>aker<br />
and talking point.<br />
I have the privilege of dealing with the most wonderful<br />
parts of Hudson’s Bay. I look after all our partnerships with<br />
other brands, including Topshop and Kleinfeld Bridal, and<br />
I oversee The Room, the high-end designer arm of the sto<strong>re</strong>.<br />
I also look after all our Olympic partnerships – Hudson’s Bay<br />
supplies all of Canada’s Olympic uniforms. And I oversee the<br />
product ranges built around the iconic stripes of our logo. It’s a<br />
diverse portfolio that includes travelling around the world and<br />
<strong>re</strong>searching brands of clothing, as well as lots of meetings.<br />
I always have my ear to the ground, and I have a staff of about<br />
130 to help me keep tabs on things.<br />
I have two offices: one at the Hudson’s Bay flagship in<br />
Toronto, and one at our Lord and Taylor flagship in New<br />
York. On a typical day, first and fo<strong>re</strong>most, I need to know whe<strong>re</strong><br />
I need to be. I’ll meet with my team or our partners to talk about<br />
what we want to achieve and the best means of getting the<strong>re</strong>.<br />
To do my job, you have to be engaged, flexible and passionate.<br />
Because it <strong>re</strong>qui<strong>re</strong>s a lot of travelling, and a lot of time away<br />
from home, you have to love it.<br />
It’s an exciting time for Hudson’s Bay right now. We just<br />
launched our new logo, which marks a new period for us. The<br />
<strong>re</strong>ason we switched back from The Bay to the original is to<br />
celebrate our inc<strong>re</strong>dible history and heritage. Many people<br />
know that Hudson’s Bay started as a fur trading business,<br />
but we’<strong>re</strong> also the oldest commercial corporation in North<br />
America. In the 19th century, Hudson’s Bay acted as the de<br />
facto government in parts of North America, and it was the<br />
largest private landowner in Canada and even printed its own<br />
money. We say we’<strong>re</strong> the company that became a nation. At<br />
the same time, we want to stay f<strong>re</strong>sh and <strong>re</strong>levant – to honour<br />
our heritage while moving forward. On the one hand, you<br />
can’t be all things to all people; but on the other hand, we a<strong>re</strong><br />
Canada’s department sto<strong>re</strong>, so we never want anyone to feel<br />
shut out.<br />
I’ve been working with sto<strong>re</strong>s for, oh, it’s pushing 25<br />
years now. I love product and innovation, and I love being able<br />
to make them available to the customer. It’s not that I played<br />
shops as a child or anything. What led me into <strong>re</strong>tail is my huge<br />
passion for fashion. I majo<strong>re</strong>d in commerce at Trinity College,<br />
at the University of Toronto, but I mino<strong>re</strong>d in Renaissance<br />
studies. I think that has actually come in handy, because the<br />
Renaissance was all about c<strong>re</strong>ativity and commerce – my two<br />
big inte<strong>re</strong>sts.<br />

Taylor de New York. Je commence en général ma journée<br />
en décidant où je dois me trouver. Je consulte mon équipe<br />
ou les associés pour déterminer l’objectif du moment et les<br />
meilleurs moyens d’y arriver. À mon poste, il faut fai<strong>re</strong> p<strong>re</strong>uve<br />
de souplesse et êt<strong>re</strong> passionné. Car je dois souvent voyager et<br />
passer du temps loin de chez moi; il faut vraiment aimer cela.<br />
La Baie d’Hudson vit une époque excitante. Nous venons<br />
de lancer not<strong>re</strong> nouveau logo qui marque une è<strong>re</strong> nouvelle<br />
pour nous. La raison du <strong>re</strong>tour à l’original, après The Bay, est<br />
la célébration de nos racines et de not<strong>re</strong> patrimoine. Si, au<br />
départ, nous pratiquions le commerce des fourru<strong>re</strong>s, nous<br />
sommes aussi la plus ancienne compagnie commerciale<br />
d’Amérique du Nord. Au XIX e siècle, la Baie d’Hudson était<br />
souvent le gouvernement de facto dans certaines régions<br />
et était le plus grand propriétai<strong>re</strong> terrien du Canada. Elle<br />
imprimait même sa prop<strong>re</strong> monnaie. Nous disons que nous<br />
sommes l’ent<strong>re</strong>prise qui est devenue une nation. En même<br />
temps, nous avons su aller de l’avant tout en conservant nos<br />
racines. D’une part, on ne peut pas plai<strong>re</strong> à tout le monde,<br />
d’aut<strong>re</strong> part, nous sommes le grand magasin du Canada et<br />
nous ne voulons exclu<strong>re</strong> personne.<br />
Je travaille dans les grands magasins depuis près de<br />
25 ans. J’ado<strong>re</strong> les produits et l’innovation et j’aime à les<br />
<strong>re</strong>nd<strong>re</strong> disponibles pour les clients. Ce n’est pas que je jouais<br />
tout le temps à la marchande quand j’étais petite. Ce qui m’a<br />

