13 plainly printed with the words "Skimmed Milk" in letters not smaller<br />

14 than twelve point gothic caps.<br />

15 For the purpose <strong>of</strong> this chapter, milk is the fresh, clean, lacteal<br />

16 secretion obtained by the complete milking <strong>of</strong> one or more healthy<br />

17 cows, properly fed and kept. For the purpose <strong>of</strong> this chapter, cream<br />

18 is the portion <strong>of</strong> milk, rich in milk fat, which rises to the surface <strong>of</strong><br />

19 milk on standing, or is separated from it by centrifugal force, is fresh<br />

20 and clean.<br />

21 For the purpose <strong>of</strong> this chapter, skimmed milk is the portion <strong>of</strong><br />

22 milk, poor in fat, from which the cream has been removed. The term<br />

23 "skimmed milk" shall also include the fresh, clean, lacteal secretion<br />

24 <strong>of</strong> one or more healthy cows and containing less than three per cent<br />

25 <strong>of</strong> milk fat or less than eleven and one-half per cent <strong>of</strong> milk solids.<br />

26 For the purpose <strong>of</strong> this chapter, milk, cream and skimmed milk<br />

27 shall be deemed to be adulterated :<br />

28 In case <strong>of</strong> milk, cream and skimmed milk :<br />

29 1. If water or any other substance has been added.<br />

30 2. If it contains any visible dirt or be contained in any container<br />

31 which is not clean.<br />

32 3. If it be obtained from any animal having disease, sickness,<br />

33 ulcer, abscess or running sore or which has been obtained from a cow<br />

34 within fifteen days before or five days after calving.<br />

35 4. If it be obtained from a cow stabled in an unhealthful place or<br />

36 fed upon any substance in a state <strong>of</strong> putrification or <strong>of</strong> an unhealthful<br />

37 nature.<br />

38 In case <strong>of</strong> milk: If it contains less than three per cent <strong>of</strong> milk<br />

39 fat or less than eleven and one-half per cent <strong>of</strong> milk solids.<br />

40 In- case <strong>of</strong> cream : If it contains less than sixteen per cent <strong>of</strong><br />

41 milk fat.<br />

42 For the purpose <strong>of</strong> this chapter, milk, cream and skimmed milk<br />

43 shall be deemed to be misbranded :<br />

44 If it be labeled or branded so as to deceive or mislead the pur-<br />

45 chaser, or if the package bears any statement, design or device which<br />

46 is false or misleading in any particular.<br />

47 For the purpose <strong>of</strong> this chapter, cheese is the sound, ripened<br />

48 product made from milk or cream by coagulating the casein with<br />

49 rennet or lactic acid with or without the addition <strong>of</strong> ripening ferments,<br />

50 seasonings and color, and contains not less than thirty per cent <strong>of</strong><br />

51 milk fat. For the purpose <strong>of</strong> this chapter, skimmed milk cheese is the<br />

52 sound and ripened product made from skimmed milk as defined in this<br />

53 section, by coagulating the casein there<strong>of</strong> with rennet or lactic acid,<br />

54 with or without the addition <strong>of</strong> ripening ferments, seasoning, and color<br />

55 and containing less than thirty per cent <strong>of</strong> milk fat.<br />

56 No person shall <strong>of</strong>fer or expose for sale any skimmed milk cheese<br />

57 without the same being plainly and durably branded or marked on<br />

58 the side or top <strong>of</strong> both cheese and package in the English language<br />

59 with the words "Skimmed Milk Cheese" in letters to be not less than<br />

60 one inch in height and one-half inch in width.<br />

61 Every article, substitute or compound, save that produced from<br />

62 pure milk <strong>of</strong> cows and containing no added substance, made in the<br />

63 semblance <strong>of</strong> or designed to be used for or in the place <strong>of</strong> evaporated<br />

64 milk, is hereby declared "Imitation Evaporated Milk", and every arti-<br />

65 cle, substitute or compound, containing any fat other than the milk fat<br />

66 <strong>of</strong> milk cows, made in the semblance <strong>of</strong> or designed to be used for or
