9.6 Heart-of-<strong>palm</strong>: harvest and post-harvest handling<br />
Offshoots are harvested when they reach commercial dimensions, which<br />
depend on factory and market demands for heart-of-<strong>palm</strong>. For the international<br />
market there are two basic qualities: true or ‘quality heart-of-<strong>palm</strong>’ is a cylinder<br />
composed of a tender petiole-sheath enveloping the developing leaves above<br />
the apical meristem, and the ‘caulinar heart’ or tender stem tissue below the<br />
apical meristem. The quality heart commands a higher price when it has a<br />