Next to the Hudson’s Bay stripes, Mr. Porter is my<br />
favourite icon. Solving the Spot the Diffe<strong>re</strong>nce challenge, in<br />
this magazine, is my favourite thing to do, and I’m devastated if<br />
I get to that page and someone’s al<strong>re</strong>ady done it. I love the city<br />
<strong>re</strong>views, too; they’<strong>re</strong> perfect for giving someone like me, who’s<br />
always chasing the new and the f<strong>re</strong>sh, a sense of the pulse in<br />
other cities.<br />
In the next decade, we’ll see a <strong>re</strong>fining of the shopping<br />
marketplace. The<strong>re</strong>’ll be mo<strong>re</strong> and mo<strong>re</strong> niche businesses<br />
popping up, and the strong and c<strong>re</strong>ative will survive. But<br />
the<strong>re</strong> will still be a high st<strong>re</strong>et – I think bricks and mortar and<br />
e-commerce will end up complementing each other.<br />

Après les rayu<strong>re</strong>s multicolo<strong>re</strong>s de HBC, mon emblème<br />
favori est M. Porter. Ma rubrique préférée dans le magazine<br />
est de trouver les 20 diffé<strong>re</strong>nces. Je suis extrêmement déçue<br />
de constater que parfois quelqu’un a déjà résolu l’énigme<br />
avant moi. J’ado<strong>re</strong> aussi les <strong>re</strong>vues sur les villes : idéales pour<br />
quelqu’un comme moi toujours en quête de nouveauté et<br />
avide de voir ce qui se passe ailleurs.<br />
Dans les dix prochaines années, on va assister à un<br />
affinement du secteur des ventes. Il y aura de plus en plus<br />
d’activités spécialisées et seuls les plus forts et les plus créatifs<br />
vont ti<strong>re</strong>r leur épingle du jeu. Mais les boutiques de la grand rue<br />
survivront, en complément du e-commerce.<br />

The Top Flight<br />
Canada’s Bombardier proudly announces its new CSeries aircraft – set to take<br />
passenger air travel to a whole new level. Le constructeur Bombardier présente<br />
avec fierté son nouveau CSeries, un appa<strong>re</strong>il qui va établir une nouvelle réfé<strong>re</strong>nce.<br />
About 50 kilomet<strong>re</strong>s (31 miles) northwest of Montréal and a<br />
short drive from Mirabel Airport sits Bombardier’s newest –<br />
and boldest – airplane. Set for an inaugural outing at the end<br />
of June, the CSeries <strong>re</strong>p<strong>re</strong>sents a significant step forward for<br />
the esteemed Canadian transportation giant. Porter is poised<br />
to be the first Canadian airline to fly the CS100, pending final<br />
approval from the partners of the Tripartite Ag<strong>re</strong>ement that<br />
governs Porter’s home base of Billy Bishop Toronto City Airport.<br />
The CS100 will be a welcome addition to Porter’s fleet of<br />
Bombardier’s 70-passenger Q400, the short-haul, ultra-quiet<br />
turboprop. The new whisper jet will be custom configu<strong>re</strong>d for<br />
Porter, with 107 seats for comfort flying across North America.<br />
With the CS100, Bombardier has upped the ante, affirming its<br />
status as a global heavyweight in the aviation world.<br />

The CSeries planes, which offer a 20 percent<br />
improvement in fuel economy over their<br />
competitors, a<strong>re</strong> unmistakable game-changers.<br />
Compa<strong>re</strong>d with other aircraft in the same seat<br />
category, the CSeries planes a<strong>re</strong> lighter (up to<br />
5,443 kilograms lighter), mo<strong>re</strong> eco-friendly (CO 2<br />
emissions a<strong>re</strong> <strong>re</strong>duced by 20 percent) and quieter<br />
(new turbofan engine technology makes the planes<br />
four times quieter). The interior has been designed<br />
with inc<strong>re</strong>ased cabin space and passenger<br />
comfort in mind. Enhancements include extralarge<br />
windows, wide seats, subtle LED lighting and<br />
capacious, rotating overhead storage bins.<br />
In March, at a p<strong>re</strong>sentation at Bombardier’s<br />
Mirabel production facility, the company unveiled<br />
FTV1, the first flight test vehicle for the CSeries<br />
planes. (FTV2, 3, 4 and 5 will soon follow.) The event<br />
generated t<strong>re</strong>mendous buzz in the aviation world;<br />
ever since the family was first launched in England<br />
at the Farnborough International Airshow in 2008,<br />
anticipation has been mounting. A half decade of<br />
development later, the aircraft is <strong>re</strong>ady for flight – a<br />
rather prompt turnaround in the aviation world. “It’s<br />
not a paper airplane; it’s a <strong>re</strong>al airplane,” says Mike<br />
Arcamone, p<strong>re</strong>sident of Bombardier Commercial<br />
Aircraft. “It is not just an aircraft with a new engine;<br />
it is a totally new aircraft.”<br />
With the CSeries, Bombardier may be putting its<br />
rivals on the defensive. “I can tell you we’<strong>re</strong> a very<br />
serious competitor in the market segment,” says<br />
Arcamone. “We’<strong>re</strong> going to be the<strong>re</strong>, and we’<strong>re</strong><br />
going to win.” It’s no wonder industry insiders<br />

le FTV1, son p<strong>re</strong>mier appa<strong>re</strong>il test pour le CSeries.<br />
(FTV2, 3, 4 et 5 vont bientôt suiv<strong>re</strong>). Cet événement<br />
a suscité une grande excitation dans le monde de<br />
l’aviation car depuis le lancement de cette série au<br />
Farnborough International Airshow, en Angleter<strong>re</strong><br />
en 2008, les attentes n’ont fait que croît<strong>re</strong>. Après<br />

