<strong>Paolo</strong> <strong>Foradori</strong> hat sich vor einigen Jahren aus dem<br />
Tagesgeschäft des <strong>Tramin</strong>er Weingutes zurückgezogen<br />
und lebt heute auf dem Ansitz Barthenau inmitten<br />
der Blauburgunderreben. Sie liegen ihm besonders am<br />
Herzen. Als Heranwachsender half er bereits bei der Lese<br />
und saß gerne oben auf dem Pferdefuhrwerk, um die<br />
Trauben ins Tal zu begleiten.<br />
Wann erwarb die Familie <strong>Foradori</strong> den Ansitz Barthenau?<br />
Mein Vater Vittorio kaufte Barthenau, als ich sechs Jahre<br />
alt war. Damals wurden neben Barthenau auch die etwas<br />
unterhalb liegenden Yngramhöfe versteigert, die noch heute<br />
zum Weingut gehören.<br />
Was hat Ihren Vater bewogen, Barthenau zu kaufen?<br />
Der Krieg lag in der Luft, Immobilien schienen eine sichere<br />
Anlage. Mein Vater, damals als Rechtsanwalt in Bozen tätig,<br />
erfuhr dort vom Verkauf der Höfe in Mazon. Beim Kauf des<br />
Anwesens faszinierten ihn der schöne Ansitz Barthenau, die<br />
weit älteren Yngramhöfe und die damit verbundenen Weinberge<br />
und Ländereien in bester Lage oberhalb der Etsch. x<br />

Konnte er die Höfe bewirtschaften?<br />
Nein. Mein Vater dachte und fühlte nicht wie ein Winzer,<br />
obschon er in einem Weinbaubetrieb groß geworden war.<br />
Ein exzellenter Vorarbeiter nahm die Arbeit in die Hand<br />
und pflanzte im Jahr 1942 unsere jetzt ältesten Burgunderreben.<br />
Bis heute bringen sie die besten Trauben. Mein Vater<br />
gab schließlich seine Anwaltstätigkeit auf, doch Zeit für<br />
die Höfe fand er kaum.<br />
Wie wurden die Höfe damals bewirtschaftet?<br />
Aus heutiger Sicht: völlig chaotisch! Wie überall wurden<br />
auch diese Höfe bis in die 50er Jahre in einer Mischkultur<br />
bewirtschaftet. Es gab viele Tiere: Pferde, Kühe, Schweine,<br />
Hühner, Gänse, auch Tauben und dazu Ställe, Misthaufen<br />
sowie Weideflächen. Angepflanzt wurde fast alles: Leinen,<br />
Buchweizen, Rüben, Kartoffeln, selbst Tabak und natürlich<br />
Weinreben – Blauburgunder als auch Gewürztraminer.<br />
Man war autark. Trotzdem dachte ich mir: So wird man<br />
in der Zukunft nicht erfolgreich weiterwirtschaften können.<br />
Den fruchtbaren Boden gilt es, besser zu nutzen. Doch jede<br />
Veränderung war damals nur mit viel Mühe umzusetzen.<br />
Wer hat das Potenzial erkannt, das im Blauburgunder steckt?<br />
Wir Südtiroler hatten damals noch wenig bis keine Erfahrung<br />
mit dem Blauburgunder. Ich näherte mich daher im<br />
Alleingang dieser Traube. In Jahren stiller Arbeit pendelte<br />
ich zwischen den Weinbergen in Mazon und dem Wein-<br />
gut in <strong>Tramin</strong>. 1959 reiste ich erstmals ins Elsaß und weiter<br />
nach Burgund, um das alte Stammland des Pinot Noir und<br />
die Weine kennenzulernen. Noch im selben Jahr begann<br />
ich dann reinsortigen Blauburgunder auszubauen. Die Liebe<br />
zu diesem Wein hatte mich erfasst. •

<strong>Paolo</strong> <strong>Foradori</strong> si è ritirato da alcuni anni dal lavoro quotidiano<br />
dell’azienda vitivinicola e vive oggi nella tenuta<br />
Barthenau nel mezzo delle vigne di Pinot Nero. Queste gli<br />
stanno a cuore particolarmente. Già da adolescente aiutava<br />
durante la vendemmia e ben volentieri seguiva l’uva a valle<br />
sul carro trainato dai cavalli.<br />
Quando la famiglia <strong>Foradori</strong> acquistò la tenuta Barthenau?<br />
Mio padre Vittorio acquistò Barthenau quando avevo sei<br />
anni. Allora, vennero battuti all’asta anche le sottostanti due<br />
tenute Yngram, che ancora oggi fanno parte della proprietà.<br />
Cosa ha indotto suo padre ad acquisire Barthenau?<br />
C’era già aria di guerra, e gli immobili sembravano essere<br />
un sicuro investimento. Mio padre, allora avvocato a Bolzano,<br />
apprese della vendita dei tre masi di Mazon. Era affascinato<br />
dalla bellezza della tenuta Barthenau, degli antichi masi<br />
Yngram, dei vigneti e delle proprietà annesse nelle migliori<br />
esposizioni al di sopra del fiume Adige.<br />
Poteva gestire personalmente i masi?<br />
No. Mio padre non era un viticoltore, anche se cresciuto<br />
in un’azienda vitivinicola. Un eccellente capooperai gestiva<br />
i lavori e impiantò nel 1942 la nostra, per ora, più vecchia<br />
vigna a Pinot Nero. Fino ad oggi in questa vigna crescono<br />
le nostre migliori uve. Anche quando mio padre smise di fare<br />
l’avvocato non trovò il tempo per dedicarsi ai suoi masi.<br />
Come venivano coltivati allora i masi?<br />
Da un punto di visto odierno in maniera totalmente caotica.<br />
Come tutti i masi locali, anche questi, fino agli anni cinquanta,<br />
venivano coltivati con diverse culture. Cerano molti animali:<br />
cavalli, mucche, maiali, galline, oche, anche colombi,<br />
stalle con lettamaio annesso nonché pascoli. Veniva coltivato<br />
di tutto: lino, grano saraceno, rape, patate, tabacco e naturalmente<br />
anche vigne – Pinot Nero e Gewürztraminer. Eravamo<br />
autarchici. Tuttavia pensavo che così, non si poteva continuare<br />
a lavorare. Si trattava di coltivare meglio il fertile terreno. Ma<br />
allora ogni piccolo cambiamento era difficile da realizzare.<br />
Chi ha scoperto che potenziale aveva il Pinot Nero?<br />
Noi altoatesini allora avevamo poca esperienza con questa<br />
varietà. Di fatto pian piano mi sono avvicinato da solo a questo<br />
vitigno. In anni di tacito lavoro mi spostavo tra i vigneti<br />
di Mazon e la cantina di Termeno. Nel 1959 intrapresi il mio<br />
primo viaggio attraverso l’Alsazia in Borgogna, la patria del<br />
Pinot Nero, per conoscerne i vini. Ancora nello stesso anno<br />
iniziai a vinificare Pinot Nero in purezza. L’amore per questo<br />
vino mi aveva convinto. •<br />

