Glossary<br />

Vinasses A by-product that is generated when processing molasses. After the<br />

fermentable sugar in molasses has been used by the micro-organisms<br />

(e.g. yeasts) and the compo<strong>und</strong>s produced have been separated out<br />

(e.g. alcohol is distilled), this is the remaining nutrient medium. The<br />

non-sugar substances that have not been assimilated and metabolic side<br />

products are in this liquid. Vinasses may be concentrated to give a<br />

solids content of 70 % by multiple-effect evaporators<br />

Viscera The organs contained within the trunk, consi<strong>der</strong>ed collectively, e.g. the<br />

digestive tract, heart and lungs<br />

Wort A sweet infusion of gro<strong>und</strong> malt or other grain before fermentation,<br />

used to produce, e.g. beer and distilled malt liquors<br />
