6. Handling <strong>of</strong> raw materials: <strong>The</strong> Production Supervisor ensures that raw peanuts and<br />

ingredients, i.e. sugar, refined salt, are packed in clean containers prior to acceptance and stored<br />

properly away from where food is handled or prepared. If raw peanuts and ingredients are<br />

packed in dirty containers, these will be transferred to a clean container prior to acceptance. <strong>The</strong><br />

plant worker assigned in the receiving <strong>of</strong> raw materials will inform his supervisor and the<br />

supervisor will notify their supplier regarding this.<br />

7. Handling <strong>of</strong> product: <strong>The</strong> Production Supervisor ensures that the peanut butter is properly<br />

handled during storage and transportation to prevent contamination and deterioration. <strong>The</strong><br />

storage and transport facilities should be maintained at ambient condition (≈ 30°C) to prevent<br />

deterioration <strong>of</strong> the product. If temperature <strong>of</strong> the storage becomes high (≈35°C), adequate<br />

ventilation should be provided using fans.<br />

8. Inspection and recording: <strong>The</strong> QC Officer checks on procedures 1-7 above daily.<br />

Observations are recorded in numbers 5.1 to 5.8 <strong>of</strong> the Daily Sanitation Inspection Checklist,<br />

Record No. 1, Appendix C.<br />

CONTROL NO. VI. LABELING, STORAGE AND USE OF TOXIC COMPOUNDS<br />

A. Objective<br />

1. To ensure that toxic compounds such as cleaning and sanitizing compounds, compounds used for<br />

pest control, and compounds used for testing, maintenance and operations used in the plant are<br />

all necessary and are properly handled and stored to prevent contamination <strong>of</strong> the product.<br />

2. To ensure that the vitamin A fortificant is properly handled and stored to prevent its degradation<br />

and inappropriate use.<br />

B. Procedure<br />

1. Use and storage <strong>of</strong> toxic compounds: Engineering personnel will use and store only those toxic<br />

compounds which are necessary for cleaning and sanitizing purposes, testing, maintenance and<br />

operation <strong>of</strong> plant equipment as listed in Appendix X. <strong>The</strong>se compounds should be stored away<br />

from the production area and separate from raw materials, ingredients and packaging materials<br />

and should be immediately removed when found in areas where they are not supposed to be<br />

stored. QC personnel checks that toxic compounds and all chemicals are properly stored and<br />

labeled with a warning sign about their toxicity.<br />

2. Use <strong>of</strong> insecticides and rodenticides: Insecticides, including household insecticides or<br />

rodenticides are used only under the supervision <strong>of</strong> a pest control <strong>of</strong>ficer or trained personnel.<br />
