Melbourne’s culinary culture is<br />

on show this month, as its<br />

annual food and wine festival takes<br />

off. Here’s your chance to enjoy<br />

tastings, classes and markets all over<br />

the city and elsewhere in Victoria.<br />

This year’s happenings revolve<br />

around the theme “Earth”, and a<br />

desire to return to the source of all<br />

things delicious and good for the<br />

soul. Events include the Bank of<br />

Melbourne World’s Longest Lunch,<br />

the festival’s opening banquet in<br />

Fitzroy Gardens, where guests<br />

will savour local produce from a<br />

three-course menu while seated at a<br />

Melbourne’s week-long<br />

haute couture pow-wow is<br />

on this month. Executive<br />

producer Geraldine Frater<br />

walks us down the runway<br />

Attention to detail is a<br />

must in the fashion scene,<br />

says L’Oréal Melbourne Fashion<br />

Festival head honcho Geraldine<br />

Frater. For her team, a week’s<br />

work includes booking<br />

entertainment, casting models,<br />

appointing and working with<br />

stylists, overseeing hair and<br />

make-up themes, and liaising<br />

with design, creative and<br />

technical teams.<br />

“We rehearse the show and<br />

lighting concepts to the music,<br />

cue the models and control<br />

all that happens during the<br />

show and in the venue,” says<br />

Frater. “Shows can happen up<br />

to six times a day if you include<br />

rehearsals.”<br />

With well-respected and cult<br />

designers such as Karen Walker<br />

and Alice McCall carting their<br />

collections to the event, one of<br />

the challenges for Frater’s team<br />

is to keep track of the wardrobes.<br />

“We manage thousands of<br />

items, such as clothes, shoes<br />

and accessories during the<br />

week,” says Frater. “It’s always<br />

a logistical challenge to ensure<br />

each garment is where it needs<br />

to be and allocated to the right<br />

model on time, every time.”<br />

Seeing the pieces lock into<br />

place, however, makes the frenzy<br />

worth it. “It’s extremely rewarding<br />

knowing all the hard work has<br />

paid off when the lights, music,<br />

models and outfits happen as<br />

planned,” says Frater.<br />

working in film – both things that<br />

Australia’s Taiwanese food explosion will<br />

delight your tastebuds<br />

Taiwanese food has mostly<br />

remained under the radar<br />

in Australia – save for people’s<br />

growing taste for bubble tea and<br />

xiao long bao (dumplings) – but that<br />

won’t be the case for long.<br />

Australia’s proximity to Asia also<br />

means several Taiwanese eateries<br />

already exist in its urban areas.<br />

Brisbane contains the country’s<br />

largest Taiwanese population, a<br />

demographic well represented<br />

by the healthy roster of classic<br />

Taiwanese restaurants in Sunnybank<br />

– from the well-regarded Glamorous<br />

Wok to Yang’s, Half Time, Kingsfood<br />

Chinese and others.<br />

However, the emergence of<br />

contemporary Taiwanese food is<br />

best exemplified by the country’s<br />

two biggest cities. The phenomenon<br />

can be seen in action at Sydney’s<br />

Bao Dao and Melbourne’s<br />

Wonderbao, but one of the more<br />

notable openings has been Food<br />

Republik in Melbourne’s Asiandominated<br />

suburb of Box Hill,<br />

which is modelled after an old-style<br />

Taiwan village and features<br />

night-market décor<br />

with hawker stands.<br />

“It’s unlike<br />

anywhere else in<br />

Melbourne,” says<br />

proprietor Louis<br />

Kuo, who also<br />

owns the popular<br />

Taiwan Café in the<br />

CBD and the Dessert<br />

Story chain. Signature<br />

Food Republik dishes include<br />

Taiwanese beef noodles, gua bao<br />

(pork belly buns), and the country’s<br />

famed fried chicken, encrusted in a<br />

thin deep-fried batter with a five-spice<br />

powder rub and potato-starch crumb.<br />

So what exactly is Taiwanese<br />

food? “Taiwanese food isn’t so<br />

lightness, she says,<br />

stems from Taiwan’s<br />

quality produce, which<br />

doesn’t require the<br />

heavier spicing of<br />

the mainland.<br />

Food Republik’s Kuo adds<br />

that Taiwanese food also tends to<br />

offer a salty and sweet combination,<br />

and often relies on five-spice powder<br />

Move over ricotta hotcakes – shakshuka is Australia’s rising<br />

star of café breakfasts. The dish – eggs poached in a spicy<br />

