男演員獎」的耿天元等。看罷表演,你還可以<br />
參觀有關中國戲曲的展覽,及參與由國內名演<br />
員以普通話主持的講座。<br />
Get a taste of eight different regional styles<br />
of Chinese opera from Beijing all the way to<br />
Zhengzi at the Chinese Opera Festival in Hong<br />
Kong this month. From now until July 21 a series<br />
of spellbinding performances by long-standing<br />
opera troupes – such as the Cantonese Music<br />
and Song Art Troupe and Jinkun Theatre, as<br />
well as renowned actors the likes of Pei Yanling,<br />
Tang Yuenha and Geng Tianyuan – will be<br />
staged at various local theatres. If the shows<br />
make you yearn for more of this traditional<br />
and frequently underappreciated Chinese art<br />
form, be sure to check out the exhibitions and<br />
– if you know Mandarin – talks by maestros and<br />
aficionados alike.<br />

「我從13歲就開始學習粵劇。我的父親<br />
是50、60年代香港著名電影美術廣告設計<br />
師梁君顯,我在三年級時輟學,隨父親到<br />
片場協助佈景美術工作。過了不久,我便<br />
跟大姊在藝林粵劇學院學習粵劇基本功。<br />
自此便展開了我53年的粵劇生涯。<br />
「我一直以來只演生角。演戲曲最困難的<br />
部分是要記熟所有的演出程式、古老排<br />
場,還有唱歌的發聲技巧和感情控制。<br />

戲曲小知識 in Brief<br />
在看戲曲前,不妨先了解一下這個中國傳統藝術。<br />
A beginner’s guide to one of the world’s oldest art forms<br />
歷史<br />
中國戲曲源於唐太宗開辦的「梨園」。起初只<br />
限於皇室戲曲,到了一千年後的清朝開始普<br />
及。時至今日,中國戲曲已發展出30多個劇<br />
種,每個劇種都以起源地的方言表演。<br />
行當<br />
行當是指劇目中的角色。中國戲曲主要有四<br />
個角色:生(男主角)、旦(女主角)、淨(俗稱<br />
「花臉」、性格偏激的男角)、丑(鼻樑上塗白<br />
色方塊、性格滑稽的角色)。而這些行當下,<br />
又會因應角色性格而再細分類。<br />
化妝<br />
中國戲曲的化妝除了是一種藝術外,亦是角色<br />
性格的提示。紅色的化妝代表勇敢和忠誠,黑<br />
色代表公平,黃色代表野心,粉紅色代表成<br />
熟,藍色代表兇猛,綠色代表衝動,而白色則<br />
代表奸詐,因此多用於劇中的惡棍。<br />
故事種類<br />
「文」劇的內容多關於愛情、鬼故,或家傳戶<br />
曉的中國神話故事,動作較少。「武」劇的內<br />
容多關於戰爭,會以武器和盔甲作為道具。<br />
「最值得懷念的是可以追隨新馬師曾、陳錦<br />
棠、梁醒波等前輩學藝。難忘的經驗是1966年<br />
隨新馬師曾、吳君麗、陳錦棠等往星馬登台三<br />
個月,此時陳錦棠意外受傷,新馬師曾鼓勵我<br />
暫代陳錦棠任正印文武生, 演出甚為成功。<br />
「中國戲曲是博大精深的傳統藝術,可以窮一<br />
生精力不斷追求。我從習粵劇中,學會了做人<br />
處事要求認真,不能馬虎苟且,事事親力親<br />
為,也不可斤斤計較眼前利益。<br />
「要當一個好的粵劇演員,首先要有演戲的熱<br />
誠,還要有毅力、恆心和百折不撓的精神。<br />
但也要有心理準備會犧牲時間、精神和金錢。<br />
「中國戲曲現在發展一日千里,百花齊放。<br />
很多地方戲曲都能夠善用最先進的舞台技術,<br />
而且製作嚴謹。不過香港的粵劇依然停滯不<br />
前,重重複複演舊戲,創新不多。要保存這個<br />
中國傳統藝術,必須推陳出新,與時並進,<br />
配合新世代觀眾的要求。<br />
「我不習戲的時候,會看書(歷史、文學、音<br />
樂、美術),也會看其他中國劇種,同時為新<br />
劇及新唱片撰寫新曲。現在學太極拳和氣功。<br />
「假如我不是粵劇演員的話,我應該會是美術<br />
設計員、戲劇導演,或音樂教授。」<br />
“I learnt Cantonese Opera at 13. I quit school<br />
in P3 and helped my father [an advertisement<br />
and art designer] on film sets. Soon after, I<br />
followed my eldest sister and learnt Cantonese<br />
Opera at the Ngai Lam Cantonese Opera<br />
Aademy and began my 53-year career.<br />
“I only play the sheng role. The most difficult<br />
part about Cantonese (or Chinese) Opera is<br />
memorising the script, familiarising myself with<br />
the setting and the way to vocalise the lyrics<br />
with just the right amount of emotion.<br />
“I got to learn from some real virtuosos, like<br />
the late Sun Ma Sze Tsang and Chan Kam Tong.<br />
When we went to perform in Singapore and<br />
Malaysia in 1966, Sun Ma Sze Tsang assigned<br />

History<br />
Chinese opera originated at the Liyuan (Pear<br />
Garden) opera school founded by Tang<br />
Emperor Taizong, becoming a popular form<br />
during the Qing Dynasty. The current 30-plus<br />
forms include Beijing, Shanxi, Shanghai, and<br />
Cantonese, all performed in different dialects.<br />

