when they are crisply cooked, a strong, appealing<br />

cashew-like flavor eventually develops. This progression<br />

of flavors, primarily affected by the duration of cooking, underscores the Golden Oyster<br />

mushroom's versatil<strong>it</strong>y as an esculent.<br />

Comments: An<br />

the Golden Oyster Mushroom is one of the most spectacular of all gourmet<br />

mushrooms. When strains of this mushroom are over-cultured, the golden color is one of the first<br />

features to be lost. The brightness of the gold cap color is directly related to the intens<strong>it</strong>y of light in the<br />

growing room. A high temperature tolerant mushroom, primordia will not below 60-65° F. (16-<br />

18° C.). Coupled w<strong>it</strong>h the brev<strong>it</strong>y of time between spawning and fru<strong>it</strong>ing, and <strong>it</strong>s fondness for<br />

cottonseed hulls, this mushroom is better su<strong>it</strong>ed for cultivation in warmer climates of Asia, the southern<br />

Un<strong>it</strong>ed States or Mexico, or during the summer months in temperate regions. Its penchant for<br />

forming clusters, which I call golden gourmet<br />

bouquets, makes harvesting easy and prevents damage<br />

to individual mushrooms.<br />
