cinnamon; whereas in the United States, Indonesian cassia [C.burmanii] and Vietnam<br />

[Saigon] cassia [C.loureirii] are variously classed as ‘cinnamon’, and the volatile oil from<br />

Chinese cassia [C. cassia] as ‘cinnamon oil’.<br />

‘Cinnamon has been deleted from the US Pharmacopoeia 19, but in the US<br />

Dispensatory, 26 th edn, cinnamon is described as ‘ the dried bark of C.loureirii Nees(F:<br />

Lauraceae) and contains, in each 100g, not less than 2.5 ml of volatile oil’.<br />

The United States Government Standard defines ‘cinnamon, cassia,’ in the<br />

following terms:<br />

Type 1, Whole:<br />

1) Batavia cassia shall be the dried bark of cultivated varieties of Cinnamonum<br />

burmanii Blume.<br />

2) Saigon cassia shall be the dried bark of cultivated varieties of Cinnamonum<br />

loureirii Nees<br />

3) korintji cassia shall comply with the requirements of sub type A.<br />

TYPE 2 GROUND:<br />

1) Batavia cassia<br />

2) Saigon cassia<br />

3) Korintji cassia<br />

TYPE 3, CUT [STICKS]:<br />

Stick cinnamon shall be cut to specified length from Batavia cassia whoch shall<br />

not exceed 15 mm diameter.<br />

TYPE 4, F<strong>OR</strong>TIFIED, GROUND:<br />

Type 4 fortified ground cinnamon shall have a natural cassia or cinnamon base,<br />

except that fortified cinnamon shall have the addition of an encapsulated essential oil of<br />

cinnamon or cassia or a combination thereof.<br />

Type 1, whole cinnamon, cassia, is required to confirm to the requirements given<br />

in the below table, except for the sieve requirements. Type 2 ground cinnamon, cassia
