1st, 2nd & 3rd Generation Spawn Media:<br />

Grain-to-grain expansions. The final spawn<br />

medium can be another generation of grain<br />

spawn, or alternatively sawdust. The sawdust<br />

spawn can be used to inoculate supplemented<br />

sawdust (i.e. sawdustlchipsfbrafl) or plugs for<br />

outdoor cultivation on stumps or partially buried,<br />

vertically pos<strong>it</strong>ioned, large diameter<br />

hardwood logs. Considering the long incubation<br />

period, cultivators are well advised to<br />

weigh the advantages of creating another generation<br />

of sawdust spawn. The advantage of the<br />

grain spawn-inoculated bags is that they produce<br />

several weeks earlier than do the<br />

sawdust-inoculated blocks. However, the qual<strong>it</strong>y<br />

of colonization is better provided by spawn<br />

made of sawdust than from grain.<br />

Substrates for Fru<strong>it</strong>ing: Supplemented hardwood<br />

sawdust, particularly oak, poplar,<br />

cottonwood, elm, willow and alder. Alder and<br />

poplar stumps are less likely to support outdoor<br />

fru<strong>it</strong>ings, given the hold compet<strong>it</strong>ors like<br />

Pleurotus ostreatus and allies have on that niche. For indoor cultivation, yields vary substantially between<br />

various wood types. Oak is generally preferred, although strains growing on conifers are being<br />

developed.<br />

bacterial blotch. Over-watering can quickly cause the fru<strong>it</strong>bodies to abort. The thick base should be<br />

debris. Mushrooms wrapped in rice paper, and then refrigerated, have an extended<br />

shelf life up to two weeks at 35° F. (1-2.° C.)<br />

Form of Product Sold to Market: Fresh and dried mushrooms for the gourmet market. High qual<strong>it</strong>y<br />

tablets are being marketed in the Un<strong>it</strong>ed States by Ma<strong>it</strong>ake, Inc. Fungi Perfecti is currently selling a<br />

tea ("Stamets Olympic Rainforest Mushroom Tea") containing dried fru<strong>it</strong>bodies of this mushroom.<br />