A few years ago <strong>Paolo</strong> <strong>Foradori</strong> withdrew from the everyday<br />
running of the family wine estate in <strong>Tramin</strong> and now lives<br />
in his country manor of Barthenau surrounded by Pinot<br />
Noir vineyards. They are especially dear to him. When he was<br />
growing up <strong>Paolo</strong> used to help with the harvest and enjoyed<br />
sitting on the horse-drawn cart as the grapes were brought<br />
down to the valley.<br />
When did the <strong>Foradori</strong> family buy the Barthenau estate?<br />
My father Vittorio bought Barthenau when I was six. At<br />
the time the farmsteads located just a little lower down, the<br />
Oberer and Unterer Yngramhof, were also up for sale and<br />
now still belong to the Hofstätter estate.<br />
What induced your father to buy Barthenau?<br />
War was looming and real estate seemed a safe investment.<br />
At the time my father was working as a lawyer in Bolzano<br />
and heard about the sale of the estates at Mazon. On buying<br />
the estate he was fascinated by the fine Barthenau manor,<br />
the much older Yngram farmsteads, the land belonging<br />
to them and the vineyards occupying the very best sites overlooking<br />
the river Adige.<br />
Was he able to run the estates on his own?<br />
No. My father was not a winegrower even though he had<br />
grown up in a family of vignerons. A very good and reliable<br />
overseer took on the work and in 1942 planted the Pinot<br />
Noir vines which are now our oldest. They still yield the<br />
finest grapes.<br />
How was the land cultivated in those days?<br />
From today’s perspective completely chaotically! Like elsewhere,<br />
until the 1950s the farms here grew mixed crops.<br />
There was plenty of livestock: horses, cows, pigs, hens, geese,<br />
even pigeons and of course there were cowsheds, stalls,<br />
manure heaps and grazing land. Just about everything was<br />
planted: flax, buckwheat, turnips, potatoes, even tobacco<br />
though of course also vines – Pinot Noir and Gewürztraminer.<br />
People were self-sufficient. Nevertheless we realised the<br />
need to specialize.<br />
Who realised the potential of growing Pinot Noir?<br />
At the time we had little experience with Pinot Noir in<br />
South Tyrol. Consequently I grappled with the grape alone.<br />
In years when work was quiet I commuted between Mazon<br />
and the estate’s headquarters in <strong>Tramin</strong>. In 1959 I travelled<br />
to Burgundy, the home of Pinot Noir and I became smitten<br />
by the wine. In the same year I vinified my first Pinot Noir<br />
as a varietal wine •<br />

„Wer nicht wagt, der nicht gewinnt", mag Ludwig<br />
Ritter Barth von Barthenau gedacht haben, als er<br />
die Blauburgunder-Rebe aus ihrer französischen<br />
Heimat nach Südtirol, auf eine Hochebene oberhalb<br />
von Neumarkt, brachte. Spürsinn und Neugier<br />
trieben ihn, dort ihr Wachstum zu erproben – mit<br />
Erfolg! Der Burgunder gedieh auf der 400 m hohen<br />
Lage prächtig und Barth, Amateur in Sachen Wein,<br />
beschloss, sich im Ruhestand ganz auf den Weinbau<br />
zu verlegen. Der Chemiker mit Lehrstuhl in<br />
Wien und besonderem Interesse an aromatischen<br />
Verbindungen hatte 1882 in dem Weiler Mazon drei<br />
Höfe mit Ländereien erworben. Seine Geburtsstadt<br />
Rovereto war nicht allzu fern und in der Südtiroler<br />
Bergwelt mit ihren schroffen Felswänden und<br />
sanften Ebenen fühlte er sich zu Hause. Aus dem<br />
Etschtal konnte der Naturliebhaber in einer halben<br />
Stunde zu seinem Ansitz aufsteigen. Doch Barth<br />
starb früh. Sein Neffe Max verkaufte die Anwesen<br />
mit den Ländereien an die Familie <strong>Foradori</strong>. <strong>Paolo</strong><br />
<strong>Foradori</strong> brachte sie mit seiner Heirat 1959 in das<br />
<strong>Tramin</strong>er Weingut Joseph Hofstätter ein. In dessen<br />
Obhut ist aus dem Blauburgunder, dem einstigen<br />
Migranten, längst ein Einheimischer geworden –<br />
ein bedeutender Meilenstein in der Geschichte des<br />
Weinbaus in Italien.<br />
Können — Der Blauburgunder ist ein äußerst kapriziöses<br />
Gewächs: Er schätzt warme Tage, kühle<br />
Nächte und eine ausgeprägte Thermik. Im Weinberg<br />
will er sorgsam gepflegt sein, denn seine dünnschalige,<br />
kompakte Traube neigt zu Fäulnis. Nicht<br />
minder heikel erweist sie sich im Keller und fordert<br />
die volle Aufmerksamkeit und das ganze Können des<br />
Winzers. Beim Vinifizieren muss er sensibel auf das<br />
Erntegut des jeweiligen Jahrgangs reagieren.<br />
Der Blauburgunder verlangt viel und gibt viel.<br />

„Blauburgunder ist wie ein Fieber, aber eines, das dich<br />
nicht mehr loslässt. Zufrieden macht er nur, wenn alles perfekt<br />
gelaufen ist. Und dafür braucht es bei dieser Traube verdammt<br />
viel Leidenschaft. Wer glaubt, Blauburgunder nur aus einer<br />
Laune heraus anbauen und vinifizieren zu können, der<br />
täuscht sich. Blauburgunder muss man leben, man muss ihn<br />
verinnerlichen. Ich hatte das Glück, mit ihm aufzuwachsen. —<br />
Die Vigna S. Urbano, das Herzstück unter unseren Weinbergen<br />
in Mazon, strahlt mit ihren fast 70 Jahre alten Rebstöcken<br />
eine unge wöhnliche Ruhe aus. Doch sobald die Trauben im<br />
Keller sind, der Most zu gären beginnt und der Jungwein probiert<br />
werden kann, erweist sich der Blauburgunder mit seinen<br />
„liebenswerten Launen“ als gnadenloser Unruhestifter. Und<br />
er braucht Zeit, um sich zu beruhigen. — Wer einen Barthenau<br />
Vigna S. Urbano kauft, sollte ihn daher mit seinen Ecken und<br />
Kanten nehmen. Er sollte etwas Geduld mit ihm haben, den Wein<br />
mal ein halbes Jahr im Keller liegen lassen, ihn einfach vergessen.<br />
Den Barthenau Vigna S. Urbano trinkreif auf den Markt<br />
zu bringen, wäre nicht Sinn der Sache. Seine oft spannende<br />
Entwicklung sollte der Weinliebhaber miterleben können!“<br />
“Il Pinot Nero é come una febbre, ma una di quelle che non<br />
ti molla più. Ti soddisfa solo quando tutto è perfetto. E per ciò<br />
questa varietà necessita di tanta passione. Chi crede di poter<br />
coltivare e vinificare Pinot Nero solo per hobby, si sbaglia.<br />
Il Pinot Nero lo si deve vivere, ci si deve immedesimarsi con<br />
esso. Io ho avuto la fortuna di crescere con lui. — La Vigna<br />
S. Urbano, il cuore dei nostri vigneti a Mazon, con i suoi ceppi<br />
quasi settantenni, emana un’insolita calma. Ma dopo ché le uve<br />
sono in cantina, il mosto d’uva inizia a fermentare e poi, quando<br />
il vino giovane è pronto per l’assaggio, il Pinot Nero si dimostra<br />
con tutti i suoi capricci come spietato sobillatore. E ha bisogno<br />
di tempo per calmarsi. — Perciò, chi acquista un Barthenau<br />
Vigna S. Urbano deve prenderlo da tutte le sue angolature. Deve<br />
avere pazienza con lui, coricarlo per almeno sei mesi in cantina,<br />
in parole povere perderlo di vista per un po’. Commercializzare<br />
il Barthenau Vigna S. Urbano pronto per la beva sarebbe<br />
sbagliato. Così l’appassionato di vini ha la possibilità di poter<br />
seguire la sua appassionante evoluzione!”<br />
“Pinot Noir is like a fever, but one you cannot shake off.<br />
It only yields truly satisfying wine when everything works out<br />
perfectly. To achieve this, the variety requires an enormous<br />
amount of passion. Anybody who thinks that they can cultivate<br />
and vinify Pinot Noir grapes on a whim or as a hobby<br />
is badly mistaken. You have to live Pinot Noir, you have to get<br />
inside it, identify with it. I was lucky enough to grow up with<br />
Pinot Noir. — With its almost 70 year-old vines the Vigna S.<br />
Urbano site, the heart of our vineyards at Mazon, exudes an<br />
extraordinary measure of peace and tranquillity. However, once<br />
the grapes are in the winery, the juice begins to ferment and the<br />
young wine can be tasted, Pinot Noir becomes a pitiless troublemaker.<br />
And it takes time to calm down. — Consequently,<br />
if you buy a bottle of Barthenau Vigna S. Urbano you should<br />
accept it with its rough edges. Be patient, lay it down for six<br />
months or simply forget it for a while. There would be no point<br />
in us releasing the Barthenau Vigna S. Urbano ready to drink.<br />
The true wine lover will enjoy following its development!”