The primary roles are Sheng (the man), Dan<br />
(the woman), Jing (a painted-face male role)<br />
and Chou (the clown); sub-categories vary by<br />
character traits. Gender swaps are common.<br />
Make up<br />
Chinese opera makeup is an art form and a way<br />
to cue the characters: Red conveys bravery and<br />
loyalty; ambition is yellow; fierceness is blue<br />
impulsiveness is green, an so on. Villains are<br />
tradtionally made up in white.<br />

Wen performances are generally low-key<br />
romances, ghost stories or classic myths, and<br />
wu performances are marked by warfare.<br />

That was when my career began to take off.<br />
“Chinese Opera is rich in historical value<br />
and it’s my goal to keep learning about it as long<br />
as I can. As an actor I’ve learnt to do everything<br />
with earnestness, to give it my best, and that<br />
opportunism only makes you miserable.<br />
“It takes a lot to be a good Cantonese Opera<br />
actor. You need to be passionate about the art<br />
form, and you need to be persevering. When<br />
learning Cantonese Opera, be prepared not to<br />
have much time and money to spare.<br />
“Chinese Opera is now flourishing, with<br />
technology ... However, the quality of Cantonese<br />
Opera needs improving – new, timely scripts<br />
and performances are needed to instill some<br />
positive vibes and preserve this tradition.<br />
“When I’m not practising or acting, I read<br />
about history, literature, music, arts and other<br />
kinds of Chinese Opera. I also compose songs<br />
for new scripts, and lately I’ve picked up Taichi<br />
and Qigong.<br />
“If I weren’t a Cantonese Opera actor, I’d<br />
probably have been an art designer, drama<br />
instructor or music professor.”<br />

From the heFty marine telescopes to the<br />
stripy waiter garb and ancient nautical charts, this<br />
newly opened restaurant from the eclipse group<br />
(behind 1949 the hidden City in Beijing) is all<br />
about the sea. Savvy types may have already<br />
guessed that from the name – Nanhai No.1 is<br />
a Chinese merchant vessel that travelled from<br />
southern China during the Song Dynasty and<br />
was the first ancient ship found on the marine<br />
Silk road of the South China Sea.<br />
the restaurant enjoys a fantastic location:<br />
Up on the 30th floor, with huge windows looking<br />
out over the harbour. And it has fantastic food to boot. Naturally, Nanhai No.1<br />
is a seafood lovers’ paradise – lobster, king prawn, grouper, crab, oyster,<br />
scallop; you name it. the crispy steamed rice served in lobster consommé and<br />
the baked oysters in Sichuan sauce are both absolute winners – and you can<br />
watch your dish being prepared in the glass-windowed kitchen.<br />
eyebar (which is certainly eye-catching) – their outdoor bar deck – is<br />
the place to go for post-dinner cocktails, and will give nearby al fresco<br />
spots some serious competition.

compromise on the quality of food ingredients.<br />
“I became a cook in Cantonese cuisine<br />
because of the sheer variety. There is dim<br />
sum, seafood, soups and stir-fries; Cantonese<br />
cuisine stands out among all of the regional<br />
cuisines in the country.<br />
“The menu of Nanhai No.1 is heavy on<br />
seafood dishes so it’s quite challenging. The<br />
cooking time for seafood dishes has to be precise;<br />

overwhelm the natural flavour of seafood. The<br />
dish that needs the most work is sautéed lobster<br />

work. At home, though, food is cooked with a<br />
weaker heat and lower quality equipment. If I<br />
don’t get the taste I want, I’d simply rather not<br />
cook at all.”

Mention architectural<br />
conservation in Asia, and David Lung’s<br />
name is inevitably the first one to pop up.<br />
Currently deputy dean at the University of<br />
Hong Kong’s Faculty of Architecture, Lung<br />
has been a professor there since 1983. He is a<br />
founding member of UNESCO-ICCROM Asian<br />
Academy for Heritage Management, founding<br />
director of HKU’s Architectural Conservation<br />
master’s programme and worked with Macau<br />
and Kaiping to obtain their respective UNESCO<br />
world heritage status. A trained architect with a<br />
master’s degree from the University of Oregon,<br />
he was previously an associate partner with<br />
Taoho Design Architects in Hong Kong. For his<br />
dedication to the Hong Kong community, Lung<br />
was honoured with a Silver Bauhinia Star by the<br />
Hong Kong SAR Government in 1999.<br />

Lung remembers visiting Mandarin’s House<br />
soon after Macau’s Cultural Affairs Bureau<br />
completed its acquisition of the site more than<br />
10 years ago. “It was a complete derelict,” he<br />
sighs. “The Zheng family had rented out the<br />
estate to hundreds of people over the decades,<br />
and the place was divided and subdivided into<br />
numerous apartments. What wasn’t taken away<br />
to be pawned was abused. The Cultural Affairs<br />
Bureau will need many, many years to track<br />
down the furniture and accessories again. Right<br />
now, it is a beautiful shell.”<br />
Zheng Guanying’s ancestral estate is an<br />
important complement to Macau’s UNESCO<br />
World Heritage status, and well deserves its<br />
MOP43 million restoration price tag. “Zheng<br />
was a notable industrialist – a Shanghai<br />
businessman,” explains Lung. “His house is a<br />
reflection of his status. In Chinese Han culture,<br />
the home is a reflection of an official’s place in<br />
society – even though, politically, it is wrong to<br />
call the place Mandarin’s House since he was<br />
not really a Mandarin. Zheng was also a very<br />
influential and effective scholar, whose writing<br />
inspired Sun Yat Sen and Mao Zedong.” Visitors<br />

