STARS ARE FINDING more competition<br />

than ever for screen time—cakes,<br />

turkeys and casseroles are ready for<br />

their close-ups, Mr. DeMille.<br />

Before millions of people started<br />

tuning in to watch Top Chef in highdefi<br />

nition, the food used in movies was<br />

allowed to languish on set for hours,<br />

shellacked to a shiny fi nish. The actors<br />

ate as little of it as possible. But as<br />

audiences have grown savvier, food has<br />

food—and those who style it—in the spotlight.<br />

come into focus—and this year it looked<br />

especially luscious.<br />

In cuisine-centric Julie & Julia, Amy<br />

Adams portrays Julie Powell, a New<br />

York City food blogger who cooks her<br />

way through Julia Child’s recipes. Child<br />

is played by Meryl Streep, and in the<br />

spaces between fl ashbacks to Child’s<br />

culinary training in France and scenes<br />

of Powell’s present-day experiment,<br />

feisty lobsters, gooey chocolate ganache<br />

and tender bouef bourguignon take<br />

center stage.<br />

“You have to remember that in this<br />

movie, almost every scene is an eating<br />

scene,” says Susan Spungen, the stylist<br />

who created the dishes, “so it’s not like<br />

the food could be fake in any way, they<br />

had to actually eat it. It really was a<br />

hundred percent real.”<br />

Cuisine became a third star of the<br />

fi lm. Adams, Streep, Stanley Tucci


and Chris Messina devoured plates<br />

of bruschetta, dollops of cheese and<br />

fi stfuls of dessert. The food made the<br />

actors fat (by their own admission),<br />

won raves from critics and rocketed<br />

Spungen to a spot as one of Hollywood’s<br />

hottest gourmet gurus. By the time Julie<br />

& Julia comes out on DVD (December<br />

8), Spungen’s next foodie fl ick, Nancy<br />

Meyers’ It’s Complicated, will be on the<br />

way to cinemas.<br />

While that kind of epicurean<br />

evolution is to be expected in foodcentric<br />

fi lms, adventure epics and<br />

cartoons are looking increasingly<br />

delicious, too. In Harry Potter and<br />

the Half-Blood Prince, for example,<br />

butterbeer overfl ows from the mugs<br />

of Hogwarts students at The Three<br />

Broomsticks tavern, and Mrs. Weasley’s<br />

Christmas cookies come in Hagridworthy<br />

quantities. Whereas the title<br />

characters in Lady and the Tramp once<br />

nuzzled over a simply drawn plate of<br />

pasta, the high-tech animation in fi lms<br />

such as Ratatouille makes soup steam<br />

and sauté pans sizzle. In Disney Pixar’s<br />

Up, even the dogs can cook. The food<br />

revolution has arrived.<br />

“Food in all aspects, whether it’s<br />

advertising or editorial or movies, is<br />

looking more organic than before,”<br />

One great food item can make a<br />

movie memorable. These fi ve treats<br />

reached cult classic status.<br />

says stylist Valerie Aikman-Smith,<br />

who has worked on fi lms such as<br />

Titanic and Oceans 11. If you look at print<br />

advertisements from over a decade ago,<br />

she notes, you rarely see crumbs on a<br />

plate next to a piece of pie. “It almost<br />

looked fake.”<br />

The trend toward crumbly, yummy<br />

realism has made the stylist’s job more<br />

complex. Not only do dishes have to<br />

look natural and homemade, despite<br />

careful planning, but it has to do so take<br />

after take, touch after touch.<br />

The food stylist learns rule No.<br />

1 early: Always have enough. In a<br />

climactic scene in Julie & Julia, Powell<br />

cooks a deboned stuff ed duck in a<br />

shell of pastry, an antiquated recipe<br />

that challenged even Spungen, whose<br />

cooking resume includes her own book<br />

and 12 years as the food director for<br />

Martha Stewart.<br />

Spungen and the fi lm’s other food<br />

prepper, Colin Flynn, deboned more<br />

than 60 ducks and wrapped a third<br />

of them in elaborate pastry, cutting<br />

the dough into shapes that perfectly<br />

mimicked the illustration in Child’s<br />

book. “It’s time-consuming deboning<br />

all the ducks, and it’s extremely greasy<br />

and messy work,” says Spungen. On the<br />

Julie & Julia set, the duck was the diva.<br />

The heart of this story is in<br />

the side dish.<br />

After the arduous prep work, stylists<br />

have to consider how the food will<br />

look midmeal. For Big Night, a fi lm<br />

sometimes called the Italian Babette’s<br />

Feast, stylist Deborah DiSabatino had<br />

to marshall plated entrees that were<br />

half-fi nished. She also cooked between<br />

400 and 500 meatballs and, with<br />

input from the mother of the fi lm’s star<br />

