Sensory Characteristics Results of initial sensory evaluation shown in Table 8.5 indicate that the fortified product had a moderate roasted peanut odor and flavor and a perceptible burnt-like odor and flavor. No stored-like, rancid-like, fortificant-like/medicinal-like and other off-odors were detected by panelists. The product was noted to have a slightly sweet taste with perceptible salty and bitter taste. During storage at different temperatures, the product was observed to have developed a rancid odor as shown in Table 8.6. A slight rancid odor was noted after the product was kept in storage for 127 days at 45 o C, perceptible rancid odor after 136 days storage at 40 o C, and slight to perceptible rancid odor after 188 days at 35 and 30 o C, respectively. At these storage times, the panelists evaluated the product as unacceptable (Table 8.7).