Warning in Times of Prosperity, on display in a<br />
rear room within Mandarin’s House.<br />
As Mandarin’s House is situated near<br />
the Inner Harbour, Lung believes that it may<br />
have afforded sea views before urban sprawl<br />
surrounded its stone walls. “I don’t know this for<br />
sure, but the house must have had good feng<br />
shui,” he notes. “Its axis is rotated 90 degrees<br />
from the traditional Chinese south-north<br />
orientation, and its main entry faces east instead<br />
of south. Instead of a vertical layout, the estate<br />
is horizontal. Perhaps this also has to do with the<br />
site’s topography.”<br />
Mandarin’s House is a traditional upper class<br />
Chinese courtyard home. In many Guangdong<br />
estates, a moon gate stands opposite an<br />
inscription that references the moon. A similar<br />

釉面、印著佛教吉祥圖案的通花瓷磚,讓大屋<br />

「在帝制年代,鄭觀應是個思想進步的<br />
人,鄭家大屋便是最佳的明證。」龍炳頤說。<br />

內院坐坐(這裡或許會變成咖啡茶座),一覽<br />

that hint at part of a moon gate’s arc, with the rest<br />
designed to match this architectural interpretation.<br />
Another decorative feature found throughout is<br />
oyster shell in all of the windows. Set within an<br />
ice-splitting abstract pattern, these flat elements<br />
let in subtly diffused sunlight and were frequently<br />
used in traditional sub-tropical Asian residential<br />
construction. Portions of salvaged doors featuring<br />
delicate engravings were touched up with colour<br />
to hint at their prior grandeur. Turquoise glazed<br />
tiles with the Buddhist swastika symbol doubled as<br />
good luck emblems and helped to ventilate fresh<br />
air throughout. Rainwater pipes were fired in short<br />
cylindrical sections, vertically assembled on site<br />
and rendered with lime mortar to resemble stalks<br />
of bamboo.<br />
“Mandarin’s House represents Zheng as a<br />
modern man at a time when China was under<br />
imperial rule,” says Lung. For visitors to fully<br />
appreciate Zheng’s legacy, the Inner Courtyard<br />
near the on-site museum may be converted into<br />
a café, to encourage reflection back to when<br />
Macau was architecturally avant-garde.<br />

So why does it always become such a faff, ponders Andrew Stone.<br />
數碼相機的科技日益進步,相機的價錢亦隨之<br />
越來越便宜。現在,幾乎每個人都能夠擁有一<br />
部數碼相機,成為專業的旅遊照片攝影師。<br />
然而,我們卻偏偏不善用數碼相機的功<br />
能,不是把水平線傾斜,就是把旅遊<br />
景點前留影的傻笑臉孔裁掉一半。<br />
其實,只要跟從幾條簡單的指<br />
引去做,便可以提升你的旅遊<br />
照片質素。<br />
首 先 , 你 穿 的 衣 服 很 重<br />
要。服飾的選擇能令你的照片成為<br />
假期美好的回憶或不堪回顧的證<br />

Digital cameras are getting better and<br />
cheaper all the time, offering to make a coffee<br />
table travel photographer out of any of us. It is<br />
an offer we ignore of course, mocking our new<br />
high-tech toys by continuing to render horizons<br />
crooked and cutting the tops off heads grinning<br />
goofily in front of clichéd monuments.<br />
Following a few simple rules, however,<br />
make all the difference. Apparently.<br />
More than anything the clothes you wear<br />
will define whether your holiday portraits will be<br />
a source of fond memories or of quiet shame.<br />
Avoid fanny packs, muffin tops and any kind of<br />
plaid. Only those raised on the beach (such as<br />
Polynesians and Australians) can safely carry<br />
off shorts or sarongs. Hair is another stylistic<br />
comment Scene<br />
minefield. Mullets, perms and comb-overs will<br />
date you badly.<br />
Hats offer a good solution unless they are<br />
the jester-style ones sported by festival<br />
goers, and Rugby Sevens fans. Such<br />

Remember also that<br />
photography and alcohol<br />
don’t mix. Portraits under the<br />

can help create a visual guide<br />
on your way out to the nightspots.<br />
Just show it to the taxi driver when<br />
you’re too well oiled to remember the<br />
district you’re staying in/your hotel room<br />
number/who you are.<br />
Sober or not, you should never smile for a<br />
digital camera. The agonising delay in taking a<br />
shot will give you the frozen smile of a National<br />
Geographic ice mummy. Far better instead to<br />
pose stiffly and cheerlessly for your portrait<br />
like a corset-wearing Victorian lady or top hat<br />
wearing gent of yore.<br />
Or opt for a mysterious Mona Lisa half<br />
smile or a hand (Oscar Wilde-style) over<br />
your mouth. This lends you an air of mystery,<br />
intriguing viewers and distracting them from<br />
the ugly truth. Were you sharing a risqué joke,<br />
they will ask themselves, or did you just have<br />
chives in your teeth?<br />
Trying to capture everything you see on<br />
your travels isn’t easy but don’t worry. The<br />
best holiday snaps can be studies in miniature.<br />
Close-ups evoke time and place perfectly.<br />
Good examples include ancient tree roots<br />
embracing stone gods in abandoned temples,<br />
the creamy head settling on a pint in a Dublin<br />
pub or the stripes on that souvenir tiger skin rug<br />
you picked up for a small bribe.<br />
And the bonus in those pictures? Nobody<br />
has to look at your mug.<br />

