transferred to a Hobart vertical mixer model HCM 300 (Hobart Corporation, Troy, Ohio, U.S.A.) and<br />

mixed for a total <strong>of</strong> 10 min stopping every 5 min interval to allow retrieval <strong>of</strong> adhering peanut butter from<br />

the sides <strong>of</strong> the mixer. <strong>The</strong> resulting premix was manually filled into plastic containers, sealed and stored<br />

at refrigerated conditions until its intended use. <strong>The</strong> schematic diagram <strong>of</strong> the procedure for the<br />

laboratory preparation <strong>of</strong> peanut butter premix at FDC is shown in Fig. 2.4. Plain peanut butter used in<br />

this study was prepared following the procedure <strong>of</strong> Galvez et al. (2000) described in Fig. 2.1.<br />

Pre-heat vitamin A palmitate in a water bath<br />

maintained at 40 o C for 15 min<br />

Weigh required amounts <strong>of</strong> vitamin A palmitate<br />

and plain peanut butter in separate containers<br />

Add pre-weighed vitamin A palmitate to the center<br />

<strong>of</strong> pre-weighed plain peanut butter<br />

Manually mix the vitamin A palmitate to plain peanut butter<br />

with a plastic spatula until no trace <strong>of</strong> the fortificant<br />

is visible from the surface <strong>of</strong> the peanut butter mixture<br />

Transfer the vitamin A palmitate-peanut butter mixture to<br />

a Hobart vertical mixer Model HCM 300<br />

Mix for 5 min<br />

Scrape <strong>of</strong>f adhering peanut butter from the sides<br />

<strong>of</strong> the mixer and add back to the mixture<br />

Mix for another 5 min<br />

Manually fill the premix in plastic containers<br />

Seal containers and store in refrigerated conditions<br />

Laboratory Procedure for the Preparation <strong>of</strong> Fortified Peanut Butter at FDC<br />

Fortified peanut butter was prepared by adding premix to the center <strong>of</strong> plain peanut butter in<br />

amounts that varied depending on the actual vitamin A content <strong>of</strong> the peanut butter premix used. <strong>The</strong><br />

minimum target fortification level <strong>of</strong> the final fortified product was 4.38 µg RE/g peanut butter. <strong>The</strong><br />

premix and plain peanut butter were mixed manually with a plastic spatula until no trace <strong>of</strong> the premix<br />

was visible at the surface <strong>of</strong> the mixture. <strong>The</strong> premix-plain peanut butter mixture was then transferred to<br />

a Hobart vertical mixer Model HCM 300 (Hobart Corporation, Troy, Ohio, U.S.A.) and mixed for a total<br />

<strong>of</strong> 10 min, stopping every 5 min interval to allow retrieval <strong>of</strong> adhering product from the sides <strong>of</strong> the<br />
