3. Handling and storage <strong>of</strong> Vitamin A fortificant: QC ensures that Vitamin A fortificant, which<br />

is used to fortify peanut butter, is properly labeled and stored in a chiller, and that the packaging<br />

is intact to prevent leakage and contamination.<br />

4. Corrective action and recording: In cases where the above requirements are not met and/or<br />

where spillage has unnecessarily occurred, or where there are obvious risks <strong>of</strong> food<br />

contamination resulting from the improper handling, use and storage <strong>of</strong> chemicals, production<br />

will be stopped and the affected areas thoroughly cleaned and sanitized as needed. <strong>The</strong> QC<br />

personnel inspect the area prior to resumption <strong>of</strong> operation. QC observations on the above are<br />

recorded in numbers 6.1 to 6.5 <strong>of</strong> the Daily Sanitation Inspection Checklist, Record No. 1,<br />

Appendix C.<br />

CONTROL NO. VII. CONTROL OF EMPLOYEE HEALTH CONDITIONS<br />

A. Objective<br />

To ensure that all workers handling the product are free from any disease conditions that could<br />

contaminate the product.<br />

B. Procedure<br />

1. Medical requirements: Prior to employment, workers should be required to submit a copy <strong>of</strong><br />

their medical certificate together with the results <strong>of</strong> X-ray, stool and urine analysis. All plant<br />

personnel are also required to undergo an annual medical examination, records <strong>of</strong> which are kept<br />

on file. <strong>The</strong> QC personnel checks on these and lists down workers with acceptable medical tests<br />

in the Workers File Form, Record No. 10, Appendix Y.<br />

2. Inspection: <strong>The</strong> QC personnel observe the workers for any sign <strong>of</strong> medical problems daily<br />

before operations begin.<br />

3. Corrective action and recording: Workers with observed ailments will either: (a) be given<br />

first-aid treatment, (b) reassigned to non-food handling tasks, and/or (c) sent home depending on<br />

the type <strong>of</strong> the ailment. Reassignment can only be applied to workers with minor cuts or bruises.<br />

Others will be sent home until they are fit to resume work. All observations are recorded in<br />

numbers 7.1 to 7.2 <strong>of</strong> the Daily Sanitation Inspection Checklist, Record No. 1, Appendix C.<br />
