1 Tbs (15 ml) olive oil or butter
8-12 eggs, beaten
2-3 tomatoes, seeded and chopped
4-6 oz (110-170 g) crumbled feta cheese
1 tsp (5 ml) chopped fresh oregano or 1/4 tsp (1 ml) dried
Salt and freshly ground pepper to taste
Heat the olive oil in a large skillet over moderate heat and pour in the eggs. When the eggs are partially
set stir in the remaining ingredients and continue cooking, stirring constantly, until set to your preference.
Serves 4 to 6.