手,但近年柏豪努力練兵,作曲、填詞之餘,<br />
更向舞台劇挑戰,無非是向大家證明自己的實<br />
力。樣貌能吸引大眾目光,但其後的路還是要<br />
靠自己努力經營,25歲的他深明此道,積極備<br />
戰,因為他知道,這一仗,許勝不許敗。<br />
「舞台劇的經驗令我在台上企得更穩。<br />
剛參與12場的舞台劇《我不要被你記住》,<br />
很好玩,亦得益不淺。舞台劇跟拍戲不一樣,<br />
很考即場反應的功夫,而且舞台劇沒有導演叫<br />
action,我們每次去到會場就已經要將心理調<br />
教好,現在我站在台上表演,感覺很實在,<br />
企得更穩了。」<br />
「我很喜歡攝影,尤其愛拍風景,因為<br />
這東西是變幻莫測的,早一秒,遲一秒,拍出<br />
來的效果都不一樣。我覺得攝影就像寫日記,<br />
而相機就像時光機一樣,把現在的一刻記錄下<br />
來。每天我都會帶著一部單鏡反光相機,把身<br />
邊的一切拍下,試過有一次去外國工作,我更<br />
帶備了三部相機,很誇張吧!」<br />
In the eyes of 25-year-old Pakho Chau, it<br />
may not always be a good thing to be blessed<br />
with a pretty face. In showbiz, catching attention<br />
initially is one thing but maintaining a viable<br />
career is quite another. Which is why Chau tries<br />
to dip his finger into as many pies as he can. He<br />
composes music, keys in the lyrics and stars in<br />
theatrical performances, just to show he’s an<br />

“I had a lot of fun and learnt a lot during<br />
my time playing in the stage drama I Don’t<br />
Want to be Remembered by You. Stage drama is<br />
in many ways different from films – there’s no<br />
cue from the director and it really tests your<br />
ability to react instantly. I learnt to arrive at<br />
the theatre well prepared. The experience<br />
made me a more confident person on stage.<br />
“The camera is like a time machine, as it<br />
captures the present moment that soon becomes<br />
the past. I like to take pictures, especially of<br />
scenery as it tends to be fickle and unpredictable.<br />
Shoot a second earlier or later and you get an<br />

07年出道的周柏豪,由模特兒出身,近年晉身創作歌手之列,除了音樂方面的<br />
發展,亦參與過多部電影作品如《愛情萬歲》、《關人7事》的演出。最近他正籌備<br />
第四張個人專輯,將於今年夏天推出。<br />
Fashion model-turned singer Pakho Chau made his debut in 2007 and has<br />
recently turned his attention to singing and songwriting. On top of his music<br />
career, Chau has also been cast in Love Is Elsewhere and Out of Proportion. Chau<br />
is currently recording his fourth album, which will be released this summer.<br />
「當過模特兒的我,對時裝的接受能力<br />
比較大,敢於嘗試不同的東西,但這不代表我<br />
對時裝有特別的見解,我只是比較大膽而已。<br />
我很欣賞美國時裝設計師 Rick Owens,他的設<br />
計在剪裁上非常大膽,今年流行的 harem pants<br />

「現在我每天都會抽時間做運動。我嚮往<br />
簡單輕鬆的生活,有時候工作很忙,壓力大或<br />

下嘛。香港人的步伐很急,有時候我們需要自<br />
我調節,找合適的生活步伐。之前工作太忙,<br />
我忽略了身體健康,現在我每天都會抽時間做<br />
運動,打波、做gym、游水,整個人也變得很<br />
有活力。」<br />
「如果給我一天假期,我會跟媽媽遊車<br />
河。平日我一個人住,媽媽不時都會來我家為<br />
我打掃,又會煲湯給我喝,所以如果給我一天<br />
假期,我會陪家人度過。媽媽跟我一樣愛攝<br />
影,因此我會跟她遊車河,一邊四處拍照,<br />
已經可以很 relax。」<br />
「其實我也有黑暗的一面。出道已經第<br />
四個年頭了,以往幾張大碟都是以陽光男孩<br />
的形象示眾,所以我向唱片公司提議,今次<br />
新碟的造型和攝影,都會找比較熟悉我的人<br />
去做,這樣出來的東西就更能代表我自己。<br />
唱 片 公 司 都 答 應 了 , 因 此 新 碟 的 封 面 設 計<br />
就由我的幾位好友一手包辦,概念是回憶,<br />
大家即管拭目以待吧。」<br />

carry an SLR camera with me; I once brought<br />
three cameras on a business trip overseas.<br />
“I was a fashion model. I’m not a fashion<br />
buff, it’s just that I like to try new and bold styles.<br />
I like clothes with quirky cutting by American<br />
fashion designer Rick Owens, who made harem<br />
pants a big hit.<br />
“I like a simpler, easier way of life. When<br />
work gets to me or I get the blues for whatever<br />
reason, I like to put on an outfit in vibrant colours<br />
to lift my mood. Life in Hong Kong is very hectic,<br />
and there needs to be a work/life balance. I used<br />
to prioritise work over my health, but now I make<br />
time to play basketball, go swimming or go to the<br />
gym. Playing sports is a great source of energy.<br />
“I live on my own, but my mother comes<br />
over and tidy up the place and make soup for me.<br />
If I get a day off, I spend it with my family. I’ll take<br />
my mother for a ride as she likes taking pictures of<br />
people and things as much as I do.<br />
“Four years into my career and I’ve been<br />
profiled as some sort of sunshine boy for each<br />
of my previous albums. But I have my dark<br />
side too, so I suggested to my record company<br />
that we get people who know me inside out to<br />
create the cover of the upcoming album, from<br />
photography to styling. Some of my friends have<br />
already agreed to help out with it; the concept<br />
behind which is memories.”