Alter — Nun hat Martin <strong>Foradori</strong> das Glück, in<br />
der Einzellage Vigna S. Urbano über fast 70 Jahre<br />
alte Rebstöcke zu verfügen, die kleine und lockere<br />
Trauben hervorbringen. Sie sind wenig anfällig für<br />
Fäulnis und dank des altersbedingt niedrigen Ertrages<br />
besonders konzentriert im Geschmack. Aus dem<br />
kostbaren alten Rebgut wählte Martin <strong>Foradori</strong> im<br />
Jahr 2000 erstmals Stöcke aus, deren Traubenform<br />
ihm besonders gut erschien. Seither zieht er aus<br />
diesen den „Nachwuchs“ heran. „Das ist unendlich<br />
viel Arbeit“, so der Winzer, „weil das Erbmaterial<br />
nicht stabil ist und wir erst nach mehrfacher sorgfältiger<br />
Selektion Setzlinge mit den gewünschten<br />
Gütemerkmalen auspflanzen können. Aber warum<br />
soll ich weiterhin Klone importieren, wenn ich in<br />
meinem Weingarten bereits bewährte Reben habe?“<br />
Lage — Einmalig sind die Burgunderlagen von<br />
Mazon: Sie neigen sich westwärts der Abendsonne<br />
zu und dem Wind „Ora" entgegen, der bis in die<br />
späten Nachmittagsstunden vom Gardasee hinüberbläst.<br />
So werden die Trauben trocken und gesund<br />
gehalten. Boden und Mikroklima könnten für den<br />
Blauburgunder nicht besser sein. Die charakteristischen<br />
Fruchtnoten der Traube reifen heran, ohne an<br />
Frische und Säure einzubüßen. Vor scharfen Winden<br />
schützen ein an die Weingärten grenzender Wald<br />
und eine hoch aufsteigende Kalksteinwand.<br />
„Die Güte einer Lage schmeckt man im Wein.<br />
Sie ist entscheidend für die Frage, ob aus ihrem<br />
Traubengut ein eigener Wein gekeltert werden soll<br />
– ein Wein wie der Barthenau Vigna S. Urbano, der<br />
die Stilistik der Lage bestmöglich verkörpert“, so<br />
Winzer Martin <strong>Foradori</strong>.<br />
Eleganz — Damit der Blauburgunder gelingt, muss<br />
der richtige Lesezeitpunkt abgepasst werden, und<br />
zwar vom Önologen in enger Absprache mit dem<br />
Weinbauern im Rebgarten. Die Trauben brauchen<br />
genügend Reife, aber auch nicht zuviel, damit die<br />
Säure im Traubenmost noch lebhaft erfrischend<br />
wirkt. Anders als bei robusteren Roten, wie beispielsweise<br />
dem Lagrein, darf der zarte Blauburgunder bei<br />
der Gärung nur in Maßen Gerbstoff extrahieren,<br />
sonst wird er bitter. Und er sollte auch die typische<br />
rubinrote Farbe zeigen. Denn so elegant und subtil<br />
wie seine Röte ist auch sein Geschmack.<br />
Hochebene — Von alters her sind die Vorzüge der<br />
Hochebene von Mazon oberhalb der Etsch für den<br />
Weinbau bekannt. Urkunden belegen Rebgärten<br />
bereits für das 14. Jahrhundert. Seit Barth im 19. Jahr-<br />
hundert auf seinem Gut herausfand, dass das Terrain<br />
für den Blauburgunder ideale Bedingungen bietet –<br />
wie übrigens kaum ein anderes in Italien – ist diese<br />
Rebsorte auf dem Vormarsch. Auch andere dort<br />
ansässige Winzer haben die Vorzüge dieser Großlage<br />
erkannt. Das Weingut Hofstätter hat im Laufe<br />
der letzten 70 Jahre eine beachtliche Fläche<br />
mit Blauburgunder bestockt. Je nach Alter x<br />

“La fortuna aiuta i prodi!” Questo era sicuramente il<br />
pensiero intelligente del Cav. Prof. Ludwig Barth von<br />
Barthenau, quando portò il Pinot Nero su un altopiano<br />
sovrastante il paese di Egna. Fiuto e curiosità lo<br />
spinsero ad coltivare questa varietà – con successo! Il<br />
Pinot Nero prosperava magnificente nei vigneti posti<br />
ad un’altitudine di 400 m s.l.d.m. e Barth, dilettante<br />
per quanto riguardava la produzione di vino, decise,<br />
una volta pensionato, di dedicarsi completamente<br />
alla viticoltura.<br />
Il chimico, con cattedra a Vienna, specializzato<br />
in “catene aromatiche”, nel 1882 acquistò nel paesino<br />
di Mazon tre “masi”. Rovereto, sua città natale,<br />
non era troppo distante e quindi si sentiva a suo<br />
agio nel panorama montano sudtirolese, tra ripide<br />
pareti rocciose e dolci valli, nella sua tenuta, che lui,<br />
amante della natura, poteva raggiungere dalla valle<br />
dell’Adige in una mezz’ora di cammino. Però Barth<br />
morì presto. Suo nipote Max vende poi le tre tenute<br />
con i terreni annessi alla famiglia <strong>Foradori</strong>. Con il<br />
matrimonio di <strong>Paolo</strong> <strong>Foradori</strong> nel 1959 le proprietà<br />
di Mazon iniziarono a far parte della Tenuta Joseph<br />
Hofstätter di Termeno. E grazie al suo tenace lavoro<br />
dedicato al Pinot Nero, imprimeva una significativa<br />
pietra miliare alla viticoltura italiana.<br />
Sapere — Il Pinot Nero è un vitigno estremamente<br />
volubile: ama le giornate calde, le notti fresche,<br />
dunque spiccate escursioni termiche. Nel vigneto<br />
esige cure attente, per evitare le malattie, poiché i<br />
suoi grappoli compatti, con buccia sottile, tendono<br />
a marcire. In modo, non meno difficile, si comporta<br />
in cantina e richiede estrema attenzione e profonde<br />
conoscenze da parte del vignaiolo, che al momento<br />
della vinificazione deve agire con sapienza per<br />
adattarsi alle diverse caratteristiche d’annata.<br />
Il Pinot Nero dà molto, ma pretende molto.<br />

Blauburgunder im Weinberg perfekt zu pflegen. Keine Sorte ist so<br />
schwierig wie der Blauburgunder. Jede Maßnahme muss genau zum<br />
richtigen Zeitpunkt erfolgen. Man kann nie sagen ,heut’ bleib ich<br />
zu Haus’!‘. Gerade das ist aber so reizvoll: Man muss die Blauburgunderstöcke<br />
immer im Auge behalten, es gibt keine Routine. Jedes Jahr ist<br />
anders, ja verblüffend anders. — Spannend ist für mich auch, die<br />
Jungweine aus dem Traubengut der verschiedenen Weinberge zu<br />
kosten. Dabei stelle ich immer wieder fasziniert fest, wie facettenreich<br />
und unterschiedlich Weine selbst aus benachbarten Weinbergen sein<br />
können. — Der Blauburgunder ist eine komplizierte Rebe und ich bin,<br />
wie oft behauptet wird, ein komplizierter Mensch. Vielleicht haben der<br />
Blauburgunder und ich aus diesem Grund zusammengefunden: im<br />
Weinberg, bei einer Arbeit, die mir Freude macht.“<br />

una varietà difficile ed anch’io, come spesso viene affermato, sono una<br />
persona difficile. Forse proprio per questa ragione il Pinot Nero ed io ci<br />
siamo trovati: nel vigneto, a svolgere un lavoro che mi procura immenso<br />