tomato sauce – is one of Israel’s national dishes.<br />

“The flavours are quite beautiful,” says Israeli chef Michael<br />

Rantissi of the shakshuka he serves as a signature at his new<br />

Kepos Street Kitchen in Redfern. “It’s a beautiful substitute for<br />

poached eggs.”<br />

Variations abound, from those with feta or yoghurt to<br />

Moroccan-style with merguez sausage.<br />

Variations on this popular appetiser<br />

can be found all over Indonesia. Here’s<br />

one with a Balinese twist<br />

ingredients<br />

Serves 4–6 people<br />

Allow 150g of vegetables per person<br />

Water spinach, beans, snow peas, broccoli,<br />

cauliflower, salad leaves, bean sprouts,<br />

fried tempe or tofu, hard-boiled egg, krupuk<br />

udang (prawn crackers) and fried shallots.<br />

Peanut sauce<br />

½ tsp shrimp paste (roasted)<br />

4 cloves garlic<br />

1 red chilli (remove seeds, roughly<br />

chopped)<br />

2 small red chillies (roughly<br />

chopped)<br />

2 kaffir lime leaves (shredded)<br />

2–3 tbsp fried shallots<br />

1 tbsp grated palm sugar<br />

1 tbsp kecap manis (sweet<br />

dark sauce)<br />

¼ medium tomato<br />

150g peanuts (roasted)<br />

3 tbsp water<br />

2 tsp lime juice (optional)<br />

sea salt<br />

method<br />

1 Place the shrimp paste, garlic, chillies, lime leaves,<br />

fried shallots, palm sugar and kecap manis in a food<br />

processor and blitz until smooth. Add a splash of<br />

water to get the mixture moving if needed. Add the<br />

tomato, peanuts, water, lime juice and salt, and blend<br />

to form a thick sauce (add more water if necessary).<br />

2 Blanch or steam the vegetables. Cut them into<br />

bite-size pieces; arrange them on a platter.<br />

3 To serve, pour the peanut sauce over the vegetables<br />

and garnish with the krupuk udang and fried shallots.<br />

It’s been 38 years since the dreaded<br />

“da na, da na” tune hit our screens,<br />

but the fear of Steven Spielberg’s<br />

film Jaws has never left me.<br />

So what better way to face my<br />

phobias than head on? I head out for<br />

a cage dive in Port Lincoln, South<br />

Australia. After a 5.45am wake-up<br />

call, and a three-hour cruise south off<br />

the mainland, I’m floating in the sea<br />

near the Neptune Islands, the Great<br />

White Shark capital of Australia.<br />

Already, a 4m-long beast is circling<br />

the boat. My nerves are peaking, yet<br />

surprisingly, so is my excitement. I<br />

am so close to the most feared fish in<br />

the world, yet I can’t wait to get the<br />

wetsuit on and jump into the cage.<br />

There is not one, but four great<br />

whites in the water with me, each up<br />

to 5m long. I’m amazed that they are<br />

so graceful in the water – it’s almost<br />

calming. That is, until someone<br />

on the boat above me throws bait<br />

into the water. Now, it’s all about<br />

the attack. Their speed, power and<br />

agility are incredible to watch.<br />

After a mesmerising 45 minutes<br />

in the cage, my time is up. I’m not<br />

sure I’d be thrilled to see a great<br />

white without a safety cage, but I do<br />

recommend this dive to everyone –<br />

even scaredy-cats like me.<br />

hang your laundry off, a febrile wit<br />

and media ubiquity across television,<br />

radio, podcasts and standup, he’d be<br />

entitled to a rest. Were he so inclined,<br />

he might shill everything from<br />

motors to moisturiser, then pack<br />

out the odd 3,000-seat venue once a<br />

month when he felt like it. He could,<br />

but he won’t.<br />

Instead, the 39-year-old comedian<br />

has encoded into his DNA the work<br />

ethic of the dairy farm where he<br />

grew up in the Gippsland region of<br />

» “Play to as wide a variety of<br />

audiences as possible. there will<br />

always be those who get you. Find<br />

the ones who don’t and learn how to<br />

Victoria. Where many comics can<br />

squeeze an entire career out of 50<br />

solid minutes of material, Anderson<br />

has created a new hour-long show<br />

every year since 1997. It’s a work rate<br />

that borders on the OCD-esque, and<br />

becomes all the more staggering<br />

when you consider that Anderson<br />

is also host of ABC TV’s Gruen<br />

franchise, runs the TOFOP podcast<br />

and does more tweeting than a<br />

hatchling nursery.<br />

His current live show, GoodWil,<br />

is his 18th solo offering at the<br />

Melbourne International Comedy<br />

