In terms <strong>of</strong> vitamin A content, the final fortified product showed a vitamin A content that ranged<br />

from 3.01 – 3.07 µg RE/g peanut butter or an average recovery <strong>of</strong> 3.03 µg RE/g peanut butter. Since the<br />

value obtained did not meet the minimum target fortification level, it was recommended to add an<br />

overage to give allowance for losses incurred during processing.<br />

1 Expected level <strong>of</strong> vitamin A in the final fortified product was 3.59 µg RE/g peanut butter. This was computed<br />

based on a premix with a vitamin A content <strong>of</strong> 175.46 µg RE/g peanut butter.<br />

Trials at the Industry Collaborator’s Plant<br />

Experiment 3: Determination <strong>of</strong> the suitability <strong>of</strong> the two different types <strong>of</strong> mixers <strong>of</strong> the industry<br />

collaborator, for the commercial preparation <strong>of</strong> premix<br />

Results <strong>of</strong> vitamin A analysis (Table 2.5) in premix prepared using the industry collaborator’s<br />

horizontal mixer indicated high vitamin A recoveries that ranged from an average <strong>of</strong> 86.2% to 96.9%. In<br />

terms <strong>of</strong> dispersion, replicate samples taken from the second and third trials showed that there was<br />

uniform dispersion <strong>of</strong> the vitamin A in the premix as indicated by the low percentage variabilities (5.58%<br />

and 2.72%).<br />

Likewise, premix prepared using the industry collaborator’s Hobart Planetary mixer indicated<br />

high vitamin A recoveries in the peanut butter premix ranging from an average <strong>of</strong> 89.5% to 102.6%<br />

(Table 2.6). Percentage variabilities were relatively low (2.58, 4.92% and 9.46%), indicating that the<br />

vitamin A palmitate added was uniformly distributed in the premix. Based on the above findings, both<br />

the Horizontal mixer and Hobart Planetary mixer <strong>of</strong> the industry collaborator were found suitable for the<br />

preparation <strong>of</strong> premix.<br />
