<strong>CINNAMON</strong> AND CASSIA OLE<strong>OR</strong>ESINS<br />

Cinnamon and cassia oleoresins are extracted by using a suitable solvent from<br />

commercial sps., of cinnamon and cassia, notably from chips. Bark is distilled for the<br />

preparations of oleoresin and the recovery is about 10-12%. It is a dark brown liquid<br />

containing 50% of volatile oil and has to be diluted before using it as a flavouring agent.<br />

Cassia oleoresin is much cheaper than Chinese cassia. Oleoresins are mostly<br />

manufactured in Western Europe and the USA. India too has started manufacturing and<br />

exporting cinnamon oleoresin.<br />

OTHER PRODUCTS<br />

The other minor products are<br />

1) root bark oil<br />

2) cinnamon seed oil<br />

3) cinnamon buds for flavouring and spicing goods like quills and quillings.<br />

PACKAGING AND ST<strong>OR</strong>AGE<br />

PACKING : The material [oil or oleoresin] shall be supplied in air tight and preferably<br />

amber –coloured glass, aluminium containers, permitting a minimum of air – space, or as<br />

agreed to between the purchaser and the supplier.<br />

ST<strong>OR</strong>AGE : The material shall be protected from light in a cool and dry place.<br />

USES OF <strong>CINNAMON</strong><br />

Cinnamon is a very useful spice tree. Every part of the tree, viz., bark, wood,<br />

leaves, buds, flowers, fruits and roots – all find some use.<br />

STEM BARK<br />

Cinnamon bark is one of the most popular spices in use in every home. It has a<br />

delicate fragrance and a warm agreeable taste. It is extensively used as a apice or<br />

condiments in the form of small pieces or powder . it is aromatic, astringent, stimulant<br />

and carminative and also possesses the property of checking nausea and vomiting.<br />

Cinnamon is used for flavouring confectionary, liquors, pharmaceuticals, soaps and<br />

dental preparations. Powdered cinnamon is a constituent of chocolate preparations made<br />

in Spain. Cinnamon is also used in candy, gum, incense, soaps and perfumes. Cinnamon<br />

has also been found to help diabetes in digestion of sugar[Health and Nutrition, OCT .,<br />

1990].