one of the city’s best restaurants using the finest<br />
silver, it’s all about indulgence.<br />
At the Westin Resort – a fabulous summer<br />
location due to its sea views and access to a<br />
beach – health-conscious guests are also well<br />
catered for with Cucumber Mint Coolers, and<br />
Executive Chef David Halliday says the hotel<br />
will launch a Martini promotion this August in<br />
The Lounge bar.<br />
Over in MGM Macau, Aux Beaux Arts<br />
Sous Chef Elie Khalife is busy preparing for the<br />
restaurant’s French Region Menu in August,<br />
which will feature ingredients from Brittany<br />
(blue lobster), Perigord (duck) and the French<br />
Alps (tome cheese) in different set menus paired<br />
with wine from the same regions.<br />

芝士、新鮮蔬菜和微微帶苦的核桃,對我來說<br />
就是夏天的味道。寶雅座的羊奶芝士暖沙律還<br />
加入了脆煙肉碎,十分美味。」<br />

Joel Khalil,則對澳門的街頭美食特別鍾愛。<br />
「澳門有很多消暑的美味冷盤,如凍豆腐和<br />
麻油醃菜等。天氣熱時,我會選擇較清淡的<br />
餐膳,常常製作couscous小米沙律,加入荷蘭<br />
芹、薄荷葉、檸檬汁和幾滴橄欖油,再配燒羊<br />
扒。另外,我也喜愛炭燒鮮魚伴番茄香菜沙<br />
律。亞洲人往往忽略沙律,但其實沙律在炎熱<br />
的天氣下,能讓你充滿朝氣和為你帶來新的動<br />
力。我最喜歡簡單的沙律,如烤雜菜配橄欖和<br />
羊奶芝士。」<br />
如 果 不 來 一 頓 露 天 午 餐 或 晚 餐 的 話 ,<br />
又怎算得上是夏天?在金麗華酒店的Veranda,<br />
你就能吃到即時烤製的春雞和海鮮串燒,而且<br />

Asked to name his favourite summer<br />
ingredient, Khalife says, “It has to be<br />
Mediterranean fish, as when it arrives fresh to<br />
our kitchen it still has the sea smell … you only<br />
need to close your eyes for a few seconds to feel<br />
the sun, the waves and the fresh air of the south<br />
of France.”<br />
As for his favourite summer dish, he<br />
elaborates, “Warm goat’s cheese salad, with its<br />
strong flavour and contrasting texture of creamy<br />
cheese, crisp green leaves and slightly bitter<br />
walnuts, epitomises that summer feeling for me.<br />
At Aux Beaux Arts, we serve it with crispy bacon<br />
bites. Delicious.”<br />
Macau Ponte 16’s executive chef Joel<br />
Khalil loves the food he can find on the streets<br />
of Macau. “There are some really tasty cold<br />
dishes that are great to eat in summer, from cold<br />
tofu to marinated vegetables with sesame oil.<br />
In hot weather, I look forward to lighter meals<br />
and often make a couscous salad with lots of<br />
parsley, mint and lemon juice with a drizzle of<br />
olive oil and grilled lamb chops. I also love fresh<br />
fish simply grilled on a charcoal barbecue with<br />
tomato and fresh herb salsa. Salads are a little<br />

達40米):馬來西亞的詩巴丹島以多種<br />
類的海洋生物而聞名。那裡的海洋生物數目,<br />

潛水初學者要注意的是,在詩巴丹島潛水也頗<br />
考功夫,所以勸你先到難度較低的地方潛水,<br />
免得嚇壞了,從此不再潛水。<br />
Jonn lU profile<br />
Jonn自1995年已開始潛水,是國際潛水教<br />
練協會(NAUI)認可的普通潛水、技術潛<br />
水及急救指導員。他亦教授自由潛水、<br />
水中求生訓練,及增強水中自信心。<br />
NAUI scuba diving, and first-aid instructor<br />
Jonn Lu has been diving since 1995. He also<br />
teaches freediving, drown-proofing and water<br />
confidence. He sounds off on diving hotspots.<br />
for Scuba diving (limited to 40 metres):<br />
Sipadan, Malaysia, the undisputed mecca of<br />
tropical water diving known for its sheer volume<br />
of marine life. Mong Kok on a Sunday afternoon<br />
is the closest analogy I can think of when it<br />
comes to the variety ... in Sipadan. There is<br />
no other place in Asia with this much. Advice<br />
to new divers: Sipadan is a proverbial dessert<br />
buffet and it can potentially ruin your diving<br />
palate. Work your way through modest starters<br />
and mains first before you dive Sipadan.<br />
02<br />
技術潛水(需攜帶多於一個氧氣筒,<br />

shipwrecks): Coron in the Philippines is home to<br />
several mammoth Second World War wrecks,<br />
most in excess of 100 metres in length. What’s<br />
magical about diving a big wreck is taking<br />
something that we are all familiar with size-wise,<br />
and then having the surreal pleasure of “floating”<br />
down on it, and then “flying” through it.<br />