Festival. “I wish I could tell you<br />

what it’s about,” says Anderson,<br />

“but it turns out that the first week<br />

is always different from the end<br />

product. It evolves, and all I’m<br />

aiming to produce is something<br />

better and more interesting than the<br />

last one.”<br />

his anger. He bays at hypocrisy,<br />

keens at double standards and will<br />

return to these subjects as long as<br />

they make some sections of society<br />

squirm with discomfort. “I don’t<br />

have the philosophy that subject<br />

matter is like an Etch-A-Sketch<br />

which you shake clean at the end<br />

of a certain show,” he says. “I will<br />

talk about gay marriage until it is<br />

no longer an issue. I will talk about<br />

the fact that for me to be able to buy<br />

a shiny new Apple laptop for a few<br />

hundred dollars means someone<br />

along the line is getting screwed.<br />

None of us is pure, and this is a<br />

subject that I’m passionate about<br />

exploring on stage.”<br />

But that’s only what the audience<br />

sees. The true measure of many a<br />

performer’s character is whether<br />

their colleagues and audiences<br />

feel the same way about them. In<br />

comedy circles, Anderson is the<br />

guy who will forfeit his fee when<br />

a festival goes bust so that other<br />

performers can afford plane tickets<br />

home. The guy who will do a spot<br />

at your charity night. The guy who<br />

will take a call from an acquaintance<br />

whose stage confidence is waning.<br />

The guy who will launch your<br />

book in exchange for a beer or two<br />

afterwards. The guy who would<br />

be rather uncomfortable with the<br />

preceding four sentences.<br />

Although a new series of the<br />

advertising debate show Gruen<br />

Planet is yet to be finalised for <strong>2013</strong>,<br />

Anderson has never been tempted to<br />

do a Russell Brand and try his hand<br />

at acting. “It doesn’t really interest<br />

me,” he says. “Acting is about trying<br />

your best to be another person,<br />

whereas standup is about being as<br />

honest about yourself as possible,<br />

being the most ‘me’ I can be.”<br />

GoodWil will no doubt whet<br />

the appetite of his myriad fans<br />

on Australia’s festival circuit, but<br />

Anderson is also touring parts of<br />

the United States where his name<br />

and reputation mean little. “I know<br />

there will be nights where it will<br />

to see your face as a standup. I<br />

didn’t know what to be afraid of, so<br />

it went well.”<br />

The price that many comics pay<br />

for mainstream success is selfcensorship.<br />

his life. For his standup shows, he<br />

chooses rooms that hold hundreds<br />

rather than thousands, and he works<br />

them five nights a week before<br />

moving to the next city. The result<br />

is small scale, sweaty and close up.<br />

The audience feels like they get to<br />

know him well, and Anderson feels<br />

It was a leap of faith, but it had to<br />

be done: in November 2007 Camilla<br />

Franks decided to move her business<br />

– creating lusciously flowing,<br />

vibrantly coloured kaftans – from her<br />

apartment to a store on Bondi Beach.<br />

“After the launch of the store,<br />

every piece had sold and it was so<br />

humbling for me to find there really<br />

was a demand for my designs,”<br />

she says, reflecting on what she<br />

considers her big break. Since then<br />

the Camilla designs have taken the<br />

world by storm.<br />

“I’m so excited to be bringing<br />

some Camilla love to Melbourne,”<br />

she says of participating in<br />

LMFF. “It is appealing because<br />

it’s consumer based, but has the<br />

he studied fashion at RMIT.<br />

“Then, as now, music and fashion<br />

went together,” reflects milliner<br />

Richard Nylon. “So I became a variety<br />

of goth I called ‘glamour goth’. It was<br />

goth, but with well-applied make-up<br />

and no raggy clothes.”<br />

During LMFF he’ll be working<br />

with Gwendolynne Burkin, whom<br />

he met on her 22nd birthday – the<br />

pair have collaborated ever since.<br />

“We have a similar aesthetic when it<br />

comes to eras that we are fond of and<br />

fashion looks we like,” he explains.<br />

Crowded House, Kate Sylvester is<br />

a Kiwi Australians like to claim as<br />

one of their own. Since the launch of<br />

her first collection in 1993, her brand<br />

of witty, feminine, sophisticated<br />

