BREEDING AND GENETICS B-1 CARCASS CHARACTERISTICS OF <strong>PHILIPPINE</strong> CARABAO (Bubalus bubalis Linn) AND ITS CROSSBREDS O. D. Abanto, Assistant Professor, IAS-CA, UPLB P. I. Lapitan, Supervising Science Research Specialist, PCC-UPLB, DA Slaughter and carcass yields of the Philippine carabao (PC), Philippine carabao x Murrah F1 (PMF1) and F2 (PMF2) and Philippine carabao x Nili Ravi F1 (PRF1) were investigated. A total of 37 water buffaloes, 25-132 mos old, weighing 278-672 kg, slaughtered and fabricated into standard wholesale and retail cuts. The yield of each by-product and wholesale cuts were determined and correlated to the live weight and age of water buffaloes. The economic value of the slaughter and carcass yield of each breedtype was determined. Among the breedtypes, PMF1 had the highest average live weight of 480.50 kg while the PC had the lowest with 343.18 kg. PMF1 had heavier hot carcass (249.54 kg) and chilled carcass (242.96 kg) than other breedtypes. The carcass of PMF1 had the highest percent lean, lowest percent fat and highest chilled carcass weight. The percent lean in the carcass increased (r=0.554) while the percent fat decreased (r=-0.444) as the animals get heavier. The percent fat in the carcass tended to increase (r=0.388) as the water buffaloes get older. PMF1 had the highest estimated sale of Php18,644.89 per head, while PC had the lowest with Php12,586.45. PMF1 had the highest estimated sale per kg live weight of Php38.00 while PRF1 had the lowest with Php36.52. The results of the study suggest that Philippine carabao x Murrah crossbreds can give higher monetary value to the farmer from slaughter and carcass yields, with almost the same meat quality as the Philippine carabao. The crossbreds have genetic potential to grow faster than Philippine carabaos; thus, they can reach optimum slaughter weight at a much shorter time or at a younger age with a relatively tender meat and less amount of trimmable fats. Parker, Professor, DAS-CA, UPLB Data were obtained from two hundred four native Philippine carabao bulls slaughtered at the Purefoods, Inc. slaughterhouse. The data were grouped according to ages, body weights and scrotal circumferences. Age of carabao bulls ranging from 2015 years was grouped into one and two years class intervals. The body weight ranging from 231.8 to 547.0 kg and were grouped into 40 kg class intervals. Likewise, scrotal circumference (20 to 28 cm) was grouped into one cm class intervals. The classes were resorted to due to difference in the environmental factors and sources of animals. Age relationship with testicular measurements (weight, volume, length and width), seminal vesicle measurements (weight and volume) and scrotal circumference were quadratic and the shape of the graphs curvilinear. The curvilinear correlation coefficients were high, 0.967, 0.968, 0.939 and 0.932, respectively for average testicular weight, volume, length, width, for age and scrotal circumference (R) was 0.979; among age and seminal vesicle weight and volume (R) more 0.975 and 0.974, respectively. All curvilinear correlations were lightly significant (P< 0.0001). The difference between right and left testes and seminal vesicle based on age classes were however not significant. The curvilinear regression equation values for estimating scrotal circumference and right, left, average and total testicular weight volume, length, width, seminal vesicle weight and volume measurements, all as dependent variables, based on age classes as independent variables were tabulated.