metaphors – as a di<strong>re</strong>ct shot across the bow of<br />
the duopoly Boeing and Airbus and their 737 and<br />
A320 families of aircraft, <strong>re</strong>spectively.<br />
Bombardier has come a long way from its origins<br />
as a humble family-run company in the 1920s. In<br />
the 1970s, the company looked to mass transit; the<br />
Montréal metro system was its first big customer.<br />
Planes we<strong>re</strong> the next logical step, and in 1986,<br />
Bombardier bought Canadair, the manufactu<strong>re</strong>r<br />
of Challenger jets, eventually building the wildly<br />
successful Canadair Regional Jet (CRJ) Series.<br />
Today, Bombardier is the world’s only company<br />
to make trains, planes and snowmobiles; and<br />
Bombardier Aerospace is the third-largest maker<br />
of commercial airplanes in the world.<br />
An important element of Bombardier’s continued<br />
success has been its ability to d<strong>re</strong>am big.<br />
Production of the CSeries will employ an estimated<br />
3,000 people across the globe, from Canada to<br />
I<strong>re</strong>land (the wings) to Germany (the landing gear) to<br />
China (the fuselage). Of those workers, 2,200 will<br />
be based at Mirabel’s final assembly plant. Robert<br />
Dewar, vice-p<strong>re</strong>sident and general manager of<br />
the CSeries program, praises all involved for their<br />
commitment. “This is a team sport,” he says. “It’s<br />
about the people that have the d<strong>re</strong>am, the passion<br />
and the drive to make it happen.”<br />
But getting a project like the CSeries off the<br />
ground takes mo<strong>re</strong> than vision; it takes diligence,<br />
planning and countless hours of testing. The final<br />
assembly facility in Mirabel abuts a 5,760-squa<strong>re</strong>-<br />

met<strong>re</strong> (62,000-squa<strong>re</strong>-foot) cent<strong>re</strong> called the<br />
Complete Integrated Aircraft Systems Test A<strong>re</strong>a<br />
(CIASTA), which is basically a high-tech testing<br />
ground whe<strong>re</strong> every element of a sample CSeries<br />
plane is meticulously scrutinized.<br />
This is the first time that Bombardier has<br />
integrated so many systems (avionics, electrical,<br />
environmental control, flight control and hydraulics)<br />
on the same rig, giving the aircraft a seriously<br />
efficient edge. Bombardier’s suppliers have also<br />
conducted their own upfront testing. Case in<br />
point: Pratt and Whitney – the c<strong>re</strong>ator of the new<br />
turbofan engine that will power the CSeries – has<br />
completed 4,000 hours of engine testing since<br />
2010, including 340 hours of flight testing, and<br />
<strong>re</strong>ceived Transport Canada certification in March.<br />
All that’s left now is to fill the order books.<br />
Bombardier is going for gold: the objective is to<br />
have 20 clients and 300 firm orders by the time the<br />
CSeries enters into service in 2014. Right now the<br />
company sits at 14 and 180, <strong>re</strong>spectively. “We’<strong>re</strong><br />
very satisfied with the number of customers we<br />
have; we’<strong>re</strong> very satisfied with the diversity; we’<strong>re</strong><br />
very satisfied geographically whe<strong>re</strong> our customers<br />
a<strong>re</strong> located,” says Arcamone.<br />
To date, orders taken include AirBaltic,<br />
Lufthansa, Ko<strong>re</strong>an Air and Porter Airlines. As for<br />
which corner of the world will be first out of the<br />
gate, Dewar’s not talking. “The first aircraft will be<br />
delive<strong>re</strong>d to an undisclosed customer,” he says.<br />
“The CSeries offers a very strong competitive<br />
advantage – airlines want to keep it tight to their<br />
chest so they have a longer time-frame advantage<br />
in the market.”<br />
Undeniably, the new planes contain a number of<br />
incentives for airlines, from the <strong>re</strong>duced noise and<br />
emissions to those sought-after extra seats. And<br />
what of the passenger’s chief concern – comfort?<br />
Dewar sums it up thus: “I’m a big guy. And I fit.”<br />

critè<strong>re</strong> des passagers ? Dewar résume ainsi : « Je<br />

Hemingway immortalized Petoskey in his stories, and today’s visitors will be equally<br />
inspi<strong>re</strong>d by the light, the water, the sunsets – and the chocolate. Hemingway a<br />