local catwalks and closets.<br />

Taking inspiration from books,<br />

art and music, she has a unique<br />

each one is a story,” Kate explains.<br />

There’s a sense of anticipation<br />

when you join a queue – one<br />

that’s likely to be paired<br />

with a little frustration and a side<br />

of impatience. It’s a feeling I know<br />

well, but as I pull my car into the<br />

line-up for the ferry from Kettering<br />

to Bruny Island, on Tasmania’s<br />

south-east coast, I find myself<br />

enjoying the wait.<br />

I leave my car and walk over to<br />

the nearby Mermaid Café for a<br />

coffee and stand by the window<br />

looking out over South Haven and<br />

Oyster Cove Marinas. The calm<br />

waters are packed with yachts and<br />

fishing boats of all sizes.<br />

The Mirambeena Ferry arrives,<br />

and one by one the cars roll on<br />

board and we motor away from<br />

Kettering. It takes 20 minutes to<br />

reach Bruny Island, a place loved<br />

for its unspoilt beaches, abundant<br />

wildlife, towering sea cliffs, remote<br />

feel and, more recently, its diverse<br />

sustainable produce.<br />

Bruny Islanders have long<br />

trodden a do-it-yourself path to<br />

foodie success amid a magnificent<br />

setting. Locally grown produce<br />

flourishes here due to a blend of<br />

local passion and ideal growing<br />

conditions, and my plan is to taste<br />

a little of the island in each meal<br />

during my weekend stay.<br />

It’s nearing lunchtime as I walk inside<br />

the beautiful stone building with a<br />

wide veranda overlooking serene<br />

Sykes Cove. I eagerly study the labels<br />

of chutneys, preserves and pastes<br />

before perusing the fridge stocked<br />

with smoked goods: I sample smoked<br />

trout, wallaby and leatherwood<br />

duck, and purchase hot smoked<br />

Atlantic salmon.<br />

Fifteen minutes later, I park the<br />

car and stroll down the drive to the<br />

Bruny Island Cheese Company.<br />

My cheese knowledge amounts to<br />

knowing what I like, but even to<br />

an untrained palate their range of<br />

cheese is distinctive. I walk away<br />

with wedges of toma (hard, naturalrind<br />

cow cheese) and raw milk C2<br />

(hard, cooked curd), and a loaf of<br />

organic wood-fired sourdough bread.<br />

Moments down the road, I reach a<br />

narrow isthmus called The Neck, a<br />

stretch of land that separates north<br />

and south Bruny. Stopping at the<br />

Neck Game Reserve I climb the<br />

timber steps to the top of a sand<br />

hummock. I’m rewarded with 360-<br />

degree views of the beach, bush and<br />

sea. At dusk, fairy penguins make<br />

their way up the beach to settle<br />

noisily into their burrows in<br />

the dunes.<br />

I set off for the Bruny Island Berry<br />

Farm, which is about half an hour’s<br />

drive away. On arriving I grab a<br />

bucket and fill it to overflowing with<br />

plump fresh strawberries, plucked<br />

straight from the low-lying bushes.<br />

Later that evening, the hot<br />

smoked salmon I bought at BISH<br />

plays a fine leading role in a light,<br />

Asian-style salad. The meal is<br />

complemented by an unwooded<br />

local chardonnay I picked up<br />

from the vineyard at Bruny Island<br />

Premium Wines.<br />

Next morning, I drive out to Cape<br />

Bruny Lighthouse, set high on a cliff<br />

top on the southernmost tip of the<br />

island. The views are spectacular:<br />

looking behind me, I take in the<br />

rolling green hills, the historic<br />

lighthouse keeper’s cottages and<br />

a curved sweep of beach at<br />

Cloudy Bay.<br />

Back on Bruny Island’s Main<br />

Road, I stop at an oyster caravan at<br />

Great Bay, with the cheeky name<br />

Get Shucked. I buy three dozen<br />

oysters – $12 for a dozen. The first<br />

of the oysters disappears quickly,<br />

leaving me feeling satisfied and<br />

fortunate to have such delectable<br />

treats literally at my fingertips.<br />

ohani was still in primary<br />

school when her parents<br />

arranged for her future<br />

marriage. When she turned 16,<br />

Rohani’s parents asked her whether<br />

she would like to leave school and<br />

marry her fiancé.<br />

Early marriages are common in<br />

many Indonesian communities,<br />

including in the city of Surabaya in<br />

East Java. The practice is even more<br />

common among poor families, who<br />

may view early marriage as a way to<br />

