<strong>The</strong> Dove<br />
<strong>Mossley</strong> <strong>Parish</strong> Women’s Guild<br />
May 9th This years AGM took place at Country Cakes in Antrim and was one <strong>of</strong> our most enjoyable<br />
nights ever. Chairwoman Pat Flint got business matters quickly under way. She thanked all <strong>the</strong> members<br />
for <strong>the</strong>ir attendance and support throughout <strong>the</strong> year. A couple <strong>of</strong> husbands were also mentioned for <strong>the</strong>ir<br />
help and support. Our secretary, Anne Robinson gave a comprehensive account <strong>of</strong> our activities<br />
throughout <strong>the</strong> past year while our treasurer Christine McCormick supplied a very accurate statement <strong>of</strong><br />
accounts - even down to <strong>the</strong> meagre 2p interest from <strong>the</strong> bank. I am pleased to report that all <strong>of</strong>ficers<br />
and committee members agreed to serve for ano<strong>the</strong>r year with <strong>the</strong> addition <strong>of</strong> Marlene Bow who was<br />
allegedly press ganged into joining <strong>the</strong> committee. Our host, Lorraine from Country Cakes <strong>the</strong>n gave us<br />
a very entertaining cookery demonstration making two desserts ( Recipes supplied) We all sampled<br />
<strong>the</strong>se with much delight. It was <strong>the</strong>n, however, we all thought we had died and gone to Heaven, when<br />
out came <strong>the</strong> supper - every wee bun, traybake and cake you could wish for. And all made with real<br />
butter and fresh cream!<br />
Sat. June 9th Bus Run Our outing this year will explore County Down. Some seats are still available so<br />
please contact Pat or Christine asap. We will leave <strong>Mossley</strong> parish at 9-30am and return at approx 9-<br />
30pm (all depending on <strong>the</strong> bus driver!) All welcome for what is always a relaxing day out, <strong>of</strong> retail<br />
<strong>the</strong>rapy and not having to make <strong>the</strong> dinner.<br />
Our Monthly Meetings will commence on Wednesday 12th September at 8pm.<br />

PINEAPPLE, BANANA & TOFFEE<br />
CRUMBLE<br />
Ingredients<br />
4 bananas<br />
Large tin pineapple chunks<br />
25g butter<br />
75g muscovado sugar<br />
3tbsp double cream<br />
Crumble<br />
125g Plain Flour<br />
50g coconut<br />
75g Demerara sugar<br />
75g cold butter cubed.<br />
Put flour, coconut and sugar in bowl.<br />
Add butter and rub into <strong>the</strong> crumbs.<br />
Slice banana<br />
Drain pineapple<br />
Melt butter in pan<br />
Add sugar and mix<br />
Add pineapple and fry<br />
Add banana slices and fry for a few mins.<br />
Add cream<br />
Transfer to an ovenpro<strong>of</strong> dish<br />
Cover with crumble<br />
Bake in a hot oven for 10-15 minutes<br />
Serve with vanilla ice cream<br />

CARAMEL & TOBLERONE ICE CREAM<br />
Ingredients<br />
4 oz butter<br />
2 oz caster sugar<br />
2 oz brown sugar<br />
Large tin condensed milk<br />
¼ pint milk<br />
Large tub double cream<br />
½ small bar <strong>of</strong> Toblerone (chopped)<br />
Melt Butter and sugars toge<strong>the</strong>r until caramel<br />
Add condensed milk and boil for a few<br />
minutes.<br />
Stir in ½ pint <strong>of</strong> milk and leave until completely<br />
cooled.<br />
Line a 2 lb loaf tin with cling film<br />
Whip cream with remaining milk until nearly<br />
thick.<br />
Mix in caramel and toblerone<br />
Leave in freezer overnight<br />
When ready, turn out onto a tray and remove<br />
cling film. <strong>The</strong>n slice and serve<br />