A two-hour drive south of Sault Ste. Marie, Petoskey,<br />

intriguing sto<strong>re</strong>s and eateries, you can spend days<br />
exploring he<strong>re</strong>.<br />
Closer to the lake, you’ll find a summer-long<br />
rotation of events and festivals – the high season<br />
starts in July – and live musicians perform at the<br />
city park th<strong>re</strong>e days a week. It’s also whe<strong>re</strong> you’ll<br />
find the Little Traverse History Museum, which<br />

still very much in evidence: the city is dotted with<br />
plaques pointing out buildings that influenced the<br />
writer’s life and appea<strong>re</strong>d in his fiction.<br />
The<strong>re</strong>’s a mo<strong>re</strong> di<strong>re</strong>ct connection, too: under<br />
the enormous leaded mirrors of the City Park<br />
Grill, Hemingway’s portrait hangs behind the bar,<br />

day. “He’s keeping an eye on things,” says Jason<br />
Septic, the grill’s manager. The latest inhabitant<br />
of a storied 19th-century building, the City Park<br />
Grill is a fine place for lunch or dinner. Like most<br />
places in Petoskey, it’s upscale yet <strong>re</strong>laxed. The<br />
room’s decor keeps things stately – p<strong>re</strong>ssed-metal<br />
roof, 10-met<strong>re</strong>-long (33-foot-long) solid mahogany<br />
bar, watchful Ernest – and the <strong>re</strong>staurant serves<br />
beautiful steaks. Doors to the bootlegging tunnels<br />
from the Prohibition era can still be seen; the past<br />
is never far away in this place.<br />
Visitors in Hemingway’s day would have made<br />
for one of the railway hotels by the station. Across<br />
from the old terminal, Stafford’s Perry Hotel was –<br />
and <strong>re</strong>mains – a big brick hotel, built when brick<br />
hotels we<strong>re</strong> a fi<strong>re</strong>-<strong>re</strong>sistant novelty. (Indeed, of the<br />
21 hotels it competed with when built, it’s the last<br />
one standing.)<br />
Today, the hotel <strong>re</strong>tains a comforting grandeur.<br />
Perched on a hill, the west-facing rooms offer<br />
views over the bay and its sunsets, while the<br />
hallways a<strong>re</strong> lined with memorabilia, historical<br />
plaques and a wheezy pedal organ tucked into an<br />
alcove. In the basement, the Noggin Room Pub is<br />
a community stalwart. And in the morning, you’ll<br />
find an elegant dining room overlooking the bay,<br />
with a griddle on which almost any brunch you<br />
desi<strong>re</strong> can be cooked up.<br />
If you happen upon good weather, then get<br />
outside. Pick up a bike at one of the town’s bike<br />
shops, like North Country Cycle Sport, which will<br />

Locatai<strong>re</strong> le plus récent de ce bâtiment du XIX e<br />
siècle, le City Park Grill est excellent pour souper<br />
ou dîner. Comme la plupart des établissements<br />
de Petoskey, il est chic mais décontracté. La déco<br />
est majestueuse – plafond en métal embouti, bar<br />
en acajou de 10 mèt<strong>re</strong>s de long, un Ernest attentif<br />
– et le <strong>re</strong>staurant sert des steaks succulents. On<br />
peut même voir des portes qui conduisent aux<br />
tunnels utilisés pendant la prohibition pour fai<strong>re</strong> de<br />
la cont<strong>re</strong>bande. Le passé n’est jamais loin.<br />
À l’époque d’Hemingway, les visiteurs seraient<br />
descendus à l’un des hôtels de la ga<strong>re</strong>. En face<br />
du vénérable terminus, le Stafford’s Perry Hotel<br />
était, et est toujours, un imposant bâtiment en<br />
brique, qui date de l’époque où les hôtels en<br />
brique constituaient une nouveauté résistante au<br />
feu. (D’ailleurs, il est le seul survivant parmi les<br />
21 établissements de la concur<strong>re</strong>nce).<br />
Aujourd’hui, il affiche toujours une grandeur<br />
réconfortante. Perché sur une colline, les chamb<strong>re</strong>s<br />
de sa façade ouest off<strong>re</strong>nt une vue incroyable sur<br />
la baie et ses couchers de soleil ; les couloirs sont<br />
décorés de souvenirs, plaques historiques et d’un<br />
harmonium poussif niché dans une alcôve. Au<br />
sous-sol, le Noggin Room Pub est un pilier de la<br />
communauté. Au matin, vous découvri<strong>re</strong>z une<br />

ent you a <strong>re</strong>spectable 21-speed for the day, and<br />
roll down to the Little Traverse Wheelway, a multiuse<br />
bike path that hugs the scenic bay for the 42<br />
kilomet<strong>re</strong>s (26 miles) between Petoskey and the<br />
two villages that flank it.<br />
Take the north branch up toward Harbor<br />
Springs, Petoskey’s smaller neighbour, for a halfday<br />
excursion – and bring a swimsuit. Along the<br />
way, you’ll pass Petoskey State Park, or, as it<br />
used to be called, the Petoskey Beach. The park<br />
is shelte<strong>re</strong>d by fo<strong>re</strong>sts and sand dunes and crisscrossed<br />
by walking trails. In the summer, its sho<strong>re</strong>s<br />
a<strong>re</strong> lined with swimmers.<br />
These sho<strong>re</strong>s a<strong>re</strong> also a popular place to hunt for<br />
a strange local specialty: Petoskey stones. Unique<br />
to this part of the world, Petoskey stones a<strong>re</strong><br />
unworldly looking 350-million-year-old corals that<br />
have hardened into rocks patterned with organic<br />
hexagons. Every spring, a f<strong>re</strong>sh batch washes<br />
up at the state park, from whe<strong>re</strong> they drift into gift<br />
sto<strong>re</strong>s and the pockets of sharp-eyed visitors.<br />
Once you’ve arrived back in town, grab lunch<br />
at Roast and Toast, the eclectic coffee shop and<br />
diner whe<strong>re</strong> everybody in town seems to converge<br />
at the lunch hour. Brightly lit in neon and finished<br />
with corrugated tin, it exudes a 1950s-era charm.<br />
The servings a<strong>re</strong> hearty, and a mysteriously named<br />
Bearded Chicken Club promises chicken cooked<br />
in the product of a local b<strong>re</strong>wery; it actually tastes<br />
like beer.<br />
Roast and Toast is on Lake St<strong>re</strong>et, in the gaslight<br />
district, a compact, chain-f<strong>re</strong>e a<strong>re</strong>a of shops.<br />
Down the st<strong>re</strong>et is McLean and Eakin, a booksto<strong>re</strong><br />
that has been twice nominated by Publisher’s<br />
Weekly as the national Bookseller of the Year. The<br />
nomb<strong>re</strong>ux loueurs de la ville, comme North<br />
Country Cycle Sport, qui vous propose des vélos à<br />
21 vitesses à la journée, et mettez le cap sur Little<br />
Traverse Wheelway, un chemin à usages multiples<br />