der Reben gehen aus den Trauben drei verschiedene<br />
Weine hervor – ein jeder mit seiner eigenen<br />
Geschmacksnote.<br />
Drei — Der Blauburgunder Meczan, der die historische<br />
Bezeichnung des Ortes Mazon im Namen<br />
führt, wird aus dem Traubengut jüngerer Rebstöcke<br />
vinifiziert und nur im Stahltank ausgebaut. Seine<br />
Pinot-Frucht ist ausgeprägt in ihren Kirscharomen,<br />
samtig, sehr weich und zugleich frisch.<br />
Der von 25-jährigen Reben aus Mazon stammende<br />
Riserva Mazon lagert nach seinem Ausbau<br />
im Eichenfass mindestens ein Jahr in der Flasche.<br />
Es ist ein dichter, dabei aber doch weicher Wein.<br />
Die Frucht von Kirschen paart sich mit der von<br />
Himbeeren und einer feinen Würze. Sie gibt dem<br />
Wein seine Eleganz.<br />
Die fast 70 Jahre alten Reben aus der Lage Vigna<br />
S. Urbano beim Ansitz Barthenau sind dem gleichnamigen<br />
Blauburgunder vorbehalten. Er verströmt<br />
den Duft der Amarenakirsche, würzt Himbeer -<br />
konfitüre mit ein wenig Pfeffer, Zimt und Schoko-<br />
lade. •<br />

„Ich kann mich gut erinnern: als die ersten Barriquefässer bei uns<br />
angeliefert wurden, wollten sie so gar nicht in die damalige Alltags-<br />
welt eines Südtiroler Weingutes passen. Entsprechend fielen im Dorf<br />
die Kommentare aus. Natürlich war der Ausbau eines Weines in diesem<br />
kleinen Eichenholzfass auch für uns Neuland. Über zehn Jahre lang<br />
haben wir probiert und optimiert, bevor wir 1987 mit einer kleinen<br />
Anzahl von Flaschen den Barthenau Vigna S. Urbano erstmals in<br />
den Verkauf brachten. Wie ein kleines Kind hatten wir den Wein<br />
umsorgt, bis zu diesem Zeitpunkt, als er uns endlich erwachsen<br />
schien. — Natürlich haben wir auch verglichen, haben viele Weine,<br />
vor allem aus dem Burgund, verkostet. Dabei stellten wir immer wieder<br />
fest, dass unser Barthenau Vigna S. Urbano einen ganz eigenen, im<br />
Grunde unvergleichlichen Charakter hat. Er ist so wenig vergleichbar wie<br />
das klimatische und geographische Umfeld, in dem die Trauben bei uns<br />
gedeihen.“<br />
“Ancora oggi mi ricordo, quando entrarono le prime Barrique in cantina.<br />
Questi piccoli contenitori non erano di casa per una cantina altoatesina.<br />
Pure i commenti paesani erano discordi. Era una novità far maturare<br />
il vino in queste botti. Per dieci anni abbiamo solo fatto esperimenti.<br />
Solo nel 1987 siamo usciti timidamente sul mercato con le prime<br />
bottiglie di Barthenau Vigna S. Urbano, dopo averlo accudito come un<br />
neonato e portato alla fase adulta. — Naturalmente si confrontava e si<br />
assaggiavano molti vini: soprattutto della Borgogna. E proprio durante<br />
questi assaggi ci rendemmo conto, che il Barthenau Vigna S. Urbano<br />
aveva il suo inconfondibile carattere come, alla stessa maniera, non si<br />
poteva confrontare clima e terroir.”<br />
“I remember well how the first delivery of barriques seemed alien to the<br />
everyday reality of a South Tyrolean wine estate. The villagers were also<br />
sceptical. Of course we were breaking new ground maturing wine in these<br />
small oak casks. We spent ten years on experimenting and fine tuning the<br />
technique before releasing a small number of bottles of Barthenau Vigna<br />
S. Urbano in 1987. We took care of the wine like a small child up to<br />
the point where it finally seemed to have reached adulthood. — Of<br />
course we also compared and tasted numerous wines, especially wines from<br />
Burgundy. In doing so we realised that our Barthenau Vigna S. Urbano<br />
was unique in character, essentially incomparable, just as the climatic and<br />

Età — Martin <strong>Foradori</strong>, con la Vigna S. Urbano,<br />
ha la fortuna di disporre di vigne dell’età di quasi<br />
70 anni, le quali danno i grappoli più piccoli e spargoli.<br />
Questi sono meno inclini alle muffe e grazie<br />
alla produzione molto contenuta, data l’età dei ceppi,<br />
anche più concentrati nel gusto.<br />
Da questo prezioso potenziale viticolo, Martin<br />
<strong>Foradori</strong> nell’anno 2000 ha selezionato quei ceppi<br />
che secondo lui davano i grappoli più appropriati e<br />
da allora da questi ceppi coltiva i suoi “rampolli”<br />
preferiti. “Questo è un lavoro infinito”, così il viticoltore,<br />
“poiché il materiale genetico non è stabile e<br />
solo dopo molteplici e accurate selezioni si possono<br />
ricavare quelle barbatelle con le caratteristiche ricercate.<br />
Perché devo continuare ad importare vigne e<br />
cloni, se nel proprio vigneto ho già quello che cerco?“<br />
Esposizione — I vigneti di Mazon dedicati al Pinot<br />
Nero sono unici. Sono orientati verso ovest in favore<br />
del sole al tramonto e dell’ “Ora”, un caldo vento<br />
meridionale che soffia dal Lago di Garda nel tardo<br />
pomeriggio. I grappoli si mantengono così asciutti e<br />
sani. Per il Pinot Nero non potrebbe esserci terreno e<br />
microclima migliori. Maturano così le caratteristiche<br />
note fruttate di queste uve senza che il vino debba<br />
rinunciare a freschezza e acidità. Gli impianti sono<br />
poi protetti dai venti ostili grazie al bosco confinante<br />
e da una parete di calcare che lo sovrasta. “La bontà di<br />
un singolo vigneto è determinante, se dalle sue uve<br />
viene vinificato il singolo vino – un vino, come il<br />
Barthenau Vigna S. Urbano, che personificherà, nel<br />
suo stile, il vigneto nel quale è nato”, così il vignaiolo<br />
Martin <strong>Foradori</strong>.<br />
Eleganza — Per la buona riuscita del Pinot Nero<br />
è essenziale il periodo di vendemmia, il quale deve<br />
essere definito in stretta intesa tra l’enologo e il viticoltore<br />
che lavora in vigna. I grappoli devono essere<br />
ben maturi, ma non troppo, poiché una spiccata<br />
acidità del mosto d’uva è essenziale per il Pinot Nero.<br />
A confronto di altre varietà più “robuste” come per<br />
esempio il Lagrein, l’estrazione di tannini durante<br />
la fermentazione del delicato Pinot Nero deve avvenire<br />
su misura, poiché c’è il rischio che il futuro<br />
vino diventi astringente. Ugualmente importante<br />
è anche il suo colore rubino, poiché, così sottile ed<br />
elegante come il suo colore, è poi anche il suo gusto.<br />
Altopiano — Le qualità che l’altopiano di Mazon,<br />
dominante sull’Adige, offre alla viticoltura sono<br />
note da lungo tempo con documenti che attestano<br />
la presenza di vigneti fin dal XIV secolo. La varietà<br />
più diffusa è il Pinot, da quando Barth scoprì nel XIX<br />
secolo che il terreno presentava condizioni ideali per<br />
questo vitigno, impensabili per altre zone.<br />
Anche altri viticoltori della zona hanno scoperto<br />
i pregi di questo altopiano. La tenuta Hofstätter in<br />
questi ultimi 70 anni ha impiantato una notevole<br />
superficie con la varietà Pinot Nero. A seconda<br />

diversi vini – ognuno con proprie caratteristiche<br />
organolettiche.<br />
Tre — Il Pinot Nero Meczan, che porta il nome<br />
medievale della località di Mazon, viene vinificato<br />
dalle uve dei ceppi più giovani e matura solo in<br />
tini d’acciaio. La sua tipicità si presenta inalterata<br />
nell’aroma di ciliegia e nel suo essere vellutato,<br />
morbido e al contempo fresco.<br />
Il Pinot Nero Riserva Mazon proviene da viti<br />
di oltre 25 anni. Dopo la maturazione in piccole<br />
botti di legno e l’imbottigliamento, matura un’altro<br />
anno in bottiglia. È un vino avvolgente e morbido,<br />
in cui il sentore di marasche si abbina a quello di<br />
lamponi con fini note erbacee, conferendogli la sua<br />
tipica eleganza.<br />
Le viti di quasi 70 anni della Vigna S. Urbano<br />
presso la tenuta Barthenau sono destinate esclusivamente<br />
all’omonimo Pinot Nero. Il Vigna S. Urbano<br />
emana una fragranza di amarene e profuma<br />
di marmellata di lamponi con un sentore di pepe,<br />
cannella e cioccolato. •<br />

