November is the perfect month to start dreaming about<br />
champagne. December fi zzes anyway, but the murk of early<br />
winter needs all the help it can get. And, much as I love<br />
other, cheaper sparkling wines (England in particular is<br />
getting increasingly clever at these wines), November<br />
demands the comfort of tradition: it has to be champagne.<br />
Most of us stick to a few famous brands and may not<br />
even realise the number of smaller growers using the<br />
region’s three permitted grape varieties (chardonnay,<br />
pinot meunier and pinot noir) who are making really<br />
exciting champagnes. The region grows an awful lot of<br />
grapes on its chalky soils, and non-vintage (the cheapest<br />
kind) plays with the output of different years, so even the<br />
three-varietal limit offers leeway for excellent imbibing.<br />

Novembre est le mois idéal pour penser au champagne :<br />
décembre est un mois pétillant, alors que le début de l’hiver se<br />
traîne. C’est à ce moment que l’appel du champagne léger et<br />
festif est le plus fort chez moi. Et même si j’aime les vins<br />
pétillants moins chers (l’Angleterre fait des progès), novembre<br />
exige le réconfort de la tradition : le champagne s’impose.<br />
Pour la plupart, nous nous limitons à quelques grandes<br />
marques et nous ignorons les nombreux petits viticulteurs qui<br />
cultivent les trois cépages de l’appellation (chardonnay, pinot<br />
meunier et pinot noir) pour produire des champagnes<br />
délicieux. Les sols crayeux champenois produisent beaucoup<br />
de raisin et le non millésimé (moins cher) mélange différentes<br />
années. Par conséquent, les trois cépages n’empêchent pas de<br />
varier les plaisirs.<br />