衣、潛鏡及蛙鞋潛水):宿霧的馬克丹<br />
島以清澈的海水(你能從水面清楚的看到30至<br />
50米深的海底),及往海床徐徐而下的緩坡見<br />
稱。馬克丹島這樣的潛水環境,令潛水夥伴能<br />
互相照應,避免因超出換氣而導致的「淺水黑<br />
視症」。在清澈的水裡,你能潛到30至50米的<br />
深處,並欣賞到海底的活動。<br />
for freediving (apnea diving in just a wet<br />
suit, mask and fins): Mactan in Cebu, is known<br />
for crystal clear waters (you can see the bottom<br />
through 30 to 50-metre-deep water from the<br />
surface) and gentle sloping into the deep blue<br />
abyss. Mactan makes it easy for freediving buddy<br />
pairs to safely monitor each other for episodes<br />
of shallow water blackouts. Clear waters also<br />
mean that one can float face-down in about 30<br />
to 50 metres of water and be able to see the<br />
bottom, and all the marine activity going on.<br />

3 D Comes Home<br />
A yeAr Ago at this time, James Cameron —<br />
director of Avatar — was expounding on the<br />
future of cinema and 3D filmmaking. He also<br />
made the effort to explain a 3D “ecosystem” that<br />
started at the production level and trickled all the<br />
way down to the consumer sitting at home. It<br />
seems Cameron was on to something.<br />
Early in <strong>2010</strong>, at the International Consumer<br />
Electronics Show in Las Vegas, Toshiba, Sony,<br />
LG, Panasonic and a raft of other electronics<br />
behemoths showed off the first generation of 3D<br />
televisions, putting to rest the movies’ boast that<br />
the 3D experience was something you simply<br />
couldn’t get at home. As slow as CD may have<br />
been to overtake vinyl, MP3 and HD television<br />
and broadcasting were quick; expect 3D to move<br />
almost as fast. Faster if they can do something<br />
about the unwieldy glasses that are still part and<br />
parcel of 3D viewing.<br />
WHat’s out tHere rigHt noW<br />
Want to be the first to boast about how you<br />
had 3D TV “way back in ’10?” At the moment<br />
only a handful of manufacturers actually have a<br />
unit for sale, but that’s enough to help you stay<br />
ahead of the curve.<br />
Samsung C7000/8000<br />
This is the model of the moment, the only one<br />
available for pre-order in Hong Kong. Samsung’s<br />
dual-function LED 3D units come 40-, 46- and 55inch<br />
dimensions, and you get two pair of active<br />
shutter glasses thrown in for good measure.<br />
Bonus: Samsung’s companion 3D Blu-ray player<br />
will give you something to watch Avatar on.

actively selling a 3D model yet, but the release<br />
of its 8000 and 9000 LED models is imminent<br />
and the company is prepared with a 3D upgrade<br />
package. This is your best bet if the idea that the<br />
future is now is a little scary.<br />
TCL TD42-F<br />
What was that we said about those annoying<br />
glasses? The oddball of the 3D TV bunch here<br />
is Chinese manufacturer TCL’s TD42-F —<br />
for which you don’t need the goofy glasses.<br />
Currently available only in Mainland China, the<br />
TD42-F uses a lenticular lens that Panasonic is<br />
also rumoured to be working on.<br />

there are too many egos, but if you have a<br />
champion team, they’re all working together.<br />
Sometimes I look at my team and just smile,<br />
because they are definitely the latter. I’ve hired<br />
people who are fun to be around and raise<br />
office energy levels.<br />

I think people are naturally drawn to specialties,<br />
but once a person has succeeded in, say, a sales<br />
role, some companies want to see what else<br />
they can do, and move them over to another<br />
department. But I think you should allow staff to<br />
do what they love doing. If you try and make them<br />
into something they’re not, they probably won’t<br />
perform as well and you lose the dynamic.<br />

Build an environment<br />
tHat’s fun<br />
We have an open plan office so everyone can<br />
talk to each other easily – I don’t have a separate<br />
office – and there’s a rotating social calendar<br />
for the whole team. I don’t like to look at the<br />
clock, and if people have to finish early or see<br />
a doctor, that’s fine. However, I don’t tolerate<br />
bullying, gossip or negative behaviour and if that<br />
happens, it’s eliminated pretty quickly.<br />

operate witH integrity<br />
Have some integrity about what you do<br />
and insist on it in others as well – don’t deal with<br />
people you don’t have confidence in. It’s hard to<br />
make a bad deal good. I believe that good guys<br />
finish first, and what goes around comes around.<br />
My experience of living in Thailand, Hong Kong<br />
and Macau has taught me that building trust is<br />
crucial but I’ve also learned that people aren’t<br />
that different wherever you go.

香港超級賣家李基銓正講述他如何利用eBay<br />
這個網上商貿平台,將自己的電子產品配件生<br />
意轉虧為盈。會後,李先生被一群澳門中小企<br />
代表「重重包圍」,各人急不及待查詢李先生運<br />
用電子商務平台的經驗。可想而知,電子商貿<br />

市出售,但面對急速轉變的市場和愈來愈多的<br />
競爭,李先生發現不少買家已懂得直接找廠家<br />
入貨,令李先生這分銷商生意每況愈下。透過<br />
eBay,李先生為生意找到多一條出路。「eBay<br />
是B2C(企業對消費者)的平台,我們可以直<br />
接將產品賣到用家(end user)的手上,增加邊<br />
際利潤。而且,外國的產品周期比香港長,<br />
例如香港已沒有人用Palm手機,原來在美國仍<br />
有不少用家,因此我們賣的Palm手機配件,<br />
在外國仍然有利可圖。」透過eBay的全球網<br />
絡,令李先生的生意起死回生,最重要的還<br />
是增加流動現金,「電子商貿用的是現金交易<br />