“Nothing ventured, nothing gained” must have<br />
been Ludwig Ritter Barth von Barthenau’s motto<br />
when driven by intuition as well as curiosity, he first<br />
brought the Pinot Noir vine from its French home<br />
in Burgundy to South Tyrol, to plant it on a broad<br />
mountainside terrace overlooking Egna/Neumarkt<br />
in the Adige Valley. He was handsomely rewarded,<br />
for Pinot Noir flourished magnificently here at an<br />
elevation of 1,300 feet/400 metres. Although Barth<br />
was a novice winegrower, he decided to dedicate<br />
himself to wine in his retirement.<br />
He was a chemist by profession, with a professorship<br />
in Vienna and specialised in aromatic compounds.<br />
In 1882 he bought three of the farmsteads<br />
and the land belonging to them close to the hamlet<br />
of Mazon. His home town was Rovereto, around<br />
50 km further south. As a nature lover he felt at home<br />
here in his estate in the South Tyrolean mountains<br />
amid precipitous rock faces and verdant valleys,<br />
only half an hour’s walk uphill from the floor of<br />
the Adige Valley.<br />
Unfortunately Barth died early. His nephew<br />
Max sold the manor house and estate to the <strong>Foradori</strong><br />
family. <strong>Paolo</strong> <strong>Foradori</strong> added the estate to the Joseph<br />
Hofstätter wine estate through marriage in 1959.<br />
Under <strong>Paolo</strong>’s care Pinot Noir, the former immigrant,<br />
was to become a highly esteemed native and<br />
was about to make Italian wine history.<br />
Know-how — Pinot Noir is an extremely fickle<br />
grape variety: it loves warm days, cool nights and<br />
marked contrasts between day and night time temperatures.<br />
It presents enormous challenges to the<br />
winegrower, particularly because it is a thin-skinned<br />
variety with tightly-packed clusters which tend to<br />
trap moisture, making them highly susceptible to<br />
fungal ailments and rot. Pinot Noir is no less demanding<br />
in the cellar, where it requires the<br />
wine-maker’s complete attention and skill. He<br />

„Wenn ich mit Leuten auf Veranstaltungen oder Verkostungen<br />
über den Barthenau Vigna S. Urbano spreche, diese dann ins<br />
Schwärmen kommen, ihn sehr oft mit Lob und Superlativen<br />
überhäufen, dann empfinde ich Freude und auch etwas Stolz.<br />
Besonders wenn die alten Jahrgänge gelobt werden, die nach zehn<br />
und mehr Jahren noch prächtig dastehen und an deren gutem<br />
Gelingen ich damals schon mitwirken durfte. — Allerdings bringt<br />
mich der Glaube, dass wir Kellermeister aus den Trauben einen<br />
großen Wein machen, auch immer wieder zum Schmunzeln. Denn<br />
das stimmt ja nur zum Teil. Entscheidend ist und bleibt die Natur,<br />
die uns hervorragende Trauben schenkt. Diese Gabe bestmöglich<br />
in die Flasche zu bringen, ist unsere Aufgabe. Viele wären<br />
verwundert, wenn sie sähen, wie wenig wir in die Entwicklung<br />
dieses Weins eingreifen. Weniger ist oft mehr. Und jedes Jahr<br />
ist anders!“<br />

possibile questo dono in bottiglia. Molti rimarrebbero sbalorditi<br />
se vedessero il minimo lavoro che si svolge in cantina. A volte<br />
meno è di più. E ogni anno è diverso!”<br />

up great wines. Although our skills are an important factor, great<br />
wines come from superb quality grapes and here the determining<br />
factor is nature. Our task is to take this gift and guide it though<br />
all the necessary stages to capture the characteristics and qualities<br />
imparted by nature in the bottled wine. Many wine lovers would<br />
be surprised at how little we interfere in the process. Less is<br />

mich geradezu magisch an. Ich laufe hin, probiere und probiere – stets<br />
auf der Suche nach dem perfekten Wein. — Doch je öfter ich davon koste,<br />
desto mehr zweifle ich auch. Es gibt Momente, in denen ich sehr<br />
zufrieden bin, und andere, da denke ich ,oh Gott‘! Probiere ich den<br />
gleichen Wein eine Woche später, dann bin ich wieder begeistert. —<br />
Der Blauburgunder beschert eben Momente von ,himmelhoch jauchzend‘<br />
bis ,zu Tode betrübt‘ und auch manch’ durchwachte Nacht. Dabei ist<br />
man fast machtlos. Denn je mehr man den Blauburgunder in eine<br />
Richtung drängt, desto widerspenstiger wird er. Es ist also besser, sich<br />
zurückzuhalten. Aber das muss man erst einmal begreifen. Wenn dieser<br />
Wein etwas fordert, ist es eine Mischung aus Bauchgefühl und Vertrauen.<br />
Er will, dass man an ihn glaubt.“<br />
“Per me il Pinot Nero é un vino particolarmente interessante. In cantina<br />
mi afferra una grande curiosità. I tini che contengono il Pinot Nero<br />
mi attraggono magicamente. Mi avvicino ad essi, assaggio e riassaggio –<br />
sempre alla ricerca del vino perfetto. — Ma più assaggio, più inizio<br />
a dubitare. Ci sono momenti nei quali sono soddisfatto e poi altri<br />
quando penso ‘o mio dio’! Se assaggio poi lo stesso vino a distanza<br />
di una settimana sono di nuovo soddisfatto di esso. — Il Pinot Nero<br />

Procura anche insonnia. Di fronte a ciò si è quasi impotenti. Più si cerca<br />
di ‘spingere’ il Pinot Nero in una direzione più esso si ribella. Allora<br />

varietà esige qualcosa, è un misto d’istinto e confidenza: il Pinot Nero<br />

years old, vines which produce small, loose-berried<br />
grapes. They are less susceptible to mould and the<br />
age of the vines naturally results in low yields with<br />
a corresponding concentration of flavours and sugar<br />
in the grapes.<br />
In the year 2000 Martin <strong>Foradori</strong> took cuttings<br />
from the vines which, in his opinion, yielded the<br />
most perfectly-formed grapes and used them to<br />
create his ‘next generation’ for future plantings. “It’s<br />
an enormous task”, says the winegrower, “because<br />
the genetic material is not stable and you can only<br />
produce useful vines with the desired characteristics<br />
suitable for planting after painstaking experiments<br />
and selections. After all, why should I continue to<br />
import clones from foreign nurseries when I’ve got<br />
precisely what I’m looking for in my own vineyards?”<br />
Site — The Pinot Noir sites at Mazon are superb:<br />
they face westwards towards the afternoon and<br />
evening sun and are cooled by the ‘Ora’, a wind<br />
which blows from Lake Garda during the warm<br />
season, starting in the early afternoon and dying<br />
down suddenly at sunset. It has the effect of keeping<br />
the grapes dry and healthy. The soils and microclimate<br />
at Mazon could hardly be better for Pinot<br />
Noir. The ripe fruit aromas and flavours develop<br />
without losing freshness or acidity. The vineyards<br />
are protected against strong winds by the surrounding<br />
woods and a precipitous wall of limestone rock<br />
which rises behind.<br />
In Martin <strong>Foradori</strong>’s opinion: “You can taste the<br />
qualities of the site in the wine. It is the determining<br />
factor in deciding whether to make a single vineyard<br />
wine from the grapes produced in a particular site<br />
– a wine like the Vigna S. Urbano which perfectly<br />
embodies the characteristics of the vineyard”.<br />
Elegance — To produce Pinot Noir successfully it<br />
is of utmost importance for the winemaker to decide<br />
on the right moment to harvest the grapes, of course<br />
in consultation with the grower. The grapes need to<br />
be fully ripe, though not overripe to the point where<br />
the acidity in the juice no longer has a lively and<br />
refreshing effect. In contrast with more robust red<br />
varieties such as Lagrein, care is needed during the<br />
fermentation, for the delicate Pinot Noir does not<br />
benefit from excessive extraction of bitter tannins<br />
which would render the wine astringent. Similarly,<br />
the colour should be bright ruby. The wine’s flavour<br />
should be as elegant and as subtle as its colour.<br />