corail vieux de 350 millions d’années métamorphosé<br />
en roche aux motifs hexagonaux. Au printemps, une<br />
nouvelle fournée s’échoue sur les plages du parc<br />
d’État pour finir dans les boutiques de souvenirs et<br />
les poches des visiteurs à l’œil avisé.<br />
De <strong>re</strong>tour en ville, allez dîner au Roast and<br />
Toast, le café éclectique où tout le monde semble<br />
converger à l’heu<strong>re</strong> du <strong>re</strong>pas. Avec ses néons<br />
brillants et sa déco en tôle ondulée, il exsude un<br />
charme très années 1950. Les portions sont<br />
géné<strong>re</strong>uses et le Bearded Chicken Club (quel<br />
nom!) promet du poulet cuisiné avec le produit<br />
d’une brasserie locale. Ça a bien le goût de biè<strong>re</strong>.<br />

exude a unique kind of bookish charisma.<br />
“Why do people come he<strong>re</strong>?” asks Matt<br />
Norcross, the sto<strong>re</strong>’s cheerful co-owner, <strong>re</strong>peating<br />
the question, calling out to a customer who<br />
happens to be browsing the shelves nearby. “Mary,<br />
why do people come he<strong>re</strong>?”<br />
“They know you,” says Mary, without blinking.<br />
“You know about what they might like to <strong>re</strong>ad.<br />
And the<strong>re</strong>’s coffee and doughnuts.” Su<strong>re</strong> enough,<br />
Norcross has no sooner pointed a new visitor<br />
toward the doughnut holes than asked about<br />
his <strong>re</strong>ading habits, and procu<strong>re</strong>d two books he<br />
guarantees cannot be put down.<br />
In the summer months, Petoskey becomes a<br />
golfing hot spot, with no fewer than 11 golf courses<br />
in the a<strong>re</strong>a. Mountain bike enthusiasts a<strong>re</strong> drawn<br />
to the hills west of town, whe<strong>re</strong> they bar<strong>re</strong>l down<br />
tunnels of t<strong>re</strong>es. On the waterfront, you can <strong>re</strong>nt a<br />
kayak or paddle board from Banjo Sport, and use it<br />
to explo<strong>re</strong> the bay or one of the inland lakes.<br />
Unless, that is, you p<strong>re</strong>fer chocolate. A few<br />
minutes’ drive from downtown, you’ll find Kilwins<br />
Chocolate Kitchen. Making chocolate and ice c<strong>re</strong>am<br />
as well as other confections, the gourmet company<br />
has 84 sto<strong>re</strong>s across America, right down to Key<br />
West, but all its products a<strong>re</strong> made in Petoskey.<br />
The flagship outlet is part sto<strong>re</strong>, part café and part<br />
factory. You can watch the chocolates being made<br />
by hand through glass walls, or better yet, sign up<br />
for one of the f<strong>re</strong>e tours the company offers between<br />
10 a.m. and 3 p.m. on weekdays. In the café,<br />
Kilwins ice c<strong>re</strong>am is a local summer rite.<br />
Petoskey has its sha<strong>re</strong> of watering holes, and its<br />
newest is worth a visit – if you can find it. Beards<br />
B<strong>re</strong>wery is tucked at the end of a long glassed-in<br />
hallway that extends from the st<strong>re</strong>et. But once<br />
the<strong>re</strong>, you’ll find that this tiny new b<strong>re</strong>wery is a<br />
going concern. “We’<strong>re</strong> one of the smallest in the<br />