(IPIM) Small and Medium Enterprises (SME)<br />
Service Centre, Stanley Lee, a loyal punter of<br />
eBay Hong Kong, explained how the online<br />
auction website helped drag his electronic<br />
accessories business out of the red. As soon<br />
as the talk ended, Lee was surrounded by<br />
representatives of Macau’s SMEs, all eager<br />
to seek advice on e-commerce. Although<br />
e-commerce in Macau is still at a rudimentary<br />
stage, its potential is palpable.<br />
Lee’s case is a good example of how<br />
e-commerce has the potential to turn things<br />
around for SMEs. Lee is a retailer and<br />
distributor, who sold his Mainland-made<br />
products from a traditional shop at a computer<br />
mall in Hong Kong. He saw his business take<br />
a nosedive as the market changed and an<br />
increasing number of competitors seemed to<br />
spring up overnight. It was through eBay that<br />
Lee figured out a way to save his business.<br />
“EBay is a B2C (business to customer)<br />
portal through which products can be directly<br />
delivered to the end user, so as to increase<br />
the profit margin,” said Lee. “Hong Kong may<br />
have a shorter product cycle, but with eBay, I<br />
can sell the remaining stock overseas, where<br />
products enjoy a longer cycle.”<br />

EBay’s global network has also<br />
enhanced cash liquidity for Lee’s business.<br />
“As transactions are done in cash via PayPal,<br />
there’s less pressure on cash flow, and I don’t<br />
have to worry about the piling up of unwanted/<br />
unclaimed stock.” Naturally, Lee thinks it’s wise<br />
for SMEs to take their market share through<br />
e-commerce. However, a PayPal account<br />
can only be opened in Hong Kong as it’s not<br />
supported in Macau just yet.<br />
Seeing as e-commerce is still a novel<br />
concept to SMEs in Macau, IPIM launched the<br />
e-commerce incentive measures in November<br />
last year to help promote the brands, products<br />
and services of local SMEs. The successful<br />
applicants who use designated services<br />
provided by Eligible E-Commerce Operators,<br />
such as hktdc.com (the Hong Kong Trade and<br />
Development Council portal), Alibaba and<br />
eBay Hong Kong, are entitled a subsidy of up<br />
to 70 percent of relevant expenses (an annual<br />
maximum of MOP20,000).<br />
There are currently 61 applicants vying<br />
for the incentive measures, and among those,<br />
22 applied through the chambers of commerce.<br />
Many of those chambers in turn have become<br />
e-commerce partners, such as the Macao<br />
Chamber of Commerce, Industrial Association<br />
of Macau, the Macau Importers and Exporters<br />

決了存貨過多的問題。」因此他認為中小型廠<br />
商不妨考慮藉由電子商貿來拓展市場。然而,<br />
值得留意的是,現時PayPal還未支援澳門地<br />
區,商家必須到香港才能開設PayPal帳戶。<br />
電子商貿對澳門的中小企來說仍然是個<br />
新概念,有見及此,澳門貿促局於去年11月正<br />
式推出「電子商務鼓勵措施」,藉以協助中小<br />
企利用電子商務推廣自身品牌、商品及服務,<br />
以及開拓更大的市場。成功申請的企業利用<br />
「認可電子商務營運商」如香港貿易發展局貿<br />
發網、阿里巴巴及eBay香港網站推廣業務,<br />
最高可獲資助相關費用的七成,每家企業每年<br />
最高的資助款項是澳門幣二萬元。截至目前為<br />
止,申請此項鼓勵措施的澳門中小企業已有<br />
61間,當中有22間申請企業是由商會轉介。據<br />
知,澳門不少商會亦成為了電子商務支持夥伴<br />
商會,包括澳門中華總商會、澳門廠商會聯合<br />
會、澳門出入口商會、澳門毛織毛紡廠商會、<br />
澳門付貨人協會及澳門中小企業協進會等 。<br />

On top of the financial subsidy, IPIM has<br />
also closed a deal with Alibaba and eBay Hong<br />
Kong to encourage their administrators to hold<br />
regular talks and workshops in order to help<br />
local SMEs understand website maintenance,<br />
upgrade online retail methodologies as well as<br />
offer support services.<br />
Casa de Artesanato Nam Fan Lou, an<br />
artistic fan business, is among the first to have<br />
successfully applied to the incentive programme.<br />
According to owner Monita Chao, Artesanato’s<br />
previous attempted collaboration with Alibaba<br />
China didn’t go down quite so well. “We were<br />
clueless about web operation, and it certainly<br />
didn’t help that our Mandarin wasn’t fluent<br />
enough to communicate with the people at the<br />
Alibaba China site. So naturally, we didn’t give<br />
the portals any more thought.”<br />

方溝通不來,所以我們也沒有花太多時間在這<br />
個平台上。」周玉玲說:「但參加了澳門貿促局<br />
的電子商務推廣鼓勵計劃後,除了得到資助,<br />
可減輕成本外,最重要是阿里巴巴會有專人從<br />
香港定期到澳門提供指導,而且大家也說廣東<br />
話,我們在操作上有任何問題也可以直接查<br />
詢,方便得多。」<br />

But now it’s a different story. “Now with the<br />
incentive measures there aren’t only subsidies to<br />