,„Slowfood“, eine Vereinigung, die sich unter<br />
anderem – wie ihr Name schon signalisiert –<br />
dem guten Essen und Trinken mit Muße<br />
verschrieben hat, veranstaltete bis vor einiger<br />
Zeit jedes Jahr eine Weindegustation der<br />
besonderen Art: das „Gioco del Piacere“, das<br />
Spiel mit dem Genuss! An ein und demselben<br />
Abend probierten und bewerteten Mitglieder<br />
von 100 Slowfood Gruppierungen in Italien fünf<br />
verschiedene Weine, die aus jedem Weinland<br />
dieser Erde stammen konnten, aber immer<br />
aus ein und derselben Rebsorte vinifiziert sein<br />
mussten. Die Blindverkostung fand gleichzeitig<br />
in 100 verschiedenen Restaurants statt und das<br />
Votum eines jeden Teilnehmers zählte. Die Voten<br />
wurden in Bra, dem Stammsitz von Slowfood,<br />
gesammelt und ausgewertet. Am 25. Oktober<br />
1990 nahmen sage und schreibe 3173 Mitglieder<br />
an der Degustation von Blauburgunder teil und<br />
kürten den Barthenau Vigna S. Urbano 1988 zum<br />
Sieger! So hatte der Wein aus Südtirol bereits<br />
im zweiten Jahr nach seinem ersten Erscheinen<br />
auf dem Markt (1987) bessere Noten erhalten,<br />
als ein vergleichbarer Blauburgunder aus den<br />
französischen Stammlanden. Das war ein<br />
überraschend schneller, ja ein fulminanter Erfolg<br />
bei einer sympathischen und doch ernsthaften<br />

“Slowfood”, un’associazione che, tra l’altro e<br />
come segnala già il suo nome, si è dedicata al<br />
buon mangiare e bere. Fino a qualche tempo<br />
fa organizzava ogni anno uno speciale “Gioco<br />
del Piacere”. Lo stesso giorno, la stessa sera, la<br />
stessa ora, oltre 100 delegazioni di Slowfood<br />
con i loro soci, degustarono 5 vini che potevano<br />
provenire da ogni continente ma sempre dello<br />
stesso vitigno. La degustazione, strettamente<br />
alla cieca, si svolgeva in un ristorante e il voto di<br />
ogni degustatore contava. Una volta degustati<br />
i vini, i singoli voti venivano raccolti a Bra, la<br />
sede di Slowfood, e successivamente scrutinati.<br />
Il 25 ottobre 1990 parteciparono addirittura 3173<br />
degustatori al “Gioco del Piacere” ed elessero come<br />
vincitore il Barthenau Vigna S. Urbano 1988!<br />
Cosí l’altoatesino, nella sua seconda annata dopo<br />
la prima uscita (1987), raccoglieva i voti migliori<br />
nel confronto dei suoi “cugini” d’oltralpe. Questa<br />
era una vittoria veloce e a sorpresa, in certi modi<br />
anche fulminante, durante una degustazione<br />
goliardica ma nello stesso tempo seria! •
Many players, one winner!<br />
On 25 th October 1990 3173<br />
members of ‘Slowfood’ voted the<br />
Barthenau Vigna S. Urbano 1988<br />
as winner. A recollection. —<br />
‘Slowfood’ is an organisation which, as its<br />
name suggests, promotes taking one’s time<br />
while eating and drinking. Up to a few years<br />
ago it organised an annual wine tasting which<br />
was a truly extraordinary event: the ‘Gioco del<br />
Piacere’, the ‘Game of indulgence’! On a single<br />
evening, members of 100 Slowfood groups in<br />
Italy tasted and rated five different wines from<br />
all over the world, all of which had to come from<br />
the same grape variety. The blind tasting took<br />
place simultaneously in 100 different restaurants<br />
and each member’s vote counted. The votes<br />
were collected and counted in the Slowfood<br />
headquarters at Bra. An amazing 3,173 members<br />
took part in the Pinot Noir tasting held on 25 th<br />
October 1990 and declared the Barthenau Vigna<br />
S. Urbano 1988 the winner! The wine from South<br />
Tyrol really had achieved better marks than<br />
comparable red Burgundies in the second year<br />
after its first release (1987)! This was a surprisingly<br />
sudden and brilliant victory won in a relaxed,<br />
easy-going but nevertheless serious tasting! •<br />
time immemorial. Documents reveal the presence<br />
of vineyards there since at least the 14 th century.<br />
Pinot Noir has been on the increase since the 19 th<br />
century when Barth discovered that the terrain and<br />
microclimate in his Mazon estate were ideal for the<br />
vine, quite unlike any other in Italy. Other vineyard<br />
owners there have likewise recognised the qualities<br />
of this extensive site. Over the past seven decades the<br />
Hofstätter estate has planted a considerably large area<br />
there with Pinot Noir. Three different wines, each<br />
with its own distinctive aromas and flavours, are<br />
produced from grapes grown in the estate’s Mazon<br />
vineyards based on the age of the vines.<br />
Three — The Meczan Pinot Noir bears the medieval<br />
name of the hamlet of Mazon. It is made from grapes<br />
produced by the youngest vines and is fermented and<br />
matured in stainless steel tanks. The pure cherry-like<br />
Pinot fruit is instantly recognisable. On the plate the<br />
wine is velvety and mellow while at the same time<br />
enlivened by fresh acidity.<br />
The Riserva Mazon is produced by 25 year-old<br />
vines. It is matured in oak and subsequently for at<br />
least a year in bottle prior to release. The result is a<br />
full-bodied, supple and mellow wine with cherry<br />
fruit combined with an aroma of raspberry, plus a<br />
delicate hint of spice which accounts for the wine’s<br />
typical elegance and complexity.<br />
The name Vigna S. Urbano (‘Saint Urban Vineyard’)<br />
denotes the Pinot Noir produced by almost<br />
70 year-old vines cultivated in the vineyard of the<br />
same name in the Barthenau estate. •<br />

Mein erstes Erlebnis mit dem Vigna<br />
S. Urbano hatte ich 1994 in London.<br />
Ich organisierte für „Master of Wine“<br />
Studenten eine große Pinot-Noir-<br />
Blindprobe mit Weinen des Jahrgangs<br />
1990. Der Überraschungssieger war<br />
der Vigna S. Urbano, der die berühmten<br />
Burgunder und Pinot Noir der<br />
neuen Welt auf die Ränge verwies.<br />
Seit diesem Erlebnis habe ich diesen<br />
Wein intensiv verfolgen können und<br />
er wurde für mich zu einem wunderbaren<br />

