<strong>Edible</strong>: GENUS Clavaria Club Fungi All Clavarias are edible, and although the texture of most of them is definitely tough, the flavor is usually excellent, and they lend themselves readily to drying. There are many different spe- Figure 58. Clavaria stricta. <strong>Edible</strong>. cies, some of them too small to deserve notice for our purposes, but others large, conspicuous, easily recognized, and common. The photograph of Clavaria stricta growing on a rotten aspen log (Figure 58) shows the general Clavaria form and habit better than words. Characteristic are (i) their upright growth and (2) their repeatedly branching stems, the tips of which always 96
CLUB FUNGI point upward. The number of branches in a clump varies from a few dozen to several hundred, and a large fruit body will be 5 or 6 inches across and 3 or 4 inches high. The color varies from pale tan to brown or ashy gray. They grow on old decayed logs and stumps and on the ground around dead trees and can be found in abundance throughout the wooded areas of most of the North Temperate Zone. It is entirely probable that some species have better culinary qualities than have been attributed to them in the past and that if given a fair trial by those willing to experiment with methods of preparation they would acquire an excellent reputation as edible fungi. Should any reader be interested in learning more about this group he is referred to Coker's extensive monograph on Clavariaceae (listed in the Bibliography on page 119), wherein a large number of species are described and illustrated, many of them in color. 97