« Pourquoi les clients viennent-ils chez nous ? »,<br />
s’interroge Matt Norcross, l’un des propriétai<strong>re</strong>s<br />
enjoués. Il répète la question à l’intention d’une<br />
cliente qui parcourt les rayonnages voisins. « Mary,<br />
pourquoi les gens viennent-ils ici ? »<br />
« Parce qu’ils te connaissent, dit Mary. Tu sais<br />
ce qui est susceptible de leur plai<strong>re</strong> et il y a du café<br />
et des beignes. » Comme pour lui donner raison,<br />
Norcross a tôt fait d’indiquer le comptoir à beignes<br />
à un nouveau venu tout en lui demandant ce qu’il<br />
aime li<strong>re</strong>. En un instant, il lui <strong>re</strong>commande deux<br />
liv<strong>re</strong>s qu’il voudra li<strong>re</strong> d’un trait.<br />
En été, Petoskey devient la Mecque du golf, car<br />
la région ne compte pas moins de onze parcours.<br />
Les amateurs de VTT s’attaquent aux collines à<br />
l’ouest de la ville d’où ils peuvent s’élancer à travers<br />
les arb<strong>re</strong>s. Sur le littoral, il est possible de louer un<br />
kayak ou une planche à bras chez Banjo Sport<br />
pour explo<strong>re</strong>r la baie ou les lacs des environs.<br />

partie du rituel estival local.<br />
Petoskey a plusieurs établissements pour<br />
étancher sa soif et le dernier en date vaut le détour –<br />
si vous parvenez à le dénicher. Beards B<strong>re</strong>wery est<br />
cachée au bout d’un long passage vitré qui part de la<br />
rue. Mais une fois là, vous ver<strong>re</strong>z que cette brasserie<br />
est une ent<strong>re</strong>prise prospè<strong>re</strong>. « Nous sommes l’une<br />

country,” says co-owner Ben Slocum, with a<br />
deg<strong>re</strong>e of pride. Its cur<strong>re</strong>nt digs a<strong>re</strong> so small that<br />
visitors a<strong>re</strong> encouraged to bring their own food,<br />
giving the place a f<strong>re</strong>ewheeling vibe.<br />
Beards b<strong>re</strong>ws two kegs at a time – they’<strong>re</strong><br />
visible in the next room over – and has seven taps<br />
running. Beards neither bottles nor cans – it just<br />
keeps its handcrafted beer on tap at several bars<br />
in the community. It slowly becomes clear that this<br />
is how the Bearded Chicken Club got its name. On<br />
one of the b<strong>re</strong>wery’s walls, a framed newspaper<br />
clipping celebrates the opening of Beards with a<br />
pictu<strong>re</strong> of Slocum and his co-founder. They both<br />
have beards.<br />
A block away, you can grab coffee at the Grand<br />
Traverse Pie Company, which is as American<br />
as its apple pies, to say nothing of its cherry<br />
pies, shepherd’s pies, chicken pot pies and beef<br />
pies. Up the road, Symons General Sto<strong>re</strong> offers<br />
an eye-popping miscellany of high-end jams,<br />
jellies, olive oils, wines, specialty honeys and<br />
Boss Mouse cheese, which turns out to be a<br />
Michigan specialty. “We do so many gift baskets,<br />
it’s ridiculous,” says the young woman behind the<br />
counter. Founded in 1960, Symons is a flagship<br />
sto<strong>re</strong>, but it spawned an even mo<strong>re</strong> <strong>re</strong>fined sister<br />
operation that’s become one of the top tickets in<br />
town. When Chandler Symons, its cur<strong>re</strong>nt owner,<br />
wanted to host wine tastings, he learned that he’d<br />
need a liquor licence. One thing led to another,<br />
and in 1999 he opened Chandler’s, a fine-dining<br />
<strong>re</strong>staurant, in the basement next door.<br />
Chandler’s is a t<strong>re</strong>at and an indulgence. Its<br />
simple menu is given to staples: chicken, rabbit,<br />

des plus petites du pays », dit Ben Slocum, l’un des<br />

qu’on invite le client à ap<strong>porter</strong> sa prop<strong>re</strong> nourritu<strong>re</strong>,<br />

Beards ne brasse que deux fûts à la fois – on peut<br />
les voir dans la salle attenante – et a sept pompes.<br />
Cette brasserie ne met ni en bouteilles ni en boîtes –<br />
on ne peut goûter sa biè<strong>re</strong> artisanale qu’à la pompe<br />
dans les bars du coin. On comp<strong>re</strong>nd alors que<br />
c’est à ce fait que le Bearded Chicken Club doit son<br />
nom. Sur un mur, une coupu<strong>re</strong> de p<strong>re</strong>sse célèb<strong>re</strong><br />
l’ouvertu<strong>re</strong> de Beards – il y a une photo de Slocum<br />
et de son associé. Tous deux portent une barbe.<br />
À deux pas de là, vous pouvez p<strong>re</strong>nd<strong>re</strong> un café<br />
à la Grand Traverse Pie Company qui est aussi<br />
américaine que la tarte aux pommes, sans oublier<br />
la tarte aux cerises, le hachis parmentier, la tourte<br />
au poulet ou la tourte au bœuf. Non loin de là,<br />
Symons General Sto<strong>re</strong> off<strong>re</strong> un choix étourdissant<br />
de confitu<strong>re</strong>s haut de gamme, de gelées, huiles<br />
d’olive, vins, miels et fromage Boss Mouse, qui<br />
est la spécialité du Michigan. « Nous préparons<br />
une quantité ridicule de paniers-cadeaux », dit la<br />
jeune femme à la caisse. Fondé en 1960, Symons<br />
est le magasin principal, mais il a engendré une<br />
ent<strong>re</strong>prise enco<strong>re</strong> plus raffinée qui est l’une des<br />
gloi<strong>re</strong>s de la ville. Lorsque Chandler Symons, le<br />
propriétai<strong>re</strong> actuel, s’est mis en tête d’organiser<br />
des dégustations de vin, il a dû se procu<strong>re</strong>r une<br />
licence pour servir de l’alcool. Tant et si bien qu’en<br />
1999, il a ouvert Chandler’s, un excellent <strong>re</strong>staurant<br />
au sous-sol d’à côté.<br />
Chandler’s est une gâterie. Son menu simple<br />
tourne autour de classiques : poulet, lapin, filet avec<br />