ease the financial stress of providing<br />

for their teenage children.<br />

Unfortunately, because people<br />

who get married at a young age<br />

often haven’t finished school, they<br />

commonly end up in lower-paid<br />

jobs. The cycle of poverty means<br />

that the next generation of children<br />

may also be married young.<br />

Since 2009, World Vision has<br />

been helping young people in<br />

Surabaya realise their potential for a<br />

brighter future. With the support of<br />

StarKids, World Vision is working<br />

with all levels of the community<br />

– from children and their parents<br />

through to government – to help<br />

ensure that children are given every<br />

opportunity to thrive in life.<br />

“Many teenagers have decided to<br />

continue their education through<br />

to university,” says project leader<br />

Nunus. “Others have decided to<br />

work in order to save for their<br />

university education. Their college<br />

dreams are still alive,” she adds.<br />

Fortunately for Rohani, her<br />

parents did not pressure her<br />

to marry. She chose instead to<br />

continue her studies and in 2012<br />

graduated from high school. She’s<br />

now studying to become a midwife,<br />

and hopes one day to become a<br />

doctor – a goal within reach for a<br />

girl who dares to dream big.<br />

height a<br />

can fly?<br />

A: The maximum<br />

height that our aircraft fly at<br />

cruising altitude is approximately<br />

12,000m above sea level. This height<br />

is determined by several factors<br />

including the weight of the aircraft,<br />

as the heavier the aircraft is, the<br />

lower you have to fly. Atmospheric<br />

conditions, such as temperature<br />

and wind, also affect the height. The<br />

hotter it is, the lower you have to fly.<br />

You also want to fly at an altitude<br />

that avoids headwinds, which slow<br />

the aircraft down.<br />

Air traffic control requirements<br />

mean that if a number of aircraft<br />

are flying along the same route,<br />

not everyone can cruise at the<br />

same altitude. The most important<br />

consideration for determining our<br />

cruising altitude is fuel usage. For<br />

jet aircraft, we can minimise our fuel<br />

burn by flying as high as we can. Jet<br />

aircraft can fly faster in the thinner<br />

and colder air at high altitude.<br />

Ubud is regarded as the cultural centre<br />

The new beachwalk has a fantastic<br />

array of new and modern shops,<br />

prices. The lovely little boutique shops<br />

around The Villas, especially on Jalan<br />

Bali celebrates Nyepi, which marks the<br />

beginning of the Hindu new year. The<br />

night before Nyepi, villagers frighten<br />

away evil spirits by banging drums,<br />

gongs, pots and sometimes setting<br />

off fireworks. Nyepi itself is a day<br />

of silence and meditation. It is said<br />

that the evil spirits are tricked into<br />

believing that Bali is abandoned and<br />

therefore go back to the underworld,<br />

leaving the island in peace for another<br />

One of my favourite places is<br />

Kangaroo Point, along the Brisbane<br />

River in the heart of the city. It’s a<br />

great venue for rock climbing, running<br />

One of the newest restaurants in town<br />

is Luke Nguyen’s Fat Noodle at the<br />

Treasury Casino. My favourite dish is<br />

the Fat Pho Noodles, made with the<br />

chef’s signature beef broth, thinly sliced<br />

Angus sirloin, and fresh basil and chilli.<br />

Best way to get around<br />

Two wheels is the best way to get<br />

around Brisbane by far. We have a<br />

great network of cycle paths, covering<br />

over 1,200 km, which can take you<br />

around the inner city and beyond.<br />

There’s also a city-cycle hire scheme,<br />

so you don’t even need your own bike.<br />

Bridge to Brisbane is the city’s<br />

largest running event. Everyone who<br />

sixth in Australia and first in New Zealand. He’ll next hit the tarmac<br />

in round four of the <strong>2013</strong> New Zealand Superbike Championships at<br />

Hampton Downs Raceway in Waikato on 16 & 17 March<br />

Q: WHAT WAS YOUR FIRST<br />

OVERSEAS TRIP?<br />

A: I was eight years old and we went<br />

to New Zealand. All I can remember<br />

was the snow and glow-worms.<br />

Cardrona Valley Road. The second is<br />

from Christchurch to Akaroa.<br />

A: Phuket is the best place in the<br />

world to relax and recharge, I would<br />
