The relevant emissions of carcass disposal occur during the process steps sterilisation,
drying, and disposal of residues.
8.2.1.1 Sterilisation
Description of the technique
As sterilisation implements, strainer basket cooker, strainer disk cooker, stirring imple-
ments, and continuously working systems are used. The raw material must in any case be
cut into pieces before it is conveyed into a sterilisator, even if the sterilisation and the con-
struction of the implements as such necessitates that the raw material must be cut accord-
ingly. One differentiates between sterilisation in charges and continuous sterilisation.