La mia prima esperienza con il Barthenau<br />
Vigna S. Urbano l’ho avuta nel<br />
1994 a Londra. Ho organizzato una degustazione<br />
a base di Pinot Nero dell’annata<br />
1990 per studenti del corso “Master<br />
of Wine”. Il vincitore a sorpresa di<br />
questa degustazione, era il Barthenau<br />
Vigna S. Urbano, che ha messo in riga<br />
grandi vini originari della Borgogna<br />
nonché Pinot Nero del nuovo mondo.<br />
Da quell’esperienza ho seguito intensamente<br />
questo vino ed è diventato per<br />
me un magnifico esempio di questa<br />

acquainted with the Vigna S. Urbano<br />
since its first release.<br />
I first encountered the Vigna S. Urbano<br />
in London in 1994. I had organised a<br />
large blind tasting of Pinot Noirs from<br />
the excellent 1990 vintage for ‘Master<br />
of Wine’ students. To my surprise the<br />
winner was Vigna S. Urbano, which<br />
beat all the top Burgundies and Pinot<br />
Noirs from the New World. Since then<br />
I have followed this wine’s progress<br />
carefully and for me it became a wonderful<br />
example of the grape variety.<br />
How would you characterise this wine?<br />
It combines fruit and richness, power<br />
and opulence while still remaining<br />
elegant. It has plenty of reserves for<br />
developing further complexity with<br />
an impressive depth of flavour and<br />
minerality.<br />

Worin unterscheidet sich der Blauburgunder<br />
aus Mazon von den Blauburgundern<br />
aus Frankreich?<br />
Es ist hauptsächlich ein Unterschied<br />
des Terroir. Die Bodenformation enthält<br />
zwar sowohl in Mazon als auch in<br />
Burgund Kalk, doch ist die Sonneneinstrahlung<br />
und der Wasserhaushalt<br />
anders aufgebaut. Mazon profitiert<br />
von einem recht warmen Klima und<br />
gleichzeitig, durch seine höhere Lage,<br />
auch von kühlenden Einflüssen der<br />
Windströmung vom Gardasee. So ist<br />
ein Unterschied von Tages- und Nachttemperaturen<br />
ebenso gegeben, wie eine<br />
etwas langsamere, dafür Aromen intensivierende<br />
Reifezeit.<br />
Welche Rolle spielt der Barthenau<br />
Vigna S. Urbano unter den italienischen<br />
und auch speziell unter den Südtiroler<br />
Blauburgundern?<br />
Für mich war er einer der ersten<br />
Blauburgunder, der eine Benchmark<br />
für Spitzenqualität aus Südtirol gesetzt<br />
hat. Damit untermauert dieser Wein<br />
einen Führungsanspruch für die Rebsorte<br />
Pinot Noir in Italien und beweist<br />
darüber hinaus, dass Südtirol auch<br />
im Bereich Pinot Noir international<br />
mithalten kann. •<br />

Come si distingue il Pinot Nero di<br />
Mazon dai Pinot Nero francesi?<br />
La principale differenza sta nel terroir.<br />
Anche se il terreno contiene sia in Borgogna<br />
che a Mazon, calcare, l’insolazione,<br />
nonché le precipitazioni idriche,<br />
sono diverse. Mazon approfitta di un<br />
clima abbastanza caldo, ma nello stesso<br />
tempo, grazie all’altitudine, anche<br />
dell’influenza del fresco vento del Lago<br />
di Garda. In questo modo si ha una<br />
notevole differenza tra la temperatura<br />
giornaliera e notturna, come pure una<br />
maturazione più lenta e intensa degli<br />
aromi.<br />
Che ruolo gioca il Barthenau Vigna<br />
S. Urbano tra i Pinot Nero italiani e<br />
specialmente tra quelli altoatesini?<br />
Per me era il primo Pinot Nero che<br />
fungeva da punto di riferimento per<br />
l’alta qualità altoatesina. Perciò questo<br />
vino rafforza la sua posizione leader<br />
in Italia e oltre a ciò, dimostra che<br />
in Alto Adige vengono prodotti Pinot<br />
Nero di formato internazionale. •<br />
How is Pinot Noir from Mazon different<br />
from a typical Pinot Noir from France?<br />
The main difference is the terroir.<br />
Although the soils contain calcium<br />
carbonate both at Mazon and in Burgundy,<br />
the degree of intense sunlight<br />
in the two areas and the hydrologic<br />
(water) balances are different. Mazon<br />
is blessed with a rather warm climate<br />
and profits from its higher location<br />
and the cooling effect of the afternoon<br />
wind from Lake Garda. The wind<br />
drops at sunset, after which fall winds<br />
bring cool, fresh air down from the<br />
higher regions and refresh the vineyards,<br />
producing considerable differences<br />
between day time and night time<br />
temperatures. This allows the grapes<br />
to ripen slowly but fully, resulting in a<br />
more intense concentration of aromas<br />
in the fruit.<br />
How do you assess the importance of<br />
the Barthenau Vigna S. Urbano compared<br />
with Italian and especially South<br />
Tyrolean Pinot Noirs?<br />
For me it was the first Pinot Noir<br />
which became a benchmark for top<br />
quality from South Tyrol. Consequently<br />
this wine underpins Pinot Noir’s<br />
claim to be a leading variety in Italy<br />
and proves that South Tyrol can produce<br />
world-class Pinot Noir. •

� Der Weißburgunder zählt zu den wichtigsten Weißweinsorten<br />
Südtirols. Auch in unserem Sortiment nimmt<br />
dieser fruchtige, frische Weißwein einen wichtigen<br />
Stellenwert ein. Die Farbe unseres Pinot Bianco ist strohgelb<br />
von mittlerer Intensität, sehr klar, sein Duft blumig,<br />
warm und anhaltend. Die auffällige Säure auf der Zunge<br />
ist Zeichen für hohes Entwicklungs- und Alterungspotential<br />
(mindestens zwei Jahre). Der Weißburgunder<br />
ist ein unkomplizierter Speisenbegleiter. Er passt gut zu<br />
leichten Vorspeisen, Fischgerichten, Consommés und Gemüsesuppen,<br />
gern wird er auch als Aperitif getrunken.<br />
� Il Pinot Bianco é una tra le più importanti varietá<br />
altoatesine. Anche nel nostro assortimento questa varietá<br />
gode di grande importanza. Il colore é paglierino di<br />
media intensitá, al naso molto pulito con profumi floreali<br />
caldi e persistenti. Al gusto ha spiccata aciditá, indice di<br />
notevoli possibilitá di evoluzione e di tenuta (due anni<br />
almeno). Il Pinot Bianco accompagna bene antipasti,<br />
piatti di pesce, minestre e zuppe di verdura, nonché ideale<br />
come vino da aperitivo.<br />

successful white wine varieties. Unsurprisingly this fresh,<br />
fruity, tangy white wine also features prominently in our<br />
range. Pale yellow with a clean, crunchy apple and floral<br />
fruitiness, great balance and freshness., generous acidity<br />
on the palate leading to vibrant fruit and creaminess on<br />
the finish. Will develop complexity for at least two years.<br />
This Pinot Blanc is a versatile food wine, an ideal partner<br />
for light starters, fish dishes, consummé and minestrone<br />

� Dieser Blauburgunder gedeiht in unseren Weinbergen<br />
auf dem Hochplateau Mazon. Er wird aus den Trauben<br />
rund 30 Jahre alter Rebstöcke gewonnen. Die Riserva lagert<br />
für ein Jahr im kleinen Holzfass, nach der Assemblage für<br />
weitere sechs Monate im großen Holzfass und anschließend<br />
für ein weiteres Jahr auf der Flasche. Tiefes Rubingranatrot,<br />
Noten von Unterholz, Beeren und Sauerkirschen, harmonisch,<br />
rund und facettenreich mit ausdrucksstarkem Körper.<br />
Ein eleganter Begleiter zu roten Fleischsorten, Lamm,<br />