and cocreator, Tucci, created some 40<br />

versions of the timpano, a dome-shaped<br />

layered pasta dish excruciating to<br />

unmold from its pan.<br />

And then there’s the issue of how the<br />

food behaves. When “action” is called,<br />

melted cheese must stretch, Dover sole<br />

must sizzle and, in the case of one of<br />

the less appetizing scenes from Julie &<br />

Julia, aspic must splatter to the fl oor.<br />

Stylists comes equipped with some<br />

tricks—Spungen melted cheese on top<br />

of French onion soup with an electric<br />

paint-remover—but true realism comes<br />

from rushing dishes to the table before<br />

they cool, harden or fall apart.<br />

In situations where the food isn’t<br />

real, it must still behave like it is—and it<br />

still has to look good. For the animators<br />

of Ratatouille, creating pictures of static<br />

meals would have deadened the fi lm.<br />

production designer Harley Jessup<br />

has said. “There are sauces that are<br />

bubbling and running, and there is<br />

steam coming off ; there are vegetables<br />

settling into each other.”<br />

Jessup’s team developed computer<br />

models that allowed them to position<br />

computerized food on plates and<br />

then run a program to simulate how<br />

everything from scallops to souffl és<br />

would slide, jiggle or puff .<br />

Once the food is acting properly, the<br />

performers must act with it, whether<br />

that means pretending to prepare it or<br />

simply digging in. Spungen privately<br />

tutored Adams in knife skills for<br />

Julie & Julia, but where more skill is<br />

required, such as in Ang Lee’s Eat Drink<br />

Man Woman (the slicing and dicing is<br />

virtuosic), the hands of master chefs<br />

have been substituted for actors’.<br />

But that’s not because of any<br />

ambivalence on the part of the stars.<br />

In most cases—or the ones the stylists<br />

will talk about—actors are eager to get<br />

up close and personal with the food.<br />

In one scene from Julie & Julia, Child<br />

practices dicing onions. A yard-high<br />

pile of onion bits and pieces is great<br />

for comic eff ect but emits eye-watering<br />

odors. “We soaked the onions in water<br />

overnight so they wouldn’t be quite so<br />

potent,” says Spungen. “We didn’t want<br />

Meryl to cry.”<br />

Little did Spungen know, Streep<br />

wanted to feel the eff ects of her<br />

vegetable partner. “Then she asked for<br />

some real onions, because I guess she’s<br />

a method actress, and she wanted the<br />

tears,” says Spungen. “So we gave her a<br />

few that had not been soaked.”<br />

In one of Aikman-Smith’s projects,<br />

2005’s The Family Stone, Sarah Jessica<br />

Parker’s character accidentally douses<br />

herself and some of her future in-laws<br />

with an eggy breakfast casserole.<br />

Tasty chocolate treats steal the<br />

show in a few fi lms playing this<br />

month. Can you spot them all?<br />

“It was the real deal,” says Aikman-<br />

Smith of the casserole batter, “and it<br />

was heavy.” Luckily, the star didn’t<br />

seem to mind the mess. “Sarah Jessica<br />

Parker is a real, working actress, and<br />

she’s very happy to just get on with<br />

things.”<br />

Those parts—seeing their work<br />

spilled, dropped or mangled—aren’t<br />

always easy for the stylists, though.<br />

In Julie & Julia, Chris Messina tears<br />

into a chocolate cake—literally, with<br />

his hands. “It didn’t bother me in the<br />

end,” says Spungen, “but when we were<br />

shooting it, I wasn’t thrilled to see them<br />

destroying the cake.”<br />

When the ingredients come together<br />

just right, good food excites audiences.<br />

After all, it is perhaps the one visual<br />

element we can each recognize, smell,<br />

taste and crave. Harry Potter’s shepherd’s<br />

pie, Yorkshire pudding, custard tart,<br />

jam doughnuts, kippers, crumpets and<br />

Cornish pasties are enough to raise<br />

cholesterol by a cauldron, but they also<br />

have the eff ect of making the wizarding<br />

world seem familiar and cozy.<br />

Comestible fi lms such as Big Night,<br />

Babette’s Feast and Eat Drink Man Woman<br />

have inspired ambitious viewers<br />

recreate the menus. After Julie & Julia<br />

opened, Spungen received a picture of a<br />

friend’s 11-year-old grandson standing<br />

by the stove. He had been so enchanted<br />

by the movie’s delicious depictions<br />

that he went home and replicated the<br />

bouef bourguignon. Asked to name<br />

the accolades she received for the fi lm,<br />

Spungen lists this one fi rst. “It was so<br />

cute,” she says.