fillet over fingerlings, broccolini, caramelized onions and<br />
wild mushrooms. The appetizers a<strong>re</strong> mo<strong>re</strong> adventurous: the<br />
calamari – which, like the other seafood, is flown in daily – is<br />
served with a cold, spicy seaweed salad and sweet chili sauce.<br />
It’s a small place, this simply adorned, wood-panelled room<br />
with an open kitchen, whe<strong>re</strong> patrons chat with the servers.<br />
“The<strong>re</strong>’s nothing to hide in he<strong>re</strong>,” says Symons. “It’s a very<br />
social dining room – 10 tables shoved into a <strong>re</strong>ally small space.”<br />
So too, Petoskey: a perfect little place jammed with<br />
friendly people, the history they sha<strong>re</strong> with Hemingway and<br />
the railroad that brought him he<strong>re</strong>. Its day in the sun isn’t<br />
nearly over yet.<br />

champignons sauvages. Les entrées sont plus aventu<strong>re</strong>uses :<br />
le calmar qui, comme tous les fruits de mer, est livré frais du<br />
jour, est servi sur une salade d’algues froide épicée avec sauce<br />
au piment doux. La petite salle à la déco simple en lambris<br />
ouv<strong>re</strong> sur la cuisine et les clients parlent avec le personnel.<br />
« Nous n’avons rien à cacher, dit Symons. C’est un lieu très<br />
convivial – dix tables dans un tout petit espace. »<br />
Aussi convivial que Petoskey : un coin tranquille plein de<br />
gens sympathiques, fiers du lien avec Hemingway et du<br />
chemin de fer qui l’a conduit ici. Sa place au soleil ne va pas<br />
disparaît<strong>re</strong> de sitôt.<br />

– home of many artists’ studios – the torque w<strong>re</strong>nches have given<br />
way to triptychs and the oil changes have yielded to oil on canvas, as<br />
owner Daniel Faria, who’s been active in the city’s gallery scene for over<br />
a decade, shows his roster of rising, <strong>re</strong>doubtable and mostly Canadian<br />
artists. Resprays a<strong>re</strong> probably no longer an option. Dans un ent<strong>re</strong>pôt qui<br />
était jadis un atelier de débosselage d’automobiles dans Bloordale Village<br />

Over, Under, Next<br />
Not some kind of power yoga move but the latest<br />
exhibition at the Hirshhorn, Washington’s fo<strong>re</strong>most<br />
museum of modern art, bringing together around<br />
100 examples of collage and assemblage (from<br />
April 18 to September 8). It includes art made<br />
from butterfly wings, glass shards and jigsaw<br />
puzzle pieces, from tiny cut-paper compositions<br />
to room-sized installations, from Picasso and (bricà-)Braque<br />
to Hirst. Il ne s’agit pas des derniers<br />
mouvements de power yoga, mais bien de la<br />

duck and shaved veal tongue, not to mention<br />

and classily mismatched furnitu<strong>re</strong>, he’s su<strong>re</strong>ly<br />
set to clean up. In fact, Le Diplomate is the kind<br />
of place that people become very attaché-d to.<br />

Jade Cutinho is a supervisor for the cafés in Porter’s lounges at Billy<br />
Bishop Toronto City Airport. He<strong>re</strong> she discusses how she keeps the shelves<br />
stocked and the passengers happy. Jade Cutinho est <strong>re</strong>sponsable des cafés<br />
dans les salons Porter de l’aéroport de Billy Bishop à Toronto. Elle explique<br />

I’m <strong>re</strong>sponsible for ordering the food and drink,<br />
scheduling the team that works in the cafés and completing<br />
the paperwork. I’ll also jump in and cover any of the counters<br />
when needed. We have a team of 13 people in the cafés, so it’s<br />
quite a lot of <strong>re</strong>sponsibility. As well as the passenger lounges,<br />
we have an airport employee café in the administrative building.<br />
A typical day at work? My shift sometimes starts at about<br />
5:45 a.m., but usually it begins around 8 a.m. I’ll first walk<br />
around to check the lounges and see if the staff need any kind of<br />
assistance, for example, <strong>re</strong>filling any food and drink items that<br />