� Questo Pinot Nero prospera nei nostri vigneti sull’alto-<br />
piano di Mazon. I vitigni sono circa di 30 anni di età. Questo<br />
vino matura per un anno in piccole botti di rovere, dopo<br />
l’assemblaggio sei mesi in botti di rovere grande e poi un<br />
anno in bottiglia. Di colore rubino granato denso e profondo,<br />
ha profumi estremamente tipici di sottobosco, di piccoli<br />
frutti e di marasche dolci e suadenti. Caldo, armonico,<br />
coerente, rotondo, ricco di sfumature, ben solido e fine in<br />
bocca. Consigliabile con carni rosse, selvaggina e formaggi<br />
stagionati.<br />
� This Pinot Noir thrives in our hillside vineyards at<br />
Mazon. The vines are approximately 30 years old. The Pinot<br />
Noir Riserva is matured for one year in small oak casks, after<br />
which a homogeneous blend is made and the wine matured<br />
for a further six months in traditional oak barrels followed<br />
by 12 months in bottle before release. In colour it is deep<br />
ruby-garnet with a typical aroma of undergrowth, small<br />
berry fruits and black cherry – mellow, sweet and inviting.<br />
On the palate it is warm, harmonious and well-knit, round<br />
and rich in complexities, firm though elegant. Goes well<br />

� Il Barthenau Vigna S. Urbano é espressione di un cru<br />
prestigioso collocato nel cuore dell’area vocata della tenuta<br />
Barthenau in Mazon, dove una parte delle viti hanno<br />
quasi 70 anni di età. La maturazione in legno comprende<br />
due distinte fasi: circa 14 mesi in piccole botti di rovere<br />
francese e poi dopo l’assemblaggio delle diverse botti in<br />
un’unica grande botte di rovere per altri circa 7 mesi.<br />
Dopo l’imbottigliamento il vino matura ulteriormente<br />
in bottiglia per altri dodici mesi nelle cantine della tenuta<br />
Barthenau. Consigliabile con carni rosse, selvaggina,<br />
formaggi non troppo piccanti.<br />
� The Barthenau Vigna S. Urbano faithfully reveals the<br />
potential inherent in our finest cru to produce world-<br />
beating Pinot Noir. It is located in the heart of the vineyard<br />
surrounding our Barthenau manor house close to<br />
the hamlet of Mazon, where some of the Pinot Noir vines<br />
are almost 70 years old. The maturation in oak casks takes<br />
place in two phases: 14 months in small oak casks and<br />
subsequently matured in one large cask for seven months,<br />
after which it is filled and bottle aged for a year in the<br />
cellars of Barthenau before release. Goes well with red<br />
meats, venison and game, and mild cheeses.<br />
deVite<br />
� Der de Vite ist ein frischer Wein mit Klasse, der jung<br />
zu trinken ist, um von den jugendlichen Aromen zu<br />
profitieren. Hellgelbe Farbe mit zarten grünlichen Reflexen,<br />
im Duft klare Aromen mit Anklängen an frische Äpfel,<br />
Zitronengras, Holunderblüten und eine Spur Vanille. Im<br />
Geschmack lebendiger Charakter mit einer feingliedrigen,<br />
erfrischenden Säure und Balance. Die Frucht- und Blütenaromen<br />
wiederholen sich am Gaumen und prägen den<br />
Wein. Der Abgang ist gut strukturiert und bleibt lang<br />
erhalten. Wunderbar zur sommerlich-leichten Küche.<br />
� Il colore del de Vite é vivace, giallo chiaro, con lievi riflessi<br />
verdognoli. All’olfatto gli aromi sono molto chiari: sapori<br />
di mela fresca, erba limoncina con leggeri sentori di vaniglia.<br />
I profumi si evolvono nel bicchiere dopo una leggera<br />
ossigenatura, sprigionando un insieme floreale di notevole<br />
intensità. Al palato è vivace, ha carattere fresco con una fine<br />
e rinfrescante acidità ben equilibrata. Gli aromi fruttati<br />
e floreali si ripetono pure al palato e imprimono al vino il<br />
suo vero carattere. Si accompagna con antipasti, piatti di<br />
pesce e carni bianche.<br />
� Bright, vivid pale yellow in colour with green reflexes.<br />
On the nose the aromas are clear-cut, reminiscent of<br />
freshly-picked apples, lemon grass, with a light hint of<br />
vanilla. After brief contact with oxygen in the glass the wine<br />
develops intense floral and nutty aromas. On the palate it is<br />
vivacious, fresh with refreshing, perfectly harmonious acidity;<br />
the flowery aromas follow through; excellent structure<br />
and length. The de Vite is a stylish fresh and easily enjoyable<br />
white wine, best enjoyed while it retains its youthful<br />

� Der Rosenmuskateller ist eine rare Spezialität Südtirols.<br />
Geringe Erträge und eine natürlich hohe Zuckergradation<br />
kennzeichnen diesen Wein, der weder zur Kategorie der<br />
Spätlesen noch zu jener der Passiti zählt. Sein intensives<br />
Bukett erinnert unverkennbar an den Duft von Rosen,<br />
begleitet von einem Hauch von Gewürznelken und roten<br />
Beerenfrüchten. Am Gaumen entfalten sich diese Aromen<br />
weich, der Wein ist würzig und hat eine angenehme Säure,<br />
die sich schön mit der natürlich vorhandenen Restsüße<br />
verbindet.<br />
� Il Moscato Rosa rappresenta una vera rarità in Alto<br />
Adige. La resa in vigneto è bassissima ed il Moscato Rosa<br />
è un vitigno che sviluppa naturalmente alte gradazioni<br />
zuccherine. Per questa ragione questo vino non fa ne parte<br />
della categoria delle vendemmie tardive né dei passiti.<br />
Come rivela già il nome del vitigno, questo vino ha un<br />
intenso profumo di rose. Questo profumo viene accompagnato<br />
da delicati aromi di chiodi di garofano e frutti<br />
di bosco. Al palato questi profumi si sviluppano delicatamente,<br />
il vino è speziato ed ha una piacevole acidità<br />
che accompagna il residuo zuccherino naturale.<br />
� Known locally as Rosenmuskateller, this wine is one<br />
of Alto Adige/South Tyrol’s rare specialities. Yields<br />
per vine are tiny, resulting in grapes with rich concen-<br />
trations of sugar. The resulting wine is lusciously sweet<br />
with strong alcohol, the sweetness cut by firm acidity.<br />
It derives its name from its strong aroma of roses with<br />
hints of cloves and red berry fruits. On the palate this<br />
Moscato Rosa is intensely spicy finishing almost dry<br />
in spite of the sweetness.

� Der Classico Hofstätter wird nach dem traditionellen<br />
Champagner-Verfahren hergestellt, das heißt, die zweite<br />
Gärung des Weins erfolgt in der Flasche mit einer langen<br />
Verfeinerungsphase auf der eigenen Hefe von mindestens<br />
24 Monaten. Auch die Arbeit im Sektkeller ist identisch:<br />
Nach vollendeter Reifung werden die Flaschen über eine<br />
Zeitspanne von sechs Wochen hinweg von Hand gerüttelt<br />
(Remuage) und dabei immer weiter gedreht und steiler<br />
gestellt, bis die Hefe sich vollständig im Flaschenhals abgesetzt<br />
hat und degogiert werden kann.<br />
� Il Classico Hofstätter viene realizzato con la stessa<br />
tecnica impiegata da quasi 3 secoli nella Champagne:<br />
una seconda fermentazione del vino avviene in bottiglia<br />
con un lunghissimo affinamento sui propri lieviti per un<br />
periodo di almeno 24 mesi. Anche i procedimenti nella<br />
cantina di spumantizzazione sono gli stessi. Abili mani<br />
procedono al remuage (rotazione) delle bottiglie messe<br />
a riposo sulle pupitres che vengono progressivamente inclinate<br />
fino a quando i lieviti non si sono completamente<br />
spostati dal fondo al collo della bottiglia, per poi procedere<br />
alla sboccatura.<br />
� The Classico Hofstätter is produced using the classic<br />
Champagne method,involving a second fermentation<br />
after bottling. During this phase the wine is kept in contact<br />
with the yeasts for at least 24 months. The bottles are<br />
then placed in a ‘riddling’ or ‘remuage’ rack where, over<br />
a period of six weeks, they are shaken daily and gradually<br />
turned and tipped until they are upside down and the<br />
spent yeasts have settled onto the bottom of the closure.<br />
The tops of the bottles are then frozen, the plugs of ice<br />
containing the sediment are removed and the bottles<br />
quickly corked.<br />
