Ein Handwerk mit Genuss: Brot und Backwaren
A pleasurable trade: Bread and bakery items
Der Geruch von frisch gebackenem Brot oder
Brötchen weckt bei vielen Menschen die Er -
innerungen an vergangene Zeiten, in denen
der Bäckermeister in seiner Backstube den
Teig ge knetet, geformt und in den Ofen ge -
scho ben hat, um das fertige Brot dann ein paar
Stunden später nebenan im Laden zu verkaufen.
Heute zählt die Herstellung von Teig- und
Backwaren zu einem der wichtigsten Wirtschaftszweige
in Mecklenburg-Vorpommern.
Er umfasst mehr als ein Drittel aller Betriebe
und Arbeitnehmer in der Ernährungsbranche
des Landes. Laut einer Studie im Auftrag der
IHK zu Schwerin ist es mit ca. 6000 Arbeitnehmern
(Stand 2008: 6049) das Gewerbe mit
den meisten Beschäftigungsverhältnissen innerhalb
der Ernährungswirtschaft in MV.
In der Großbäckerei der Firma Lieken in Lüders -
dorf wird täglich frisch für den Lebensmitteleinzelhandel
produziert. Mehrere Tausend Mit -
arbeiter sind in den bundesweit elf Standorten
beschäftigt. 340 davon im Werk Lüdersdorf,
das täglich ca. 450 000 verpackte Produk -
te wie Toast, Kastenbrote, Vollkornschnittbrot
sowie Brötchen und Laibbrote für den Tiefkühlbereich
verlassen. Anfang 2015 wur den
die Tiefkühl-Kapazitäten des Werks er weitert.
Insgesamt liegt die Leistung aller Produktionslinien
bei bis zu vier Tonnen pro Stunde.
Regionalität im Fokus
In großem Maßstab, aber mit besonderem
Fokus auf das traditionelle Backhandwerk
wird bei der Mecklenburger Backstuben
GmbH in Waren an der Müritz gearbeitet.
1999 wurde die Mecklenburger Landbäckereien
GmbH aus Schwerin ins Unternehmen
integriert, das mit seinen 550 Mitarbeitern
heute zu einem der großen Betriebe der Branche
in Westmecklenburg zählt.
Kontinuierlich hat Geschäftsführer Günther
Neumann, der das Unternehmen mit seinen
beiden Töchtern Kathrin Rossa und Dr. Chris -
tina Neumann führt, die Produktion am
Stammsitz in Waren ausgebaut und erweitert.
Eine Herausforderung: Die Gebäude stammten

would knead and mould the dough at his
bakery, put it in the oven, and sell the readymade
bread at the shop next-door a few
hours later. Today, the production of dough
and bakery items has become one of the
most important industries in Mecklenburg-
Vorpommern, making up over a third of all
businesses and employees in the state’s
food sector. According to a study conducted
on behalf of the Schwerin Chamber of Commerce,
it is the trade with the most employment
contracts in MV’s food industry, with
approx. 6,000 employees (as at 2008:
6,049).
The bakery operated by the company Lieken
in Lüdersdorf produces fresh items for the
food retail industry every day. Several thousand
staff work at its eleven facilities around
the country, 340 of which are employed at
the Lüdersdorf factory, which generates
approx. 450,000 packaged products, such as
toast, tin loaves, sliced wholemeal bread,
bread rolls and standard loaves, a day for
deep-freezing. The factory’s deep-freezing
capacities were expanded at the start of
2015; the total output of all production lines
can be up to four tonnes an hour.

with a particular focus on traditional baking.
In 1999, Schwerin-based Mecklenburger
Landbäckereien GmbH was integrated into
the company, which, with 500 employees, is
today one of the industry’s largest establishments
in western Mecklenburg.