we might be getting low on. Then I’ll do the ordering<br />
and any other office work that needs attending to,<br />
while keeping an eye on what’s going on out front.<br />
I usually leave around 5:30 or 6 p.m., generally<br />
keeping to traditional office-type hours.<br />
The lounges and the catering a<strong>re</strong> very popular<br />
with our passengers, because we’<strong>re</strong> offering a<br />
kind of business-class experience. It’s important<br />
to get every detail right. We offer sandwiches and<br />
salads and some cold ent<strong>re</strong>es in the passenger<br />
lounges, plus tea and coffee, along with beer and<br />
<strong>re</strong>d and white wine. The turnover of food and drink<br />
in the lounges is high, so we need to make su<strong>re</strong> that<br />
we’<strong>re</strong> fully stocked at peak times.<br />
We get a lot of feedback from the passengers<br />
about what they want from the lounges.<br />
We’<strong>re</strong> always open to suggestions and new ideas.<br />
If something isn’t working out or doesn’t prove to<br />
be a fast seller, we’ll change it. At the moment, the<br />
salads we’<strong>re</strong> offering a<strong>re</strong> a hit. I think people like<br />
that they’<strong>re</strong> not too big or too small, so they can be<br />
eaten at any time of day. Because people a<strong>re</strong> much<br />
mo<strong>re</strong> health-conscious today, we need to be awa<strong>re</strong><br />
of t<strong>re</strong>nds in food and drink, which means providing<br />
information like calorie counts and carb levels. Our<br />
attention to detail, and the personal service, is what<br />
we pride ourselves on.<br />
I’m originally from the Philippines. I earned a<br />
deg<strong>re</strong>e in business tourism and worked in the hotel<br />
industry in Oman for four years, so I understand the<br />
hospitality industry and what it takes to make people<br />
feel welcome. Then my husband and I moved to<br />
Toronto a couple of years ago, when I was 29. The<br />
weather was a shock at first – from a tropical climate<br />
to one that’s a little, well, chillier. I had to stock up<br />
on hooded sweatshirts. I even miss the humidity<br />
sometimes, particularly when I’m talking to my<br />
pa<strong>re</strong>nts on the phone. I’ll ask them how the weather<br />
is, and they’ll say that it’s too hot. I’ll tell them that<br />
they can’t complain about that. But the<strong>re</strong> a<strong>re</strong> a lot of<br />
opportunities in Canada for someone who wants to<br />
work hard, and my husband and I both felt that, in the<br />
long run, it would be a g<strong>re</strong>at place to raise child<strong>re</strong>n,<br />
with all the opportunities to enjoy the outdoors. My<br />
husband also works as a <strong>re</strong>staurant manager, so<br />
we can give each other advice and encouragement,<br />
which is nice.<br />

attendent des salons. Nous sommes ouverts à<br />
toute suggestion. Si quelque chose ne marche pas,<br />
ou ne se vend pas bien, nous la changeons. En ce<br />
moment, nos salades sont très populai<strong>re</strong>s. Je crois<br />
que les gens les aiment parce qu’elles ne sont ni trop<br />
petites ni trop grosses et ils peuvent les manger à tout<br />
moment de la journée. Comme ils font plus attention<br />
à leur santé de nos jours, nous devons suiv<strong>re</strong> les<br />
tendances en boissons et alimentation. Nous<br />
fournissons donc de l’information sur les calories et<br />
les glucides. Nous sommes fiers de l’attention que<br />

qu’à long terme, c’était un pays idéal pour élever des<br />
enfants, avec tous ces grands espaces à découvrir.<br />
Mon mari est aussi di<strong>re</strong>cteur de <strong>re</strong>staurant et nous<br />
pouvons partager nos expériences et nos conseils.
I was still new to Canada when I got the job he<strong>re</strong>,<br />
and I didn’t yet know much about Porter. I love<br />
that the airport is right in the heart of downtown; the<br />
airport’s location makes it feel like a very local service<br />
for the passengers and employees. My commute is<br />
about an hour and a half – we live in North York – so<br />
my workday can sometimes be quite long. But you<br />
don’t <strong>re</strong>ally mind that when you love your job. What I<br />
like about my job is that it’s very challenging and I’m<br />
always meeting people I can learn from. Porter has<br />
given a lot of opportunities to newcomers like me.<br />
When I’m not working, I like to cook. Even<br />
though I spend all day around food, dealing with<br />
and thinking about it, I still love to cook at home<br />
rather than order takeout. I make all kinds of dishes<br />
– Filipino, curries for my husband, who is Indian, and<br />
Italian. It’s g<strong>re</strong>at that I can channel my inte<strong>re</strong>st in food<br />
into my job. It helps me set the tone for the cafés and<br />
lounges, which we very much want the passengers<br />
to t<strong>re</strong>at as somewhe<strong>re</strong> they can <strong>re</strong>lax and unwind – a<br />
home away from home, if you like.<br />

aussi ma journée semble parfois longue. Mais c’est<br />
moins lourd quand on aime son travail. Ce que<br />
j’aime, c’est <strong>re</strong>lever un défi et je <strong>re</strong>ncont<strong>re</strong> des gens<br />
qui m’app<strong>re</strong>nnent quelque chose. Porter donne<br />
plein de possibilités aux nouveaux comme moi.<br />
Quand je ne travaille pas, j’aime fai<strong>re</strong> la cuisine.<br />
Même si, au travail, je m’occupe de nourritu<strong>re</strong>, à la<br />
maison je préfè<strong>re</strong> cuisiner plutôt que commander des<br />
plats. Je fais toutes sortes de plats : plats philippins,<br />
du curry pour mon mari qui est indien, et des plats<br />
italiens. C’est génial que je puisse utiliser mon intérêt<br />
pour la cuisine dans mon emploi. Cela m’aide à<br />
créer l’ambiance pour les cafés et les salons. Nous<br />
