zar evocati<strong>on</strong>s at night, both called wädaga (Mercier, 1980-2).<br />

5.1.2) Other c<strong>on</strong>sumpti<strong>on</strong> ways<br />

The <strong>coffee</strong> part the most comm<strong>on</strong>ly c<strong>on</strong>sumed is the bean, as in western countries, and<br />

since the Amhara dominati<strong>on</strong> most of traditi<strong>on</strong>al <strong>coffee</strong> preparati<strong>on</strong>s tend to disappear or yet<br />

disappeared.<br />

As in <strong>Limu</strong> regi<strong>on</strong>, and Kaffa historical province globally, Oromo people used and<br />

still use (but rarely and in excepti<strong>on</strong>al purposes, in remote areas) to c<strong>on</strong>sume a typical<br />

preparati<strong>on</strong>: Buna Qalaa which is <strong>coffee</strong> cooked with butter, melt with different species and<br />

salt. A Genet farmer told me this preparati<strong>on</strong> appeared approximately during the 17 th century<br />

in Oromo culture. Is there a link between this preparati<strong>on</strong> and the <strong>on</strong>es, as Mercier noted,<br />

Grühl and Bruce observed? In the 1920’s, Max Grühl described the traditi<strong>on</strong>al Kaffa way of<br />

<strong>coffee</strong> preparati<strong>on</strong> as a boiling spices with pellets made of roasted <strong>coffee</strong> powder mixed with<br />

butter and h<strong>on</strong>ey. Before, in the sec<strong>on</strong>d half of 18 th century, Bruce already noted that Oromo<br />

people living in Amhara kingdom used to eat roasted <strong>coffee</strong> powder pellets mixed with butter.<br />

Another preparati<strong>on</strong> currently found in Oromo regi<strong>on</strong>s, and very spread in the whole<br />

<strong>Limu</strong> regi<strong>on</strong>, is the <strong>coffee</strong> husk decocti<strong>on</strong> called hogga or qasara. Afar people also c<strong>on</strong>sume<br />

<strong>coffee</strong> in this way, even more comm<strong>on</strong>ly.<br />

Mahlé, Omo people, infuse <strong>coffee</strong> with parchment. It is interesting to note the<br />

similitude between this people name and the old introduced <strong>coffee</strong> varieties <strong>on</strong>e (Malé) in<br />

<strong>Limu</strong> regi<strong>on</strong>.<br />