每個國家都有各自的觀光宣傳標語。新加坡以<br />
「Uniquely Yours」強調獨特的旅遊體驗,<br />
馬來西亞就有「此時此刻,就在馬來西<br />
亞」,當然不得不提新西蘭的「百分<br />
百純淨新西蘭」。宣傳標語寫得好<br />
的話,遊客自然絡繹不絕。這幾年<br />
全球經濟低迷,各國於是在標語的<br />
構思上猛下苦功,以宣傳旅遊業,<br />
並吸引外國的投資。<br />
當然,觀光宣傳標語也有好<br />
壞之分。澳洲旅遊局於2006年就憑<br />
「Where the bloody hell are you?」<br />
而讓全球矚目。不過,由於這宣傳<br />
標語甚具爭議性,於今年已被保守的<br />
「There’s nothing like Australia」取而代<br />
之了。<br />
另一邊廂,獲獎的「感受澳門」宣傳活動<br />
就成功把澳門打造成亞洲主要旅遊熱點,而非<br />
只是香港和中國大陸之間的博彩勝地。雖然,<br />
堂皇華麗的賭場仍然令澳門引人入勝,但澳門<br />
現在面臨的挑戰,是如何把濃厚的歐洲傳統與<br />
東方文化結合,成為招攬遊客的賣點。<br />
那「香港品牌」又怎樣?自稱為「亞洲國<br />
際都會」的香港,於今年三月修改了2001年的<br />
飛龍標誌設計。雖然,這次改革的大前題在於<br />
集合公眾對香港的看法,但大家對製成品的評<br />
語卻是好壞參半。從這次經驗汲取到的教訓,<br />
是你不能討好每一個人。如果你嘗試這樣做的<br />
話,結果將是適得其反或把事情弄得更複雜。<br />
新 的 飛 龍 標 誌 被 加 上 一 堆 設 計 元 素 ,<br />
來代表從民意調查中抽選出來的香港核心價<br />
值,如文明進步、自由開放、安定平穩、機遇<br />
處處等。其實,要在這麼小的圖案裡表達全港<br />
市民對香港的看法,著實並不容易。若我受命<br />
要這麼做的話,我大概會請本地頂尖的設計師<br />
提供一個簡單又貼切的特色,然後挑選最能展<br />
示這城市過人之處的點子。<br />
香港市民在民調中表達了希望香港能成為<br />
一個富創意、包容、作息平衡及可持續發展的<br />
城市。飛龍標誌的藍、綠色絲帶分別代表蔚藍<br />
天空和可持續發展的生態環境,但依我看來,<br />
宣傳技倆必須配合事實。說實在的,如果我們<br />
要把香港推廣為世界級城市,先決條件是要實<br />
現香港市民對這城市的期望。<br />

如何可以在這麼小的<br />
圖案裡表達全港市民對<br />
香港的看法?<br />
How do you sum<br />
up Hong Kong’s<br />
diversity with one<br />
small graphic?<br />
Everybody’s got one. Malaysia is “Truly Asia,”<br />
while Singapore is “Uniquely yours.” New Zealand<br />
is “100% Pure.” Greece? “A masterpiece you can<br />
afford.” There’s nothing like a magic tagline to<br />
keep tourists pouring through immigration. At<br />
least, that seems to be the reasoning behind the<br />
branding frenzy that has developed over recent<br />
years as countries compete for tourism and<br />
investment against a tough economic backdrop.<br />
Some are doing it better than others.<br />
Tourism Australia made global headlines in 2006<br />
when it asked the world, “Where the bloody hell<br />
are you?,” a controversial line that was replaced<br />
this year by the safer, and far less memorable<br />
“There’s nothing like Australia.”<br />
Meanwhile, Macau’s ongoing awardwinning<br />
“Experience Macau” campaign has<br />
gradually helped position the island as a major<br />
Asian destination, as opposed to a mere<br />
gambling stopover for tourists from Hong<br />
Kong and the Mainland. And while the glitz and<br />
glamour of the casinos still form a fundamental<br />
part of the island’s appeal, the challenge Macau<br />
faces now is how to best leverage its rich<br />
European heritage, and preserve that unique<br />
East-meets-West charm that drew visitors<br />
in the first place; from the plazas, churches,<br />
and cobbled streets of the historic centre,<br />
to its museums, temples, tasty Macanese<br />
cuisine and tranquil Chinese gardens.<br />
And what about “Brand Hong<br />
Kong?” In March “Asia’s World City”<br />
underwent a makeover, with the revision<br />
of the 2001 flying dragon logo. Although<br />
huge emphasis was placed on getting<br />
feedback from the public on their vision of Hong<br />
Kong, the final design got mixed reviews.<br />
Perhaps the lesson here is that there’s no<br />
such thing as pleasing everybody; for in<br />
trying to, the result is usually either overdiluted,<br />
or overcomplicated. The dragon logo<br />
is consequently a mindboggling visual laundry<br />
list of key words that popped up in the survey<br />
results as Hong Kong’s attributes: cosmopolitan,<br />
free, secure, connected, dynamic ...<br />
It’s always easy to criticise, but how can<br />
one express Hong Kong’s diversity and the entire<br />
population’s feelings with one small graphic? If<br />
you ask me, you can’t. In fact, if that coveted<br />
brief had fallen into my lap, I’d probably have<br />
challenged Hong Kong’s best designers to come<br />
up with one strong, simple insight, and chosen<br />
the one that best showcases our city’s talent.<br />
I’d listen hard to the “aspirational values”<br />
that the Hong Kong people voiced in the surveys.<br />
After all, we like to network and travel, which<br />
makes us millions of potential global brand<br />
ambassadors. What did we say we cherish, and<br />
see the need for more of? Innovation, creativity,<br />
tolerance, work/life balance, and above<br />
all, sustainability. Among the dragon logo’s<br />
many symbols are the blue and green ribbons,<br />
representing the city’s blue sky and sustainable<br />
environment. As I see it, marketing only<br />
becomes effective when it’s based on reality. If<br />
our goal is to present Hong Kong as a worldclass<br />
destination, surely the first step is to work<br />
on making these “aspirations” come true?
